Steps:
- In a large nonstick pan, combine the warm water, olive oil, flour, sugar, yeast, and salt. Use a spatula to stir the ingredients, then smooth the dough to the edges of the pan.
- Spread the marinara sauce over the dough, all the way to the edges. Sprinkle the mozzarella evenly over the sauce, then top with the pepperoni.
- Place over medium heat, cover, and cook for 10 minutes with the vent covered.
- Uncover the vent and cook for 5 more minutes, until the edges are crispy.
- Slide the pizza out of the pan onto a cutting board and let cool for 5 minutes.
- Sprinkle with basil, then slice and serve.

Steps:
- Whizz together the flour and water in a food processor for a minute or so until it clumps together to form a single ball. You might need to add a little bit more water or flour to get the consistency right. (Dough should be soft, but not sticky!)
- Preheat the grill (broiler) on high.
- On a floured surface, roll out the dough to about 1 cm (½ inch) thick.
- Place pizza dough onto a well-oiled, oven-safe frying pan on high heat.
- While the bottom is cooking on the hob, top the pizza with the sauce, cheese, pepperoni herbs and whatever else you like. (Try your best to not over-top it or else it can fall apart or get soggy.)
- Continue cooking on high until the edges of the crust start browning and crisping.
- Place the pan under the grill and cook the toppings until the cheese is bubbly and browning. Slice.
- If you're quick, you can actually have this from-scratch pizza on your plate (and in you mouth) quicker than it takes to cook a pre-made frozen pizza.

FLORENTINE PIZZA

- To prepare the pizza, preheat the oven to 200C/Gas 6/fan 180C. Put the pizza base on a baking sheet and spread with the sauce.
- To cook the spinach, put it in a microwavable bowl, cover with cling film and pierce it a couple of times. Put in the microwave on High (850W) for 2 minutes until wilted (or cook in a covered pan for 2-3 minutes). Drain and spread the spinach over the pizza base, then get the mushrooms out of the jar with a fork and scatter them over the top. Season and sprinkle with half the parmesan. Bake for 10 minutes.
- Make four dips in the spinach with the back of a spoon, and crack an egg into each. Sprinkle with the remaining cheese and bake for a further 6- 8 minutes, until the eggs are just set.

- For the dough, put the yeast, sugar and salt in a measuring jug, pour over the warm water and allow the yeast to froth and dissolve. Sift the flour into a large mixing bowl, pour the liquid into the flour with the oil and stir to bring it together.
- If you have a mixer with a dough hook, knead the dough in it for 5 minutes until it springs back when lightly touched. Alternatively, knead on a floured work surface for 10-15 minutes until it’s smooth and springs back when lightly touched.
- Grease a mixing bowl and put the kneaded dough in it. Cover the bowl with cling film and leave to rise in a warm place until doubled in size – about an hour.
- To make the sauces, whizz the passata, vinegar, sugar, garlic, basil, salt and a good grind of pepper in a blender until smooth. Put the ricotta, lemon zest and juice in a bowl and beat together. Season and set aside.
