CARROT ZUCCHINI CUPCAKES

These veggie-stuffed cupcakes are great after school snacks, but work just as well for birthday treats, too. Skip the frosting and enjoy them for breakfast, if you like.

Yield Makes 12 Cupcakes

Number Of Ingredients 18

Cupcakes
1/2 cup canola oil
1/2 cup unbleached, evaporated cane sugar
1/4 cup unsweetened applesauce
2 large eggs
1 cup all-purpose flour
1/2 cup whole wheat pastry flour
3/4 teaspoon baking soda
1 teaspoon cinnamon
1/8 teaspoon fine sea salt
2 medium carrots, grated
1 small zucchini, grated
1/2 cup chopped walnuts
Frosting
4 ounces cream cheese, softened
1 2/3 cup powdered sugar, sifted
2 teaspoons lime juice
12 walnut halves, for decoration

Steps:

  • Preheat the oven to 400°F.
  • Line a 12-cup muffin pan with paper liners or coat with nonstick spray.
  • In a large mixing bowl, beat the oil with the sugar and applesauce.
  • Add eggs. In a separate bowl, mix together mix together the flours, baking soda, cinnamon and salt.
  • Add to the liquid ingredients. Fold in carrots, zucchini and nuts.
  • Spoon into muffin cups filling 3/4 full.
  • Bake 20 to 25 minutes or until done when tested with a toothpick. Cool on a wire rack.
  • For frosting, beat the softened cream cheese with the powdered sugar until well-incorporated.
  • Add lime juice and beat until frosting is light and fluffy.
  • Ice the cupcakes with a blunt knife. Garnish each with a walnut half.

Number Of Ingredients 16

2 cups all-purpose flour
1 cup sugar
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
4 large eggs, room temperature
1 cup canola oil
1/2 cup maple syrup
3 cups grated carrots (about 6 medium)
FROSTING:
1 package (8 ounces) cream cheese, softened
1/4 cup butter, softened
1/4 cup maple syrup
1 teaspoon vanilla extract
Walnuts, optional

Steps:

  • Preheat oven to 350°. In a large bowl, combine the first 6 ingredients. In another bowl, beat eggs, oil and syrup. Stir into dry ingredients just until moistened. Fold in carrots. , Fill 18 greased or paper-lined muffin cups two-thirds full. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes before removing from pans to wire racks. , For frosting, combine the cream cheese, butter, syrup and vanilla in a bowl; beat until smooth. Frost cooled cupcakes. Add nuts if desired. Store in the refrigerator.

1/2 cup orange juice
1 tablespoon orange zest
2 tablespoons garde b maple syrup
3/4 cup applesauce
1 1/4 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 1/2 tablespoons pumpkin pie spice
1/2 teaspoon salt
1 cup zucchini, grated and squeezed of all water
1 cup carrot, finely grated
1/2 cup golden raisin
1/2 cup walnuts, chopped
8 ounces cream cheese, softened
1/4 cup unsalted butter, room temp
1/2 cup grade b maple syrup
1 teaspoon pure vanilla extract
1 teaspoon pumpkin pie spice

Steps:

  • Preheat oven to 350 degrees. Line cupcake pans with paper liners (I double the liners up).
  • In one bowl, beat eggs then mix in orange juice, orange zest, maple syrup, and apple sauce. Set aside.
  • In a medium sized bowl, sift together dry ingredients. Add the egg mixture until well combined, but don't over mix.
  • Fold in zucchini, carrots, raisins and chopped nuts.
  • Fill cupcakes about 2/3 and bake for 21-22 minutes Do the toothpick test to make sure the middle is cooked through.
  • Let cool slightly and transfer to cooling rack.
  • FROSTING: beat cream and butter until smooth. Add maple syrup, vanilla and spice. Mix until well combined. Top completely cooled cupcakes with a generous heap.
  • ENJOY!
