THE BEST SLOPPY JOES
This is weeknight comfort food at its finest. We created a homemade sauce that is tangy and flavorful but also quick and easy. We used both ketchup and canned tomato sauce for lots of tomato-y zip and just a touch of brown sugar for a bit of sweetness and slight caramel finish. Green bell pepper is a key addition; it really enhances the other ingredients, elevating the flavor profile into the realm of a true sloppy joe.

SWEET AND SPICY SLOPPY JOES
These sandwiches have been the go-to meal for my son's basketball team. Turkey is a wonderful change from ground beef and really absorbs all the flavors. I have also used this for a Friday the 13th celebration at work, calling it 13-ingredient sloppy joes. -Karen Hildebrand, LaBelle, Florida

SPICY GARLIC BREAD SLOPPY JOES
This recipe uses three types of fresh chile. When preparing the chiles, it's usual to remove the seeds and the membrane as that is where the most intense heat lies. Of course, if you like your food super-hot and spicy, add the seeds and the membrane too!

- In a large nonstick skillet over medium-high heat, quickly brown the meat, breaking it apart with a wooden spoon, but don’t cook it all the way through. Season with salt and pepper, to taste. Drain off any rendered grease and transfer the ground meat to the slow cooker. Mix in the onion, carrot, and bell pepper.
- In a shallow bowl, whisk together the garlic, ginger, juice, soy sauce, gochujang, honey, and rice vinegar. Pour over the meat in the slow cooker and stir to combine. Cover and cook on low for four hours.
- While you wait for the sloppy joe filling to cook, prepare the quick pickled toppings. Combine the red onion, radish, and cucumber in a wide, non-reactive bowl.
- In a small saucepan over medium heat, combine the rice vinegar, water, sugar and salt. Stir and heat until the mixture is hot and the sugar is fully dissolved. Pour the hot mixture over the sliced onion, radish, and cucumber, and stir in the red pepper flakes. Cover and refrigerate until ready to serve.
