ADDICTIVE FRIED PICKLES

Addictive Fried Pickles image

Made these today for my son's girlfriend and could not stop eating them! After making the first jar of pickles had to go to the store and get two more jars lol!! I had these with homemade chipotle ranch. Actually quick to make and so good!

Number Of Ingredients 11

1~16 ounce(s) jar hamburger dill chips
1/2 cup(s) flour
1/4 cup(s) beer
3/4 cup(s) buttermilk
1 1/4 teaspoon(s) paprika
1 1/4 teaspoon(s) cayenne pepper
1 1/2 teaspoon(s) pepper
1/2 teaspoon(s) salt
2 teaspoon(s) garlic salt
2 dash(es) tabasco hot sauce
- canola oil for frying

Steps:

  • Heat 2 inches of oil in a medium saucepan over medium high heat until ready for frying.
  • In medium bowl, mix all ingredients except for pickles until well blended and you have a slightly thick batter.
  • Drain pickles and take a small handful and drop into batter. You do not want to get much pickle juice in batter or it will get too thin. One by one, take out of batter and let the excess drip off and then drop pickles in hot oil. Drop from close above oil so the oil does not splash. Do not overcrowd the pan because the pickles will start to stick together.
  • Fry batch of pickles until a nice golden brown. Remove from oil with a slotted spoon to a plate covered with paper towels. Repeat process with remaining pickles. Serve hot with Ranch or Chipotle Ranch dip. Enjoy!

Time 35m

Yield 10

Number Of Ingredients 10

½ cup buttermilk
salt and black pepper to taste
1 (16 ounce) jar dill pickle slices
½ cup all-purpose flour
1 ½ cups fine cornmeal
1 teaspoon seafood seasoning, such as Old Bay™
¼ teaspoon Cajun seasoning
1 quart oil for frying
½ teaspoon Cajun seasoning
1 (12 ounce) jar buttermilk ranch dressing

Steps:

  • Cover a plate with parchment paper or wax paper. In a shallow dish, combine buttermilk, salt, and pepper. Place pickles in mixture and set aside.
  • Pour the flour, cornmeal, seafood seasoning, and 1/4 teaspoon Cajun seasoning into a large, resealable plastic bag; shake to mix well. Add pickles a few at a time and tumble gently to coat evenly with the flour mixture. Remove and place on prepared plate.
  • Heat oil to 365 degrees F (180 degrees C) in deep-fryer or heavy deep skillet.
  • Fry pickles in several batches until golden brown and slightly crisp on the outside with a moist interior, 1 to 2 minutes. Drain on paper towels.
  • In a small bowl, combine buttermilk ranch dressing with 1/2 teaspoon Cajun seasoning; blend. Serve as a dipping sauce for warm pickles.

  • Prep. Prepare the Sriracha ranch dipping sauce by combining the Sriracha and the ranch dressing in a small bowl. Blend well then refrigerate the sauce until ready to serve.
  • Drain the pickle slices, reserving the liquid for future uses (for example, pickle juice is an easy and flavorful brine. It has been suggested that this is the secret to Chick-fil-A’s delicious fried chicken).
  • Fire up. Add 1-inch of oil to a heavy pot or cast-iron Dutch oven, place it on the grill, and preheat the oil to 375°F. This technique is referred to as grill frying and is a great way to avoid the smells and mess associated with deep-frying indoors.
  • Prep again. Once the oil is ready, drop the pickle slices in the easy tempura batter and stir until each pickle slice is fully coated.
