Meatloaf with salsa, barbeque sauce, and ketchup. This recipe won the 'Meatloaf' contest at our community hospital; now it's the meatloaf our patients receive!

1 ½ pounds ground beef
2 eggs
½ cup chopped onion
½ cup Italian bread crumbs
½ cup salsa
¼ cup ketchup
¼ cup barbeque sauce
1 teaspoon salt
1 teaspoon ground black pepper
½ teaspoon celery salt

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Mix the ground beef, eggs, onion, bread crumbs, salsa, ketchup, barbeque sauce, salt, pepper, and celery salt together in a bowl; transfer to a loaf pan.
  • Bake in the preheated oven until golden brown on top, about 1 hour.

2/3 cup panko breadcrumbs
1/2 cup milk
1/4 cup chopped fresh cilantro
1/4 cup ketchup
2 tablespoons barbecue sauce
2 tablespoons Dijon mustard
1 tablespoon chili powder
1 teaspoon ground cumin
1/2 teaspoon cayenne pepper
4 cloves garlic, minced
4 green onions, thinly sliced
2 large eggs
1 small Spanish onion, diced
1 small red bell pepper, diced
2 pounds ground beef

Steps:

  • Preheat the oven to 375 degrees F. Add the panko, milk, cilantro, ketchup, barbecue sauce, Dijon mustard, chili powder, cumin, cayenne, garlic, green onions, eggs, Spanish onion and red bell pepper to a large bowl and mix until thoroughly combined. Add the beef and mix until incorporated, being careful not to overwork. Put the meat mixture in a loaf pan set on a rimmed baking sheet and bake until it registers 165 degrees F on an instant-read thermometer, 60 to 75 minutes. Let stand 10 to 15 minutes before slicing. Serve with smashed red potatoes, green onions and sour cream.

SOUTHWESTERN MEATLOAF WITH SPICY BARBECUE GLAZE

Add bell pepper, pickled jalapeno and green chile to this meatloaf and brush it with a honey-chipotle sauce.

1 1/2 pounds ground meatloaf mix
1 cup dried plain breadcrumbs
1/2 cup shredded carrots
One 4-ounce can chopped green chilies, drained
1/4 cup chopped fresh cilantro
1/4 cup ketchup
3 tablespoons chopped pickled jalapenos
2 teaspoons Worcestershire sauce
2 large eggs, lightly beaten
1 medium green bell pepper, finely chopped
1 clove garlic, minced
1 medium onion, grated
Kosher salt and freshly ground black pepper
1/4 cup barbecue sauce
2 teaspoons honey
1 teaspoon chipotle chile powder
1 teaspoon cider vinegar

Steps:

  • Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment.
  • Combine the meatloaf mix, breadcrumbs, carrots, green chilies, cilantro, ketchup, pickled jalapenos, Worcestershire sauce, eggs, bell pepper, garlic, onion, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in a large bowl. Use your hands, mix together until combined well. Transfer the mixture to the loaf pan. Bake the meatloaf for 30 minutes.
  • Stir the barbecue sauce, honey, chipotle powder, and vinegar together in small bowl. Remove the meatloaf from the oven and brush the top and sides all over with the spicy barbecue glaze. Return to the oven and bake until the glaze starts to caramelize and a thermometer inserted in the center of the meatloaf registers 160 degrees F, about 45 minutes more. Let rest for 10 minutes before slicing and serving.

1 cup coarsely chopped onion
2 garlic cloves
1 lb ground turkey
1/2 cup fresh breadcrumb
2 teaspoons oregano
1 teaspoon cumin
1 teaspoon salt
1/4 teaspoon pepper
2 tablespoons Worcestershire sauce
1 large egg, beaten
1 cup shredded monterey jack cheese
3 ounces cream cheese
1/2 cup dry red wine
2 teaspoons flour
1/4 cup milk
2 tablespoons butter, cut into small pieces
2 teaspoons Worcestershire sauce
1/4 teaspoon hot pepper sauce
salt
cilantro leaf

Steps:

  • Heat oven to 350 degrees and grease a loaf pan.
  • Put onions and garlic and jalapeno into a food processor and finely chop.
  • Scrape mixture into a large bowl and add turkey and remaining ingredients.
  • Mix well using your hands or a wooden spoon.
  • Pat evenly into loaf pan.
  • Bake for 45 minutes or until internal temperature reaches 165 degrees.
  • Special Sauce:.
  • Stir wine and flour in a small saucepan with a wisk until blended well.
  • Bring to a boil and simmer until thickened. Stir in milk and simmer for a few minutes.
  • Add butter and sauces and salt and simmer until butter melts.
  • Add cilantro leaves and serve with meatloaf.

This hearty meatloaf needs no sauce and makes great sandwiches the next day... IF you have any leftovers!

1 lb ground beef
1 lb bulk pork sausage
1 tablespoon Worcestershire sauce
1/3 cup mustard, any type except whole grain*
1/4 cup Heinz 57 steak sauce, sauce**
1/2 cup dry breadcrumbs
2 tablespoons instant minced onion
2 teaspoons montreal type steak seasoning

Steps:

  • Preheat oven to 350°F.
  • Spray a pan & rack liberally with non-stick cooking spray.
  • Combine all ingredients just until blended. Shape into a loaf and place in prepared pan.
  • Bake in middle of oven for 90 minutes.
  • Remove and allow to stand 10 minutes before slicing.
  • Refrigerate leftovers.
  • *I prefer spicy brown mustard.
  • ** If you use ketchup, use original amount listed in recipe. If you use A-1 Sauce instead, reduce the amount of Worcestershire sauce to 2 teaspoons.

SOUTHWESTERN PORK MEATLOAF

4 medium cloves garlic, smashed and peeled
1 large jalapeno pepper, seeded and cut into quarters
1 medium onion, peeled and cut into 2-inch chunks
1 small red bell pepper, seeded, de-ribbed and cut into 2-inch chunks
2/3 cup fresh cilantro
1 1/3 pounds mild or unseasoned pork sausage, removed from casing
1/3 cup unseasoned dried bread crumbs
2 tablespoons chili powder
1 scant tablespoon cumin
1 scant tablespoon dried oregano

Steps:

  • Place a rack in the center of the oven and heat to 350 degrees.
  • Place the garlic and jalapeno in the bowl of a food processor. Pulse 10 times to coarsely chop. Add onion, and pulse 10 more times. Add the bell pepper and cilantro and pulse 10 more times. There should be about 3 cups vegetables chopped medium fine.
  • Combine all of the ingredients.
  • Divide the mixture into 4 equal parts. Form into mounded ovals that do not touch in a 9-by-13-inch heatproof glass pan.
  • Bake for 30 minutes. (Meat temperature can be checked with a thermometer; it should be 145 degrees.) Remove from oven, and let rest 5 minutes. Using a pancake turner, remove each loaf and serve.

Meatloaf is always a treat, and better on subsequent days as a sandwich! This is one I put together last night.

1 pound(s) ground beef, i used 90% lean
1 pound(s) ground turkey, i used 93% lean
2 - eggs, beaten
1 can(s) diced tomatoes with chipotle, 10 ounce
1 1/2 teaspoon(s) ground cumin
1 tablespoon(s) dark chili powder
1/8 teaspoon(s) celery seed
2 clove(s) garlic, minced
- salt and ground pepper to taste
1/2 cup(s) rolled oats
1/2 cup(s) ketchup

Steps:

  • Preheat oven to 375 degrees and spray a large loaf shaped baking dish with cooking spray.
  • In a large mixing bowl, gently combine the ground beef and ground turkey. Add the eggs stirring to distribute. Mostly drain the can of diced tomatoes with chipotle and pour over the meat mixture.
  • Add the cumin, chili powder, chopped garlic, celery seed and salt/pepper as desired. Gently combine before adding the oats and ketchup before mixing all together. Do this gently and do not over mix, work together with your hand just until combined.
  • Mixture should be very juicy, but solid enough to pick up in your hands and toss about to form a "roll" to place in the prepared pan. Bake uncovered for about 45 minutes or until cooked through and brown on top.
  • I personally do not care for it, but you could easily add regular ketchup, or spiced-up ketchup and spread on top during the last half of baking. Allow to sit in the pan for about 10 minutes before removing to a serving plate. Cut in thick slices and enjoy.
