Yum Woon Sen or bean thread noodles salad is a popular dish in both inside and outside Thailand. I love how the bland noodles absorb the hot spicy sour dressing while the peanuts add the nutty, crunchiness to the salad. Best in the hot summer day

1 large bunch rice noodles
1 cup raw shrimp or 1 cup ground white meat
2 -3 green onions, chopped
1 tomatoes, cut into thin wedges
1/2 a regular cucumber, sliced into thin ribbons
about 1/4 cup very thinly sliced red onion
about 1/4 cup chopped cilantro
about 1/4 cup chopped mint
1 tablespoon roasted peanuts, to sprinkle on top
2 tablespoons fish sauce
2 tablespoons warm water
2 tablespoons lime juice
1 tablespoon brown sugar
1 large garlic clove
2 -3 Thai chiles, crushed

Steps:

  • 1. Make the dressing first, combine all the ingredients in a small bowl. Use warm water to help the sugar dissolve, then put the dressing in the fridge to cool off.
  • 2. Saute the shrimp over medium high heat in a little oil with salt and pepper.
  • 3. Heat a medium-sized pot of water, it should NOT be boiling. Add the glass noodles and allow them to soften, it shouldn't take more than a few minutes. Taste them to make sure they are soft, but not mushy. Then dump their warm water and cool them off with some ice cubes and cold water. You want to stop them from cooking and cool them off for the salad.
  • 4. Let noodles drain really well before you add the dressing.
  • 5. In a large bowl, combine all the ingredients and pour the dressing over it. Toss it well so the dressing gets to all the noodles.
  • 6. Sprinkle the crushed peanuts over the top and Its ready to eat.

  • Prepare noodles: Prepare noodles according to package directions, making sure not to overcook. Drain and rinse under cool water. Use kitchen scissors to cut the noodles apart into roughly 6-inch lengths or transfer to a cutting board and slice (this just makes the salad easier to eat).
  • Make dressing: If you have a mortar and pestle, grind the chilies and garlic into a paste. Add palm sugar and grind until sugar is dissolved. Add lime juice and fish sauce and swirl the pesto around to mix. If you don't have a mortar and pestle you can finely chop the chilis and garlic (be very careful with these super hot chilis - it’s best to use gloves when working with them) and then whisk everything together. Set aside.
  • Bring a pot of water to a boil over medium-high heat. Add shrimp to boiling water and cook, stirring frequently, just until shrimp are opaque and cooked through, 3 to 5 minutes.
  • Use a slotted spoon to transfer warm shrimp to a mixing bowl and immediately toss with shallots until shallots are softened.

  • Soak noodles in room temperature water for 7-10 minutes until soft and pliable. Drain, then cut the noodles with scissors 2-3 times to shorten them.
  • Place dried shrimp in a small heatproof bowl, cover with hot water and let sit for 3-4 minutes to soften. You can also cover the shrimp with room temp water then microwave for 1 minute, then let it sit for a few more minutes. (If you’re using large dried shrimp, they will take longer to soften).
  • Place tomato, onion and Chinese celery into a large mixing bowl. When the dried shrimp are ready, drain and pound them in a mortar and pestle until they are broken into smaller pieces. Alternately you can chop them roughly. Add dried shrimp to the mixing bowl.
  • Cut cilantro stems into small chunks and place in the mortar and pestle along with garlic and chilies; pound into a paste. Add palm sugar and pound until dissolved. Add 2 Tbsp of the fish sauce and lime juice and stir to mix.
