Heat a large, nonstick skillet over medium-high heat. Add the tortillas one at a time and cook for about two minutes, flipping halfway through, until it's golden brown and crispy on both sides. You can add a tablespoon of cooking oil to the pan to speed up the process, if you like. Set the tortilla aside and continue cooking until all the tortillas are crisp.
Reheat the ground beef and refried beans separately in the microwave or on the stovetop, stirring frequently until the items are warmed through.
Make the Mexican pizza by spreading about 1/4 cup of the refried beans on one tortilla shell. Top it with about 1/4 cup of the ground beef. Lightly press a second tortilla shell onto the beef and bean mixture. Top it with 2 tablespoons of the enchilada sauce and 2 tablespoons of the shredded cheese. If using, add 2 tablespoons of the diced tomatoes to the top of the pizza.
Place the completed pizza on a baking sheet and assemble the remaining pizzas. Slide the baking sheet underneath the broiler and cook until the cheese is melted, about 1 minute. If you don't have a broiler, you can bake the pizzas in a 400 degree Fahrenheit oven for 8 to 10 minutes. Or, you can cook them one at a time over medium heat in a large skillet with a lid.

Place on a rimmed baking sheet. Repeat building process with remaining ingredients to make 6 pizzas. Place baking sheet in center of oven, and broil 1 to 2 minutes until cheese is melted.
