LOW FAT ZUCCHINI BROWNIES

Low Fat Brownie made with Zucchini, applesauce and bananas No oil or eggs!

1/2 cup applesauce
2 small or medium bananas mashed
1 1/2 cup sugar
2 tsp. vanilla extract
1/2 cup cocoa powder
1 1/2 tsp. baking soda
1/2 tsp salt
2 cups finely shredded zucchini
2 cups all-purpose flour
1/2 cup walnut pieces

Steps:

  • Preheat oven to 350 degrees F.
  • Grease and flour a 9x13 inch baking pan.
  • In a large bowl, mix together the applesauce, mashed bananas, and sugar. Add vanilla and cocoa and mix together.
  • Then add baking soda, salt, and zucchini and mix together.
  • Add flour and walnuts and mix together.
  • Spread evenly into a prepared pan. Bake for 25 minutes until brownies spring back when gently touched.

5 cups peeled and shredded zucchini
3/4 cup sugar
3/4 cup equivalant sugar substitute (I use splenda)
2 teaspoons vanilla
1 1/4 cups flour
1 1/4 cups wheat flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup baking cocoa

Steps:

  • Preheat oven to 325 degrees and Grease 9 X 13 pan.
  • Mix together first four ingredients.
  • Add remaining ingredients.
  • Spread in pan.
  • Bake for 40 - 50 min, or until knife inserted in center comes out clean.
  • Enjoy.

½ cup vegetable oil
1 ½ cups white sugar
2 teaspoons vanilla extract
2 cups all-purpose flour
½ cup unsweetened cocoa powder
1 ½ teaspoons baking soda
1 teaspoon salt
2 cups shredded zucchini
½ cup chopped walnuts
6 tablespoons unsweetened cocoa powder
¼ cup margarine
2 cups confectioners' sugar
¼ cup milk
½ teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch baking pan.
  • In a large bowl, mix together the oil, sugar and 2 teaspoons vanilla until well blended. Combine the flour, 1/2 cup cocoa, baking soda and salt; stir into the sugar mixture. Fold in the zucchini and walnuts. Spread evenly into the prepared pan.
  • Bake for 25 to 30 minutes in the preheated oven, until brownies spring back when gently touched.
  • Make frosting while brownies cool. Melt together the 6 tablespoons of cocoa and margarine; set aside to cool.
  • Meanwhile, blend together the confectioners' sugar, milk and 1/2 teaspoon vanilla. Stir in the cocoa mixture. Spread over cooled brownies before cutting into squares.

2 cups all-purpose flour
1/3 cup baking cocoa
1-1/2 teaspoons baking soda
1 teaspoon salt
2 cups shredded zucchini
1-1/2 cups sugar
3/4 cup vegetable oil
1/2 cup chopped walnuts
2 teaspoons vanilla extract
FROSTING:
1/4 cup butter, cubed
1 cup sugar
1/4 cup milk
1/2 cup semisweet chocolate chips
1/2 cup miniature marshmallows
1 teaspoon vanilla extract
1/2 cup chopped walnuts, optional

Steps:

  • In a large bowl, combine the flour, cocoa, baking soda and salt. In a small bowl, combine the zucchini, sugar and oil; stir into dry ingredients until blended. Stir in walnuts and vanilla. , Pour into a greased 13-in. x 9-in. baking pan. Bake at 350° for 35-40 minutes or until a toothpick comes out clean. Cool on a wire rack for 30 minutes. , In a large saucepan, melt butter; stir in sugar and milk. Bring to a boil over medium heat, stirring frequently. Cook and stir 1 minute or until smooth. Remove from the heat. Stir in chips and marshmallows until melted and smooth; add vanilla. Spread over brownies. Sprinkle with walnuts if desired.

  • preheat oven to 350. line a 9x13 inch pan with parchment paper leaving a bit hanging over the sides as handles, spray with cooking spray. set aside.
  • in a large bowl, mix together applesauce, bananas and sugar. stir in vanilla and cocoa until mixed.
  • then add baking soda, salt, flax and zucchini and stir together.
  • add flour and pecans and stir until completely mixed in. spread evenly into prepared pan. sprinkle with m and m's.

I changed the original recipe ingredients to make them a little healthier. they are chewy and chocolately, with a hint of Zucchini. I use Splenda for the sugar substitute. I don't use any other kind and have no knowledge of how much to use of other substitutes.

  • Cream together the zucchini, sugar, salt, applesauce, water, and vanilla. Mix in the remaining ingredients. Pour into a greased and floured 9 x 13 pan and bake at 350 degrees for 20 minutes, or until a toothpick inserted in the middle comes out clean.
