Easiest Ever, No Canning Required Dill Pickles image

Super easy no-canning required dill pickles. No canning required, store in the fridge for months.

9 cups water
1 ½ cup vinegar
1/3 cup canning salt
½ cup sugar
Dill, 2-3 stalks
2-4 inch long cucumbers, enough to fill a gallon jar

Steps:

  • Combine the water, vinegar, salt and sugar and boil one minute. Cool slightly.
  • Wash the cucumbers and cut off about 1/16"from each end. This gets rid of some enzymes that would soften the pickles, and allows better penetration of the brine. Pack the cucumbers in a one gallon jar with the dill.
  • Pour the warm brine over the cucumbers. Let stand, loosely covered, at room temperature for three days. (Drape a towel over the jar opening or let lid sit on loosely.) I rubber band everything, especially in fruit fly season.
  • Cover and store in refrigerator. They are ready to eat after the three days but the flavor improves after a week or two in the refrigerator.

How to make classic homemade dill pickles using fresh cucumbers, dill, spices, and brine. This recipe follows a simple hot water bath method.

Pickling cucumbers / gherkins
1 Tbsp Dill leaves (per quart)
1-2 whole Dill flower heads (per quart)
1/2 tsp Peppercorns (per quart)
2 cloves of Garlic (per quart)
Water
White vinegar
Sea salt or Kosher salt
Preserving jars & lids

Steps:

  • Sterilize your preserving jars with either boiling water or by placing them in an oven at 130°C/265°F for thirty minutes. Whatever your method of sterilization, allow the jars to cool before packing them with your ingredients. While they're cooling, take your jar's lids and place them in bowl of boiling hot water. Leave them there until you need to fit them onto the jars.
  • Wash your gherkins and start packing them into your jars. If they're small, pop them in whole but if medium to large cut them into slices. This helps to get more into the jar and also for easier serving once the jar is opened. For each quart of pickles you'll add half a teaspoon of black peppercorns, two whole garlic cloves and plenty of dill.
  • Make the brine: for approximately every four quarts of tightly packed gherkins you'll need to bring two quarts of water and one quart of white vinegar to a boil. Add 1/2 cup of salt and stir until dissolved. Let this cool until just warm and then pour it into each of the jars, filling to a centimeter (just less than 1/2") below the top of the jar's brim.
  • Clean the tops of the jars then fit on your preserving lids and screw the rings on. Most every preserving recipe will tell you to not over-tighten the rings but in my experience I've found that it's best to twist them on fully but not super tight. If they're too loose then the contents of your jars can leak out in the water bath.
  • Place a metal preserving rack or towel at the bottom of a deep preserving pan and then place the jars inside. The jars should be at least an inch apart and the pan needs to be deep enough to have the jars inside with over an inch of water comfortably covering the tops.
  • Cover the jars with warm/hot water from the tap then bring the pan to a boil. Boil the jars for fifteen minutes then lift them out of the water. If you're using a towel at the bottom of the pan then you'll need a 'jar lifter' tool available at many kitchen shops. Set the jars on the counter and allow to cool. You'll know that the jars are properly sealed when you hear the lids popping.
  • Allow the pickles to infuse with the brine for at least two weeks before eating them. Stored in jars in a cool pantry your pickles will last up to a year, though I doubt you'll be able to let them sit there that long.

Dill Pickles by the Jar image

This was the first recipe for dill pickles I ever made, and it's still a favourite. I like the technique it uses of making the pickles right in the canning jars, rather than in a crock. I've since adapted the method to any fermented pickles that I make. This makes one quart of pickles; you simply multiply the brine for the number of quarts of cucumbers that you have. I also use this brine to make pickled mixed green beans, wax beans and carrots cut in pieces the same general size and shape as the beans.

1/2 cup white vinegar
1 1/2 tablespoons pickling salt
2 -3 sprigs dill seeds
1 -2 garlic clove (optional)
1 dried hot pepper (optional)
1 quart small fresh cucumber

Steps:

  • Using a soft vegetable brush, thoroughly scrub the cucumbers in cool running water. Cut 1/16 inch off the blossom end. Discard any cucumbers that are bruised or damaged.
  • Put however many quart canning jars that you need into a canner and cover them with water; bring to a boil and boil for 10 minutes.
  • Make the brine with the water, vinegar and salt; put them in a pot and heat until the salt is dissolved.
  • Put a couple good heads of dill seed into each sterilized jar.
  • Seed heads should be well-formed but still green.
  • Add a clove of garlic and/or a hot pepper if desired.
  • Pack the jar with the cucumbers.
  • I find it easiest to start with the jar on its side, laying some of the larger cucumbers along the bottom then keep stacking on top of them. Use the end of a large wooden spoon to gently push more cukes in once it gets snug in there. Then repeat with a second row of stacked cukes, picking ones that will fit in without sticking too far up in the jar. There may then be room to lay a couple on top.
  • Pour the hot brine over them, and cap at once with a sterilized lid.
  • Do not hot water process.
  • Store jars on newspaper in case they overflow while fermenting.
  • Can be opened in 6 weeks but much better after 6 months!

  • Make a brine by adding the sea salt to the water and stirring to combine. Stir until the salt dissolves into the water.
  • Add half of the garlic, half of the dill, half of the peppercorns, half of the mustard seeds, and half the red pepper flakes (if using), to the bottom of the jar.
