CHEESY ZUCCHINI LOAF

An easy and delicious quick bread loaded with fresh zucchini and cheddar cheese. Perfect to serve with soups, or even on it's own.

1.5 cups Shredded Zucchini, patted dry, Approx 1 small zucchini
2 cups Flour, AP
1/2 tsp Baking Soda
2 tsp Baking Powder
1 tbsp Garlic Powder
1/4 tsp Salt
1 cup Milk
1 tbsp White Vinegar, Mix with milk and let sit while you prep ingredients
1 Egg
1/4 cup Melted Butter
1.5 cups Grated Cheddar Cheese
3 tbsp Chopped Chives

Steps:

  • Preheat oven to 350 F and grease 9x5" pan. Begin by adding vinegar to milk and allowing it to sit while you get the batter ready (this creates the "buttermilk" effect).
  • In a medium bowl combine flour, baking soda, baking powder, garlic powder and salt with a whisk to ensure ingredients are evenly distributed.
  • In stand mixer mix melted butter with egg and add in milk mixture, mix well.
  • Add dry ingredients to wet mixture and stir until JUST combined, do not overmix or your zucchini loaf will be flat and dense.
  • Add in zucchini, chives and cheese and use wooden spoon to gently fold into the batter.
  • Pour batter into prepared pan and bake for 50-60 minutes., when toothpick inserted comes out clean it is done. Allow to cool before removing from pan.

A simple zucchini quick bread that's bursting with cheddar cheese!

Number Of Ingredients 10

1 1/2 cups zucchini, shredded (do not squeeze)
1/4 cup green onion, sliced (optional)
2 large eggs
3/4 cup sour cream
1/4 cup butter, melted and cooled
1 1/2 cup cheddar cheese, shredded
2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt

Steps:

  • Mix the zucchini, green onions, eggs, sour cream, and butter well before mixing in the cheese.
  • Mix the flour, baking powder, baking soda and salt.
  • Mix the dry ingredients into the wet ingredients and pour the batter into a greased 9×5 inch loaf pan.*
  • Bake in a preheated 350F/180C oven until a toothpick pushed into the center of the bread comes out clean, about 50-70 minutes.
  • Let cool a bit before running a knife around the inside edge of the pan, removing the loaf, slicing and enjoying topped with melted butter.

I have been using this recipe for some time now, it makes a dense, moist loaf, and I use it to sneak veggies into my 5 year old! This recipe makes 2 loaves. Hope you enjoy!

1 cup oil
2 cups sugar
3 cups shredded zucchini
2 teaspoons vanilla
3 cups flour
1 tablespoon cinnamon
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 cup raisins
1/2 cup chopped walnuts

Steps:

  • Pre-heat oven to 350 degrees, and grease 2 loaf pans.
  • Mix eggs, oil and sugar and beat until creamy.
  • Add the rest of the ingredients and mix well.
  • Bake for 60-70 minutes in two loaf pans.

This recipe came about when I was trying to make a zucchini bread that didn't call for sugar. I use slices of this attractive bread when making sandwiches.

3 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
3 large eggs
3/4 cup vegetable oil
2-1/2 cups shredded unpeeled zucchini (about 2 medium)
1 cup shredded cheddar cheese
1/2 cup chopped onion

Steps:

  • In a large bowl, combine the flour, baking powder, baking soda and salt. In another bowl, whisk eggs and oil. Stir into dry ingredients just until moistened. Fold in zucchini, cheese and onion. , Pour into a greased 9x5-in. loaf pan. Bake at 375° for 55-65 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack. Serve warm. Refrigerate leftovers.

4 teaspoons baking powder
1 tablespoon sugar
1 1/2 teaspoons salt
1/2 teaspoon black pepper
4 ounces cheddar cheese
1/2 cup parmesan cheese
1 large zucchini
3 scallions
2 eggs
3/4 cup milk
1/3 cup olive oil

Steps:

  • Shred the cheddar cheese and the zucchini. Chop the scallions.
  • In a large bowl mix the flour, baking powder, sugar, salt and pepper.
  • In a smaller bowl, combine 1/4 cup of the shredded cheddar and 2 tablespoons of parmesan cheese and set aside.
  • Stir the remaining cheddar and parmesan into the flour mixture.
  • Add the shredded zucchini and chopped scallions.
  • In a medium bowl beat the eggs. Beat in milk and oil.
  • Add the egg mixture to the flour mixture, stirring just until dry ingredients are moistened. Batter will be very thick.
  • Put the batter into a greased 9x5 inch loaf pan. Sprinkle with reserved cheese.
  • Bake at 350 degrees for 55-60 minutes.

At first, I decided to add zucchini to my meat loaf recipe...then it occurred to me to reverse the process and put the meat loaf into the zucchini! 2 medium zucchini
1/2 pound ground beef or bulk Italian sausage
1/4 cup chopped onion
1 garlic clove, minced
2/3 cup seasoned bread crumbs
1/3 cup milk
1/8 teaspoon dill weed
1 cup spaghetti sauce
1/2 cup shredded cheddar cheese

Steps:

  • Cut zucchini in half lengthwise. Scoop out pulp, leaving a 1/4-in. shell. Chop pulp; set pulp and shells aside. , In a large skillet, cook the beef, onion and garlic over medium heat until no longer pink; drain. Add pulp, bread crumbs, milk and dill. Spoon into zucchini shells. , Place in a greased 2-qt. baking dish. Top with spaghetti sauce; sprinkle with cheese. Cover and bake at 325° for 30 minutes or until zucchini is tender.

2 tablespoons white sugar

  • Preheat the oven to 350 degrees F (175 degrees C). Coat 2 loaf pans with cooking spray.

This was a forgotten recipe in Private Recipes folder. I vaguely remember working on it a year or so ago! I tried it out again this morning, and it's very good if I do say so myself. I use Splenda and low fat ingredients and am posting it that way for the nutritional info, but feel free to use regular ingredients if you desire. This makes two loaves so you can eat one and give one away or freeze for later use. When I made it this morning, I made a loaf and 10 muffins. Because I was using it as a breakfast bread I left out the brown sugar to make it less sweet. For a sweeter, snack type bread, make as written. Hope you enjoy!

1/2 cup sugar
1/2 cup packed brown sugar

1 teaspoon baking powder

  • In a separate bowl, combine dry ingredients.
  • Slowly add flour mixture to egg mixture, beating constantly until combined.
  • Fold in nuts and zucchini.
  • Pour evenly into prepared pans and bake for 1 hour or until a toothpick inserted in center of loaf comes out clean.
  • Cool for 10 minutes in pan before turning out.
