Bubba Blue once said, "Shrimp is the fruit of the sea. You can barbecue it, boil it, broil it, bake it, sauté it." And we surely agree with the fictional Forrest Gump character - shrimp are a Southern favorite. Although, like most food, folks below the Mason-Dixon prefer the deep-fried variety. Boom boom Shrimp is a classic recipe with a spicy twist. It serves 8 people and only takes 15 minutes to whip up. What is boom boom shrimp, you may ask? It's simply a two-dredge fried shrimp recipe with a tasty Boom Boom Shrimp Sauce. Made with mayonnaise, sweet chili sauce, and toasted sesame oil, the flavorful condiment takes this shrimp recipe to the next level. Fry the shrimp on wooden skewers for an easy and fun method of cooking and serving the food. For an outdoor party, place the end of the skewers in floral foam and into a large bucket. Your guests can effortlessly pick up a serving of boom boom shrimp on a skewer. Give this recipe a try; it's sure to be an instant favorite.

Number Of Ingredients 8

1 1/2 cups all-purpose flour
3/4 cup cornstarch
1 1/2 tablespoons baking powder
1/2 teaspoon kosher salt
1 pound shrimp, peeled and deveined
1 1/2 cups cold club soda
Canola oil, for frying
Boom Boom Sauce

Steps:

  • Pour canola oil in a large heavy bottomed skillet or saucepan to a depth of 3 inches. Heat over medium high to 375°F.
  • Whisk together flour, cornstarch, baking powder, and salt in a medium bowl. Skewer 3 shrimp on each 6-inch skewer; then dredge shrimp in flour mixture. Set skewers aside. Whisk club soda into flour mixture, then dip skewers into wet batter. Working in batches, fry battered skewers 2-3 minutes or until golden. Serve with boom boom sauce.

1 pound baby Dutch yellow potatoes
3 ears corn, each cut crosswise into 6 pieces
1/4 cup unsalted butter, melted
4 cloves garlic, minced
1 tablespoon Old Bay seasoning
1 pound medium shrimp, peeled and deveined
1 (12.8-ounce) package smoked andouille sausage, thinly sliced
1 lemon, cut into wedges
2 tablespoons chopped fresh parsley leaves

Steps:

  • Preheat oven to 400 degrees F. Lightly oil a baking sheet or coat with nonstick spray. In a large pot of boiling salted water, cook potatoes until just tender and parboiled, about 10-13 minutes. Stir in corn during the last 5 minutes of cooking time; drain well. In a small bowl, combine butter, garlic and Old Bay seasoning. Place potatoes, corn, shrimp and sausage in a single layer onto the prepared baking sheet. Stir in butter mixture and gently toss to combine. Place into oven and bake for 12-15 minutes, or until the shrimp are opaque and corn is tender. Serve immediately with lemon wedges, garnished with parsley, if desired.

1 yellow onion, halved and sliced
4 cloves garlic, crushed
1 1/2 tablespoon Old Bay Seasoning, plus 1 tablespoon more for sprinkling
1 bay leaf
4 cups seafood stock or water
1 1/2 pound extra-large/jumbo shrimp (16/25 count), shell on

Steps:

  • Add the onion, garlic, Old Bay Seasoning, and a bay leaf to a large pot. Add 4 cups of water or stock and bring to a boil over high heat.
  • Once the water has come to full, roaring boil, remove it from the heat. Carefully add the shrimp and cover the pot with a lid. Set an 8-minute timer and allow the shrimp to steep in the pot. The shrimp is done once it is pink and opaque.
  • Pour the contents of the pot over a colander, pick out the shrimp and set aside. Sprinkle the remaining Old Bay Seasoning evenly over the shrimp and serve alongside lemon wedges and cocktail sauce.

1 pound large shrimp (21 to 24), peeled and deveined
2 tablespoons canola oil
1 tablespoon kosher salt
2 teaspoons freshly ground black pepper

Steps:

  • Heat your grill to high.
  • Place the shrimp in a large bowl. Toss the shrimp with the oil and season with the salt and pepper.
  • Place the shrimp on the grates of the grill in an even layer and grill until golden brown and slightly charred, 1 1/2 to 2 minutes. Turn the shrimp over and continue grilling until just cooked through, 45 seconds to 1 minute longer. Remove the shrimp to a platter.

1 cup olive oil
¼ cup chopped fresh parsley
1 lemon, juiced
2 tablespoons hot pepper sauce
3 cloves garlic, minced
1 tablespoon tomato paste
2 teaspoons dried oregano
1 teaspoon salt
1 teaspoon ground black pepper
2 pounds large shrimp, peeled and deveined with tails attached
6 each skewers

Steps:

  • In a mixing bowl, mix together olive oil, parsley, lemon juice, hot sauce, garlic, tomato paste, oregano, salt, and black pepper. Reserve a small amount for basting later. Pour remaining marinade into a large resealable plastic bag with shrimp. Seal, and marinate in the refrigerator for 2 hours.
  • Preheat grill for medium-low heat. Thread shrimp onto skewers, piercing once near the tail and once near the head. Discard marinade.
  • Lightly oil grill grate. Cook shrimp for 5 minutes per side, or until opaque, basting frequently with reserved marinade.
