BROILED TOMATOES
An easy recipe for wonderfully flavorful broiled tomatoes with Parmesan cheese. Great as an appetizer, as a side dish, or for breakfast.

Steps:
- Preheat your broiler on high. Position an oven rack 6 inches below the heating element (not directly below).
- Cut the tomatoes in half. Cut a tiny sliver from the bottom of each half, so that the tomatoes can stand upright without wobbling.
- Spray the tomatoes all over with olive oil. Place them on a broiler-safe rimmed baking dish, cut side up.
- Sprinkle the tomatoes with salt, pepper, garlic powder, and thyme. Top with Parmesan, 2 tablespoons for each tomato half.
- Broil until the cheese is golden brown, 3-5 minutes.

BROILED TOMATOES
I had these once when I was in the hospital and been making my version of them ever since. Best part is they are not fattening.

Steps:
- Turn on your broiler. A toaster oven with broiling ability is great or a George Foreman Grill.
- Remove the cores of the tomatoes then cut them in half (horizontally).
- Place cut side up: then rub Olive oil over cut side (use fingertip).
- Sprinkle bread crumbs on next.
- Sprinkle Herb seasonings on and salt/pepper.
- Then place 1/4 teaspoon of unsalted butter on each half.
- Broil until tomato is hot completely.
- ^May add cheese or mushrooms when nearly done, but don't get them to close to burners in oven.

- Place an oven rack 6 inches from the top of the oven, preheat the broiler, and and arrange tomato slices on a foil-lined baking sheet.
- Combine olive oil, basil, oregano, garlic, salt, and pepper in a bowl and brush onto the tops of the tomatoes.
- Combine bread crumbs, mozzarella cheese, and Parmesan cheese in a small bowl and sprinkle the mixture over the tomatoes.
- Place under the broiler until topping starts to brown, 3 to 4 minutes, checking frequently to avoid burning.
- Transfer tomatoes to a plate, drizzle with balsamic vinegar, and serve.

- Preheat oven to 375 degrees.
- Follow package directions to prepare linguine.
- Cook just until al dente, still slightly firm.
- Drain at once, cool under cold running water and put aside to drain thoroughly.
- Place in a mixing bowl.
- Put mushrooms in a small pot.
- Sprinkle with 1 tablespoon of lemon juice; add water and place aluminum foil directly over mushrooms.
- Cover pot with a lid; place on high heat and cook for about 1 minute just until steam begins to escape from pot.
- With a skimmer, transfer mushrooms to a dish.
- Reserve the juices- there will be about 1/4 cup.
- Put flour in a saucepan and stir in a little clam juice to make a smooth paste; stir in remaining clam juice, lemon juice, white wine and reserved mushroom juice; season with coriander, tarragon, black pepper and soy sauce.
- Place over medium heat and bring liquid to a simmer, stirring constantly.
- Cook and stir until mixture thickens, about 3 to 4 minutes.
- Stir in heavy cream, and then parsley and tomato- there will be about 2½ cups.
- Lightly oil a 6-cup au gratin dish.
- Add mushrooms to the pasta, and pour half the sauce over the pasta mixture; mix well.
- Scrape into the au gratin dish and pat linguine into a smooth layer.
- Gently mix remaining sauce with crabmeat and spoon over the linguine.
- Sprinkle bread crumbs over top and bake for 15 minutes or until thoroughly heated through.
- If the top has not browned, slip under the broiler for a brief minute.
- Serve directly from the au gratin dish.
