This super easy dish was one we often had while camping as kids. My sister and I loved it. Many years later, I was challenged to come up with a dish to bring to my sister's for Christmas brunch. I was inspired and made our camper's hash. To justify this humble dish's appearance at Christmas, I called it 'Who Hash,' and a tradition was born. We must have it EVERY Christmas morning. The name of this dish came from a line in Dr. Seuss' 'How the Grinch Stole Christmas' where it is described that the Grinch stole everything in the Who's house, 'the Grinch even took their last can of Who hash.'

1 tablespoon vegetable oil
2 (15 ounce) cans diced white potatoes, drained
1 (12 ounce) can fully cooked luncheon meat (such as SPAM®), diced
½ onion, chopped

Steps:

  • Heat oil in a non-stick skillet over medium heat. Spread potatoes and meat in a single layer into the skillet; cook until browned on the bottom, about 5 minutes. Turn potatoes and meat to cook other side until browned, about 5 minutes more. Stir onion into the potato mixture; cook and stir until the onion is tender, 5 to 7 minutes.

Our family always has leftover roast beef and this recipe is a great way to finish it up!

3 russet potatoes
2 cups 1/2-inch cubes roast beef
1 onion, finely chopped
1 green bell pepper, thinly sliced
½ cup sliced fresh mushrooms
1 tablespoon vegetable oil

Steps:

  • Place potatoes on a microwave-safe plate and prick skins with a fork. Cook in the microwave until slightly tender, 7 to 8 minutes. Cut into 1-inch cubes.
  • Combine potatoes, roast beef, onion, green bell pepper, and mushrooms in a bowl.
  • Preheat an electric skillet to 350 degrees F (175 degrees C). Coat with oil.
  • Spread potato mixture evenly in the skillet. Let cook, without stirring, until browned, about 5 minutes. Flip and continue cooking until second side is crisp, about 5 minutes more.

Zwierze Miesoie (

Mark's Polish family recipes, which literally translated is "ground up animal". Their family also referred to it as "Alpo casserole", since the whole idea was to apparently disguise the 'mystery meat'.

1 quart(s) water
1/2 teaspoon(s) salt
1 1/2 pound(s) potatoes
1 tablespoon(s) butter
2 tablespoon(s) oil
1/2 onion, chopped
2 cup(s) minced or ground game meat
1 cup(s) leftover gravy
1/2 teaspoon(s) salt
1/2 teaspoon(s) basil
1/4 teaspoon(s) pepper
1/8 teaspoon(s) thyme
nutmeg to taste
garlic powder to taste

Steps:

  • In medium saucepan, heat water and 1/2 teaspoon salt to boiling. Add potatoes. Return to boiling. Reduce heat; cover. Simmer until tender, 20-25 minutes. Cool. Peel and cut into 1/2 inch cubes. In large skillet, melt butter in oil over medium-high heat. Add potatoes and onion. Cook, stirring frequently, until potatoes are lightly browned and onion is tender. Remove from heat. Add remaining ingredients. Mix well. Cover and cook over low heat for 5 minutes to heat through and blend flavors.
  • Notes: Just about any meat can be used in this recipie which was frankly as much to disguise the real "mystery meat" as anything else About the name? Literally, it was listed as "ground up animal" I don't know what it should be called, but the alternative family nickname was "Alpo Casserole" after a popular canned dog food of the period
