Yet another recipe for eggplant! LOL! I have seven eggplants on my eggplant and about 6 purple flowers. How many different ways can you serve up eggplant? Eggplant ice cream anyone? LOL!

Steps:
- Pre-Heat oven at 350 degrees F.
- Chop onion into 1/4" pieces.
- In skillet add 1 tablespoon of margarine.
- On medium-low heat saute onion until translucent (not brown).
- Stir frequently.
- Add bell pepper and eggplant pieces with onion.
- Sprinkle salt over mixture.
- Saute until tender.
- Spray PAM in 2-quart baking dish.
- Add eggplant, pepper and onion mixture into baking dish.
- Mix cheeses together.
- Sprinkle cheese mixture on top of eggplant mixture.
- Bake in oven for 15-minutes or until cheese has melted.
- Serve and enjoy.
ACADIA'S BAKED EGGPLANT
Well the eggplants are coming in from the garden in a big way. The last time I looked there were 10 eggplant fruit on the plant plus another 10 purple flowers. I guess I'm going to be searching the eggplant section of Zaar for additional ideas. LOL!

Steps:
- Slice eggplant so you have round 1/4" slices.
- Place slices on a cooling rack and salt both sides.
- Let sit for 30 minutes.
- Preheat oven to 500 degrees F.
- Take each slice of eggplant and dab them with a paper towel to remove moisture.
- Spray cookie sheet with PAM and place eggplants on it.
- Bake each side of the eggplant slices for 5 minutes on each side.
- Remove from oven.
- Top each slice with spaghetti sauce.
- Then sprinkle each slice with mozzarella cheese.
- Bake for 10 minutes or until cheese melts.
- Enjoy.

ACADIA'S EGGPLANT PARMESAN
I love eggplant and I decided to make a layered eggplant side dish without the breading that one typically sees with this type of presentation. I use a square baking dish for this treat.

Steps:
- Slice eggplant cross wise into desired thickness. (I cut it in 1/8 am inch slices / not critical).
- Place slices on paper towels and sprinkle with salt to help remove the extra moisture for about 15 minutes.
- Use more paper towels and press each slice to remove moisture.
- In a skillet, saute eggplant slices for 2-3 minutes on each side.
- Add a layer of sauteed eggplant slices to the baking dish, and
- place a dollop of marinara sauce over each slice.
- Then top each slice with a tablespoon worth of mozzarella.
- Repeat these steps until the whole eggplant is sauteed and layered in the dish.
- Sprinkle with Parmesan cheese and bake in a 350 degree F oven for 15 minutes.
- Enjoy!

CRISPY BAKED EGGPLANT

Steps:
- Preheat oven to 425°F.
- In a small bowl stir together mayonnaise, dried onion, and salt.
- In a shallow dish mix bread crumbs, Parmesan cheese, and Italian seasoning (or just use Italian breadcrumbs).
- Brush eggplant slices with mayonnaise mixture and then coat in breadcrumb mixture.
- Place eggplant slices on a lightly oiled baking sheet or shallow baking dish.
- Bake in hot oven for about 12 to 15 minutes turning about half way through.
- Enjoy!

BAKED EGGPLANT WITH RICOTTA, MOZZARELLA AND ANCHOVY
I learned this dish from a Sicilian cook in a small town outside Palermo. She makes it by layering thinly sliced eggplant with fresh curd cheese and caciocavallo (I use fresh ricotta and provolone instead), as well as pecorino and Parmesan cheese - a bit like a lasagna without pasta. It is quite delicious and unusual in that there is no tomato sauce, as there often is in so many Sicilian baked eggplant dishes. The anchovies, melted into the crisp bread-crumb-and-cheese topping, provide a sharp contrast to the sweetness of the eggplant. I like to serve a tomato salad alongside.

- Heat oven to 375 degrees. Generously oil a 9- by 13-inch baking dish. Season eggplant slices on both sides with salt and pepper. Arrange half the eggplant slices in one layer on bottom of dish, overlapping slices slightly. Drizzle or paint eggplant generously with olive oil. Sprinkle with crushed red pepper to taste and scatter onion slices evenly over surface.
- With a small spoon, distribute the ricotta in little blobs evenly over surface, then arrange half the smoked mozzarella over the ricotta. Sprinkle with 1 cup grated provolone.
- Make another layer of overlapping slices with remaining seasoned eggplant. Drizzle or paint eggplant generously with olive oil. Top surface evenly with remaining smoked mozzarella and provolone, then sprinkle with Parmesan and pecorino. Arrange anchovy fillets over top and sprinkle with bread crumbs.
- Bake uncovered for 45 minutes to 1 hour, until eggplant is quite tender when pierced with a fork and top is crisp and golden. (If top seems to be browning too quickly, tent with foil and reduce heat to 350 degrees.) Remove from oven, dust with oregano and let rest at least 20 minutes before cutting into squares. The dish is best served at room temperature, not piping hot.

- Preheat oven to 350 degrees F.
- In skillet saute onion until translucent with 1 tablespoon of margarine.
- Added eggplant and bell pepper in with onion and saute until tender.
- Set onion, eggplant and pepper mixture aside in a bowl.
- Remove sausage from casings and brown in same skillet and then cook thoroughly.
- (I placed my skillet with metal handle in the oven for 15 minutes).
- While sausage is cooking, use a 2-quart bowl to whisk together eggs, cream, nutmeg, chives, parsley, black pepper, & salt.
- Then add eggplant, onion and bell pepper mixture.
- Stir.
- Remove skillet from oven with sausage (Remember the handle is HOT!).
- Drain sausage on paper towels and blot dry.
- Chop up sausage into bite size pieces.
- Add 1/2 cup monterey jack cheese, 1/2 cup cheddar and sausage to the egg mixture.
- Use 1 teaspoon of margarine or PAM cooking spray to grease a 5-quart oblong baking dish.
- Pour mixture into greased baking dish.
- Place on middle rack of oven.
- Bake for 45 minutes or until the quiche isn't jiggly anymore and toothpick comes out of middle clean.
- Let cool for 15 minutes.
- Enjoy!

- Preheat oven to 400 degrees F (200 degrees C). Prepare a baking dish with non-stick play.

Put on your cozy pants and get comfortable with a giant bowl of this cheesy, eggplant-studded pasta. Don't be shy about adding plenty of reserved pasta cooking water to the sauce; it's the magical ingredient that creates a silky sauce and keeps the pasta moist while baking. A little grated ricotta salata to finish adds a slight tangy bite that rounds everything out - but, truthfully, more Parmesan or any firm, salted cheese will do.

- Heat oven to 375 degrees. Cook rigatoni according to package instructions but keep it slightly more al dente. Reserve 1 1/2 cups pasta cooking water, then drain and rinse pasta under cold water, and transfer to a large bowl while you cook the eggplant.
- Heat 2 tablespoons olive oil in a large, oven-proof skillet over medium. Add half the eggplant, season with salt and pepper, and cook, stirring, until golden brown on all sides, 9 to 10 minutes. Transfer to the bowl with the rigatoni. Repeat with 2 tablespoons olive oil and remaining eggplant and transfer to the bowl.
- Heat the remaining 2 tablespoons olive oil in the skillet over medium. Add onion and garlic and cook, stirring, until translucent, 3 to 4 minutes. Stir in red-pepper flakes and season with salt and pepper. Add tomatoes and their juices, crushing the tomatoes with your hands as you add them. Cook until the tomatoes are very soft, about 5 minutes. Stir in the reserved pasta cooking water, adding up to 1 1/2 cups as needed to create a silky sauce.
- If the skillet is large enough, add the rigatoni and eggplant mixture, Parmesan, 1 cup mozzarella and 1 cup basil and toss to coat. Otherwise, add the tomato sauce, Parmesan, 1 cup mozzarella and 1 cup basil to the large bowl with the rigatoni and eggplant, toss to coat and then return to the skillet or transfer to a greased baking dish.
- Top with remaining 3 cups mozzarella and bake until the sauce is bubbling on the sides and the cheese is melted, about 25 minutes. Top with grated ricotta salata and torn fresh basil to serve.
