If you want the perfect sesame chicken recipe this is it! You may want to increase the vinegar or lower the amount of sugar. It all depends on how sweet you want the sauce.

2 tablespoons all-purpose flour
2 tablespoons cornstarch
¼ teaspoon baking soda
¼ teaspoon baking powder
2 tablespoons low-sodium soy sauce
1 tablespoon dry sherry
2 tablespoons water
1 teaspoon vegetable oil
1 dash sesame oil
1 pound skinless, boneless chicken breast meat - cubed
1 cup chicken broth
1 cup white sugar
2 tablespoons distilled white vinegar
2 tablespoons dark soy sauce
2 tablespoons sesame oil
1 teaspoon chile paste
1 clove garlic, minced
¼ cup cornstarch
½ cup water
1 quart olive oil for frying
2 tablespoons toasted sesame seeds

Steps:

  • Sift flour, 2 tablespoons cornstarch, baking soda, and baking powder into a bowl. Pour in low-sodium soy sauce, sherry, 2 tablespoons water, vegetable oil, and a dash of sesame oil; stir until smooth. Stir in chicken until coated with the batter, then cover, and refrigerate for 20 minutes.
  • Meanwhile, bring chicken broth, sugar, vinegar, dark soy sauce, sesame oil, chile paste, and garlic to a boil in a saucepan over high heat. Dissolve 1/4 cup cornstarch into 1/2 cup of water, and stir into boiling sauce. Simmer until the sauce thickens and turns clear, about 2 minutes. Reduce heat to low, and keep sauce warm.
  • Heat olive oil in a deep fryer or large saucepan to a temperature of 375 degrees F (190 degrees C).
  • Drop in the battered chicken pieces, a few at a time, and fry until they turn golden brown and float to the top of the oil, 3 to 4 minutes. Drain on a paper towel lined plate. To serve, place fried chicken pieces onto a serving platter, and pour the hot sauce overtop. Sprinkle with toasted sesame seeds to garnish.

Very tasty yogurt-dipped, breaded chicken breasts. The yogurt makes the chicken VERY moist and the coating nice and crunchy!

4 skinless, boneless chicken breasts
1 (6 ounce) container plain low-fat yogurt
1 lemon, juiced
1 cup dried bread crumbs, seasoned
½ teaspoon garlic powder
salt to taste
¼ cup butter
1 tablespoon chopped fresh parsley

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place yogurt in a small bowl and stir until creamy smooth. Add lemon and stir together. (Note: If you do not stir the yogurt first, the lemon juice will make the yogurt curdle.) In a separate shallow dish or bowl combine the bread crumbs, garlic powder and salt to taste; mix together.
  • In a 9x13 inch baking dish place 1 scant pat of butter or margarine for each chicken breast. Rinse chicken breasts and pat dry. Dip each breast in the lemon/yogurt mixture, then in the bread crumb mixture (coating completely but not heavily).
  • Place coated chicken in the baking dish and top each breast with a full pat of butter or margarine. Sprinkle with chopped parsley and bake in the preheated oven for 1 hour. Let cool for 5 to 10 minutes before serving.

This is the most tender grilled chicken you'll ever have. The live cultures contained in the yogurt break down the proteins and leave it juicy and tender.

2 lbs chicken breasts
1 cup plain yogurt (be sure it contains live cultures!)
1/4 cup olive oil
1/2 teaspoon ground black pepper (more or less)
1/2 teaspoon salt (more or less)
1 teaspoon garlic powder (more or less)
1/2 teaspoon sumaq (optional)

Steps:

  • In a small bowl combine all ingredients except chicken-- adjust seasoning to taste (but don't get it too salty), place in a 1 gal zip-lock bag with the chicken.
  • Toss to coat chicken Marinate for 48 hrs, turning over a couple times each day.
  • Grill chicken on a clean, lightly greased grill over medium heat for 5 min a side, or until done.
  • Remove from heat and let it set in a covered bowl for 5-10 minutes before serving.
  • Can also be done under a broiler on a rack.

  • In a large resealable plastic bag, combine the first six ingredients; add chicken. Seal bag and turn to coat; refrigerate overnight. , Drain and discard marinade. Grill chicken, skin side down, uncovered, over medium heat for 6-8 minutes on each side or until a thermometer reads 170°

  • Mix all the ingredients together and store, covered, in the fridge until ready to use. Can be made a day ahead.
  • Mix the marinade ingredients in a large non-reactive bowl or plastic container. Add the sliced chicken and toss to coat. Marinate chicken for at least an hour and up to 24 hours, covered, in the fridge. I highly recommend an overnight soak for maximum tenderness.
  • In a large shallow bowl combine Panko, sesame seeds and salt. Remove chicken from the fridge and drain the marinade. I recommend pouring the chicken and marinade into a large colander over the sink. Toss chicken around with a large spoon to get the marinade off. It’s fine to leave a light coating of marinade on the chicken. Transfer chicken to a bowl. Place a piece of chicken in the crumb bowl. Toss it in crumbs a few times and press crumbs into it with your fingers. Place coated chicken piece on a plate. Repeat with all the chicken pieces.
  • Preheat oven to 450ºF. Oil a large non-stick rimmed baking sheet. Arrange breaded chicken on the sheet so pieces aren’t touching. Turn pieces so they are lightly coated in oil. Alternatively you can spray the tops lightly with cooking oil. Set rack in the top third of your oven, near the heating element. Bake for 12-14 minutes or until the chicken is golden brown and cooked through.
