BEST FRIED GREEN TOMATOES
You can also fry up red tomatoes with this recipe but make sure they are not over ripe or they will be mushy. Serve these tomatoes outside with a glass of iced tea one summer night and enjoy the sunset with someone you love.

Steps:
- Slice tomatoes 1/2 inch thick. Discard the ends.
- Whisk eggs and milk together in a medium-size bowl. Scoop flour onto a plate. Mix cornmeal, bread crumbs and salt and pepper on another plate. Dip tomatoes into flour to coat. Then dip the tomatoes into milk and egg mixture. Dredge in breadcrumbs to completely coat.
- In a large skillet, pour vegetable oil (enough so that there is 1/2 inch of oil in the pan) and heat over a medium heat. Place tomatoes into the frying pan in batches of 4 or 5, depending on the size of your skillet. Do not crowd the tomatoes, they should not touch each other. When the tomatoes are browned, flip and fry them on the other side. Drain them on paper towels.

- Sprinkle both sides of red snapper with lemon-pepper and salt. Place in a greased 11x7-in. baking dish. , Combine the tomatoes, onion, celery, parsley and celery seed; spoon over snapper. , Cover and bake at 350° for 25-30 minutes or until fish flakes easily with a fork.

- Saute onion and celery in butter. Grease a 7 x 11 inch pan. pour onion and celery into pan. Add all else and toss. Bake for 45 minutes at 375 degrees. ( could probably substitute stewed tomatoes with diced or even fresh). I also sometimes add garlic to saute. Enjoy!

ZIPPY TOMATO SAUCE
This is one of my adopted recipes. I have not made it yet, so I have not made any changes. The original poster noted in the steps to serve over patties, so I am taking that to mean hamburger patties. I can see using this sauce as a topping to a great meatloaf also.

Steps:
- Melt margarine in a small saucepan.
- Add green peppers and onion.
- Cook and stir until the onion is tender. (Note: If using the canned peppers, just cook the onion alone.) Stir in all the remaining ingredients and heat to boiling, stirring occasionally.
- Serve hot over patties.
