- Preheat oven to 375°. In a small bowl, combine sugars, flour and spices; set aside. In a large bowl, toss apples with lemon juice. Add sugar mixture; toss to coat. , On a lightly floured surface, roll one half of dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim even with rim. Add filling; dot with butter. Roll remaining dough to a 1/8-in.-thick circle. Place over filling. Trim, seal and flute edge. Cut slits in top. Beat egg white until foamy; brush over crust. Sprinkle with sugar. Cover edge loosely with foil. , Bake 25 minutes. Remove foil; bake until crust is golden brown and filling is bubbly, 20-25 minutes longer. Cool on a wire rack.

YUMMY HOT APPLE PIE DRINK
I am not big on apple cider but I love these...A couple years ago we made these for our Christmas party at work and have loved them ever since....We made them in a huge coffee pot, they went over so well that we have them ever year fall or winter...I do mock ones for the underagers, no alcohol...They are amazing and taste just like an apple pie...

- Put apple cider into big pot or coffee pot.... Heat apple cider, pour a jigger of Tuaca into each cup then fill with hot cider, garnish with cinnamon stick in cup

Steps:
- Use foil on bottom of oven rather than a cookie sheet under pie pan.
- Prepare pastry for single-crust pie.
- Place in pie plate and trim and crimp the edge; refrigerate 30 minute loosely covered with plastic wrap.
- In a large mixing bowl, stir together the sugar, flour, cinnamon, nutmeg, allspice, and salt.
- Add apple slices and gently toss until they are coated well.
- Transfer mixture to pie.
- FOR CRUMB TOPPING: Stir together brown sugar, flour, and oats.
- Using a pastry blender, cut in the butter until topping resembles coarse crumbs.
- Sprinkle over apple mixture in pie.
- To prevent over-browning while baking, cover edge of pie with foil.
- Bake at 375 degrees Fahrenheit for 25 minutes.
- Remove foil and bake 25 to 30 minutes more, or until top is golden.
- Remove from oven.
- Cool on wire rack about an hour and serve!

- In a small bowl, mix water and cornstarch until dissolved. Add egg, cream, sugar, cinnamon and nutmeg. Place apples in a large bowl; pour cream mixture over and stir to coat. Line a 9-in. pie pan with the bottom pastry. Pour apple mixture into crust; dot with butter. Top with remaining pastry; flute edges and cut slits in top. Brush with milk and sprinkle with cinnamon-sugar. Bake at 350° for 55 minutes or until golden brown.
