Steps:
- Cut the shrimp, scallops, and monkfish into bite-sized pieces and place them in a bowl with the crabmeat.
- In a heavy-bottomed pot, melt the butter; add the carrots, onions, celery, potatoes, and corn and saute over medium-low heat for 15 minutes, or until the potatoes are barely cooked, stirring occasionally. Add the flour; reduce the heat to low and cook, stirring often, for 3 minutes. Add the Seafood Stock and bring to a boil. Add the seafood; reduce the heat and simmer, uncovered, for 7 to 10 minutes, until the fish is just cooked. Add the heavy cream, if desired, and the parsley. Add salt and pepper to taste, and serve.
- Warm the oil in a stockpot over medium heat. Add the shrimp shells, onions, carrots, and celery and saute for 15 minutes, or until lightly browned. Add the garlic and cook 2 more minutes. Add 1 1/2 quarts of water, the white wine, tomato paste, salt, pepper, and thyme. Bring to a boil, then reduce the heat and simmer for 1 hour. Strain through a sieve, pressing the solids. You should have approximately 1 quart of stock. You can make up the difference with water or wine if you need to.

- In a Dutch oven, heat butter over medium-high heat. Add onion, celery and carrot; cook and stir until crisp-tender, 2-3 minutes. Stir in flour until blended; gradually add milk. Bring to a boil; cook and stir until thickened, about 2 minutes. , Add stock, potato, Worcestershire, salt and pepper; return to a boil. Reduce heat; cover and simmer until potato is tender, 10-15 minutes. , Add the shrimp, clams, crab and cream cheese; cook and stir until shrimp turn pink and and cheese is melted, 4-5 minutes. Garnish with parsley.

- Drain juice from clams into a large skillet over the onions, celery, potatoes and carrots. Add water to cover, and cook over medium heat until tender.
- Meanwhile, in a large, heavy saucepan, melt the butter over medium heat. Whisk in flour until smooth. Whisk in cream and stir constantly until thick and smooth. Stir in vegetables and clam juice. Heat through, but do not boil.
- Stir in clams just before serving. If they cook too much they get tough. When clams are heated through, stir in vinegar, and season with salt and pepper.

- Heat the vegan butter in a large soup pot on medium high. Add all the thinly sliced onions and start to saute them. Stirring constantly. Sprinkle with a bit of salt and pepper. Saute until they are translucent, reducing heat as needed. About 5 minutes.
- Now, reduce heat to medium low, and continue to cook until fully caramelized. Stirring every few minutes. It will take about 30-45 minutes to caramelize the onions. You know they are done when they are very brown and could melt in your mouth.
- Once the onions are caramelized, add the garlic, bay leaves, thyme, diced potatoes and white wine(if using). Simmer for about 10 minutes or until the wine is mostly absorbed by the onions and potatoes.
- While the wine cooks, make cashew cream. Drain the raw cashews that you soaked for at least 8 hours in cold water, I like to do it overnight. If you are in a pinch, you can soak them in boiling water for 15-30 minutes. Add the drained cashews to a blender with 1 cup of the vegetable broth, the nutritional yeast, lemon juice and a pinch of salt and pepper. Blend on high until it is completely smooth.

- In a 3-quart Dutch oven or saucepan, add the butter and pancetta and place it over medium heat to render the pancetta. Once some of the fat has been released add the onions, shallots, and celery. Saute until they are just becoming golden. You don't want them to brown too much or the soup will be brown.
- Heat a small saute pan over medium-high heat. Add the butter and once it has stopped bubbling but is not brown, add the oyster crackers and toss the crackers to coat with the butter. Season with salt and pepper. Stir in the parsley and toss the crackers gently in order to coat all the crackers with the parsley. Pour out onto a baking sheet and let cool.
