Ingredients

1/2 cup grated Parmesan
1/2 teaspoon garlic salt
1/2 teaspoon paprika
1/2 teaspoon freshly ground black pepper
1/2 teaspoon fine sea salt
1/4 teaspoon ground turmeric
1/2 cup popping corn
3 tablespoons unsalted butter, melted
1 tablespoon olive oil

Steps:

Combine the Parmesan, garlic salt, paprika, pepper, salt and turmeric in a small bowl. Combine the popping corn and melted butter in a large pot. Cover and cook over medium heat, shaking the pot with increasing frequency as the popping increases. Continue until the popping is reduced to a couple of seconds between pops, then remove from the heat and transfer the popcorn to a large brown bag. Drizzle the popcorn with the olive oil and sprinkle about 3 tablespoons of the seasoning into the bag. Shake up the popcorn. Sprinkle with additional seasoning to taste and serve warm.

1/2 cup grated parmesan cheese
2 teaspoons salt
1 teaspoon tarragon
1 teaspoon garlic powder
1 teaspoon dried parsley

Steps:

Combine all ingredients in a small bowl; stir until well blended. Store in an airtight container.
To serve: Melt 1/4 cup butter in a small saucepan and stir in 1 tablespoon spice mix. Pour over 3 cups popped popcorn and stir until well coated.

In a large heavy-bottomed large stockpot or dutch oven, add the oil and three popcorn kernels, heating over high heat. Cover the pan. These are the "test kernels" and once they pop, it signals that the oil is officially hot enough to pop all the kernels at the same time.
Meanwhile, measure out the remaining 1/2 cup of popcorn kernels and begin preparing your butter by melting it either in a microwave-safe bowl or on the stovetop. If microwaving, run it in 30 second intervls, checking often to keep it from exploding.
Once the three test kernels have popped, immediately add the 1/2 cup of popcorn kernels to the pan. Cover and remove from heat, gently swirling from side to side for 20 seconds. Return the pan to the heat, and the popcorn kernels will almost immediately beginning popping.

Cook covered on med-high heat, shaking pot often as popcorn starts to pop. Check on it every once in a while to make sure it isn't burning. You should be able to tell that it's done because the whole pot will be filled with fluffy white kernels!
Mix together spice mix, and drizzle olive oil over hot popcorn. Put on your desired amount of the spice mix (I used almost all of it) and toss popcorn to make sure seasoning is even.
Grate parmesan cheese directly on popcorn and toss to coat. I would start out with 1/3 cup of cheese for now; you can always add more.

Pour half the popcorn into a serving bowl. Drizzle half the topping over the popcorn. Take a piece of foil and cover the bowl, then toss and shake to coat the popcorn. Add the rest of the popcorn to the bowl, then pour the rest of the topping mixture over it and toss again until evenly coated.
