Super easy cauliflower bread recipe with just 5 ingredients! Simply combine cauliflower, eggs, mozzarella, salt & pepper; spread and bake. A great low carb, gluten free option for your breakfast bread slice, burgers and pizza bases.

- Preheat oven to 220ºC. Line a baking tray with parchment paper
- Steam the cauliflower florets for 5 minutes. Let them air dry.
- To make cauliflower rice, simply grate the steamed florets in a processor. They should be like small couscous. In this recipe, I got almost 4 cups of grated cauliflower rice from 1 large head. *
- Take the cauliflower rice in a tea-towel or cheese cloth and really wring it hard to get as much water out as possible.
- Return to the food processor, add in mozzarella, salt, pepper, and break in the eggs. Whizz on medium speed for about 30 seconds to a minute until well combined.
- Take small portions (almost 2 tbsps) and spread them on the baking sheet like a bread slice. You can also spread them in rounds to make burger buns or in one big round to make pizza base.
- Bake for 10 mins. Flip and bake for another 10 minutes till they are golden. **
- Ready! Serve with eggs or make burgers!

- Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
- Whisk eggs, salt, and pepper together in a bowl. Place panko bread crumbs in another bowl.
- Dip each cauliflower floret in egg mixture to coat, then dip each floret into bread crumbs to coat; place on prepared baking sheet.
- Bake in the preheated oven until tender and lightly browned, turning once, about 25 minutes.

GARLICKY CAULIFLOWER BREAD
This gluten-free cauliflower bread is moist, flavorful and tender thanks to pureed cauliflower blended with whipped egg whites. Enjoy it on its own, or toasted with the addition of butter, garlic, salt and parsley.

- Preheat oven to 350°F. Line a 9-by-5-inch loaf pan with parchment paper and lightly coat with cooking spray; set aside. Microwave cauliflower according to package instructions. Transfer to a food processor; pulse until smooth, about 15 pulses. Place in a clean kitchen towel or several layers of paper towel. Squeeze out liquid until completely dry; transfer the cauliflower to a large bowl.
- Add egg yolks, flour mix, oil, baking powder, garlic powder and 3/4 teaspoon salt to the cauliflower. Stir and mix with your hands until the mixture is completely smooth (it will be very thick); set aside.
- Beat egg whites in a medium bowl with an electric mixer on medium-high speed until stiff peaks form, about 2 minutes. Stir 1 cup of the whipped egg whites into the flour mixture until almost incorporated. In batches (about 1 1/2 cups at a time), fold in the remaining egg whites until just combined. Spoon the batter into the prepared loaf pan and bake until risen and golden brown on top, about 45 minutes. Remove from pan and transfer to a wire rack to cool completely, about 1 hour.
- When ready to make garlic bread, preheat oven to 425°F. Finely chop garlic on a cutting board and mash with the side of a knife until a paste forms. Stir the garlic paste, melted butter, parsley and the remaining 1/4 teaspoon salt together in a small bowl. Cut the cauliflower loaf into 12 slices; brush with the garlic-butter mixture. Place the slices in a single layer on a baking sheet. Bake, checking often to make sure it's not burning, until golden brown, 5 to 10 minutes. Serve immediately.

- Preheat the oven to 425 degrees F (220 degrees C). Line a large, rimmed baking sheet with parchment paper and spray with cooking spray.
- Mix bread crumbs, thyme, oregano, basil, salt, and pepper together in a mixing bowl. Drizzle in the olive oil and rub it into the bread crumbs with your fingertips.
- Quickly run cauliflower under water to dampen slightly. Roll cauliflower around in the bread crumb mixture until crumbs stick; place in a single layer on the prepared baking sheet and sprinkle any excess crumbs over top.
- Roast in the preheated oven until tender and lightly browned, about 12 minutes.

- Place cauliflower and a small amount of water in a skillet. Bring to a boil. Reduce heat; cover and simmer until crisp-tender, about 8 minutes. Drain and set aside. , In a small bowl, whisk egg yolks and seasonings. Place bread crumbs and cheese in a large bowl. Add a few florets at a time to the egg mixture; toss to coat. - Microwave cauliflower for 3-4 minutes or until tender. Let it cool. Then, place about a third of the batch in a clean kitchen towel and squeeze dry. Repeat with remaining cauliflower, working in batches. This is a must for the bread not to get too soft!
- Add egg whites to a mixing bowl. Beat at high speed until stiff peaks form. Reserve. In a large bowl, mix eggs yolks, oil, almond flour, baking powder, salt, and herbs until a smooth paste forms. Stir in the cauliflower, cheese, bacon, and jalapeno until homogeneous.
- Add about 1/3 of the egg whites to the paste. Use a spatula to fold in the egg whites. Repeat process with the remaining egg whites. Make sure NOT to beat the egg whites because that will cause the bread not to properly rise.
