POTATO BREAD



Potato Bread image

Use leftover mashed potatoes to make soft, fluffy, white homemade potato bread! This bread is delicious as a sliceable sandwich bread.

1/4 cup warm water
1 cup 2% milk (warmed)
1 package Red Star Plantinum instant yeast ((or active dry yeast))
1/4 cup granulated sugar
1 large egg
1 teaspoon salt
1/2 cup mashed potatoes
1/4 cup salted butter (melted)
4 cups bread flour

Steps:

  • Pour the warm water and milk (about 110-115 degrees F) into the bowl of a stand mixer.
  • Sprinkle the yeast over the liquids.
  • Add the sugar, egg, salt, potatoes, butter and flour.
  • Use the paddle attachment to mix the ingredients just until combined.
  • Then switch to the dough hook and beat on medium-high speed for 5-7 minutes. The dough should be slightly sticky.
  • Spray a large bowl with cooking spray. Place the kneaded dough ball into the greased bowl and cover with plastic wrap or a kitchen towel.
  • Set the bowl in a warm place until the dough has doubled in size (about 30 minutes).
  • Divide the dough in two and shape into two loaves.
  • Place the dough into two greased 9x5 loaf pans.
  • Cover the pans and put them in a warm place, allowing the dough to rise again until almost double (about 25 minutes).
  • Preheat the oven to 350 degrees.
  • Bake the bread (uncovered) for 30-35 minutes or until the tops are dry and firm, with a golden brown color.
  • Remove the bread from the pans and allow them to cool on a wire rack.
  • Store in an airtight container.
  • *Calories are based on two loaves, each being cut into 10 slices. 1 slice per serving.

Irish potato bread, or farls, is a staple everyone should know how to cook. Simple to make using only four ingredients, potato, flour, butter, and salt. They are the perfect accompaniment to an Ulster Fry (Irish Breakfast).

750 grams (1.65 lbs) potatoes
30 grams (6 teaspoons) butter (| melted)
1 ½ cups plain flour
good pinch o salt (| omit if using salted butter)
extra butter and olive oil to fry

Steps:

  • Peel and cut potatoes into quarters or large chunks. Add to a large pot of cold water.Bring potatoes to the boil, then reduce to a hard simmer. Cook potatoes until they are tender and cooked through.
  • Strain potatoes into a colander and leave to cool.
  • When the potatoes are cool enough to handle place in a potato ricer and rice/mash your potatoes into a large bowl.Alternatively use a potato masher and mash well making sure there are no lumps.
  • Add the remaining ingredients to the bowl.If you are adding extra ingredients to spruce your Irish potato bread up, now is the time to do so. Further information above or in the recipe card's note section.
  • Using a spoon mix ingredients together until it becomes difficult to keep mixing.
  • Continue mixing the dough in the bowl with your hands.Check for dough consistency.If you find your dough a little too sticky to handle, add some more flour to make it manageable.
  • Remove dough from bowl and place on a lightly floured surface. Give it a quick knead until smooth.If you still find the dough a little too sticky add some more flour while kneading.The dough is on the sticky side, but should be manageable with flour dusted hands.Divide the dough into six equal portions and shape into balls.
  • Working one at a time place a ball of dough on a lightly floured surface.You can use a clean kitchen bench, or wooden board that has been covered with some baking paper.
  • Lightly flour a rolling pin and roll out the dough ball to the desired thickness.3mm (one eighth of an inch) for thin, or half a centimeter (just under a quarter of an inch) for thicker bread.
  • Cut the rolled out dough into quarters.Alternatively, you can cook them whole for larger pieces of Irish potato bread.
  • Place a non-stick frypan over medium heat. Add a splash of olive oil and a dollop of butter.Once the butter has melted add pieces of dough to the pan.Fry on one side until golden, then turn them over with a spatular. Once the other side is golden and the bread is cooked through remove from the pan.
  • Place the cooked Irish potato bread on a tray in the oven on low heat to keep warm. Make sure to cover the bread with aluminium foil to stop them from drying out. Continue cooking the rest of the dough. Add more butter and oil to the pan as needed.

Za'atar is a Middle Eastern spice mixture, generally consisting of ground dried thyme, toasted sesame seeds, sumac and salt. It tastes great on roasted potatoes!

1 ½ pounds Yukon Gold potatoes, cut into 1/2-inch cubes
2 tablespoons extra virgin olive oil
2 tablespoons za'atar
1 teaspoon salt
½ teaspoon ground black pepper

Steps:

  • Line a baking sheet with parchment paper.
  • Combine potatoes and olive oil in a large bowl and mix well. Sprinkle potatoes with za'atar, salt, and pepper; toss to coat. Transfer potatoes to the prepared baking sheet.
  • Set baking sheet on the lowest rack of a cold oven and heat the oven to 425 degrees F (220 degrees C). Roast until potatoes are golden brown and tender, 30 to 35 minutes, stirring halfway through.

This recipe can also be used to make rolls versus whole loaves of bread. Great at any holiday dinner.

4 cups water
⅓ cup butter
⅓ cup white sugar
¼ cup dry buttermilk powder
4 teaspoons salt
2 (.25 ounce) packages active dry yeast
1 cup instant mashed potato flakes
10 cups bread flour, divided

Steps:

  • Bring the water, butter, sugar, buttermilk powder, and salt to a simmer in a saucepan over low heat. Remove from the heat, mix well, and let cool to between 105 and 110 degrees F (41 to 43 degrees C). Sprinkle the yeast on top of the mixture, and let stand for about 10 minutes, until the yeast begins to form a creamy foam. Stir in the instant mashed potato flakes, and mix well.
  • Pour the yeast mixture into the work bowl of a standing mixer with a dough paddle, and slowly incorporate 8 cups of bread flour into the liquid, adding the flour 1 cup at a time.
  • Turn the dough out onto a floured surface, and knead for about 8 minutes, adding the remaining flour to the dough as you knead. When the dough is smooth and elastic, form into a ball, and place into a large greased bowl. Turn the dough over in the bowl to grease the top, cover with a cloth, and let rise in a warm place for about 1 hour, until doubled.
  • Spray 2 9x5 inch loaf pans with cooking spray. Punch the dough down, divide into two pieces, and shape each piece into a loaf shape. Place the loaves in the baking pans, seam sides down, cover with a cloth, and let rise in a warm place until doubled, about 30 minutes.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Bake bread for 30 minutes in the preheated oven, until the tops are golden brown and the loaves sound hollow when tapped. Remove from pans to a wire rack to cool.
