1 package (8 ounces) reduced-fat cream cheese
1/2 cup dried cranberries, chopped
1/2 cup chopped dried apricots
1 teaspoon grated orange zest
Assorted crackers

Steps:

  • In a large bowl, beat the cream cheese, cranberries, apricots and orange zest until blended. Chill until serving. Serve with crackers.

This is a different type of spread recipe if you're a fan of goat cheese. The flavor of the cheese is mellowed out a little by all the other flavors. Number Of Ingredients 7

1/4 c pine nuts
4 oz chevre (soft goat cheese, usually sold in a log shape)
3 Tbsp plain cream cheese (about 1.5 oz)
1/4 c dried cranberries
3 Tbsp balsamic vinaigrette salad dressing (store-bought or homemade)
1/8 tsp salt
freshly ground black pepper to taste

Steps:

  • 1. Toast the pine nuts. Place on a sheet of aluminum foil and roast in a toaster oven or regular oven at 300 F for about 2 minutes, just until nicely golden brown. Remove.
  • 2. Place toasted pine nuts and all other ingredients into a food processor. Process until mostly smooth.
  • 3. Place in a pretty serving dish. Serve immediately or refrigerate (which will thicken spread somewhat).
  • 4. Serve with crackers, Triscuits, slices of cocktail bread, Melba toast, or cut up veggies of your choice.

Sunny's Easy Cranberry and Goat Cheese Crostini image

1 cup dried cranberries
1 cup chicken stock
4 teaspoons honey
20 to 24 fresh rosemary leaves
Kosher salt and freshly cracked black pepper
20 store-bought crostini
8 ounces goat cheese, at room temperature

Steps:

  • In a medium saucepan over medium-high heat, add the cranberries, stock, honey, rosemary, a pinch of salt and a few grinds of pepper and bring to a boil. Simmer for 1 minute, then remove from the heat and let cool in the pan.
  • Smear the crostini with the goat cheese, then top with the cooked cranberries.

1 can (14 ounces) whole-berry cranberry sauce
1/3 cup slivered almonds, toasted
Assorted crackers

Steps:

  • In a small bowl, beat the cream cheese, sour cream, honey and cinnamon until smooth. Spread onto a serving dish or plate. , In a small bowl, stir cranberry sauce until it reaches spreading consistency; spread over cream cheese mixture. Sprinkle with almonds. Cover and refrigerate for 2-3 hours. Serve with crackers.

  • Place the cranberries, pom juice, sugar and lemon zest in a saucepan and heat over medium heat. Cook until the cranberries are simmering and breaking down. You want them to be completely broken down and sort of thick and saucy, about 10 or so minutes. Transfer it to a bowl. Let the mixture cool completely.
  • In the bowl of your food processor, pulse the goat cheese until it starts to come together. Turn the processor on and let it blend and whip the goat cheese until smooth. Add a pinch of salt and pepper and pulse. Scrape in about 1/4 cup of the cranberry sauce mixture to start and pulse a few more times so everything gets combined. You can blend it completely so it's smooth or you can leave it a little chunky. You can also add more cranberries if you want, but I like to serve it on the side separately too!
  • Transfer the spread to a jar or bowl. At this point, you could cover/seal it and keep it in the fridge overnight before serving. Otherwise, serve it garnished with pomegranate arils, fresh rosemary and with crackers and bread for spreading. Delicious!
