Remove cottage roll from plastic wrapping and drain liquid. Give your pork a good rinse and blot dry. Leave pork cottage roll in its netting, and place fat-side up on a trivet with handles or steam rack with handles into your pressure cooker.
Add water to barely cover the meat (about 2½-3 cups). Add pickling spices (2-3 Tbsp should do it). Scatter your quartered onion around and close lid. Set pot to Sealing. (Make sure you have a good quality pickling spice. You want some junper berries, bay leaves, mustard, all that is good stuff.)
Pressure cook pork cottage roll for for 25-35 minutes per 1 lb. (Use the shorter time, if you like your meat more firm and sliceable.) You only need your cottage roll to reach 160° internal temp to get tender slices of meat.
