APPLESAUCE GRANITA WITH MAPLE YOGURT



Applesauce Granita with Maple Yogurt image

2 cups unsweetened applesauce
1 teaspoon lemon juice
1/2 cup plain regular fat free yogurt (not Greek-style)
1 tablespoon good quality maple syrup
1/2 teaspoon ground cinnamon

Steps:

  • For the Granita: In a shallow 8-inch square pan, stir the applesauce and lemon juice together and spread the mixture evenly in the pan. Place the pan in the freezer for at least 1 hour.
  • For the Sauce: In a bowl, combine the yogurt, maple syrup, and cinnamon. Chill the sauce until ready to serve.
  • Remove the granita from the freezer. With a fork, scrape the surface of the granita to gently fluff it up. Serve immediately, in dessert glasses or dishes, drizzled with yogurt sauce.

RASPBERRY GRANITA

1 cup water
3/4 cup plus 2 tablespoons sugar
3 cups fresh raspberries (about 16 ounces)
1 tablespoon fresh lemon juice
Fresh raspberries

Steps:

  • Combine water and sugar in medium saucepan. Stir over medium heat until sugar dissolves. Bring to boil. Remove from heat. Chill syrup until cold.
  • Meanwhile, mash 3 cups raspberries in medium bowl. Stir in lemon juice. Mix in sugar syrup. Pour mixture through strainer, pressing on solids to extract as much liquid as possible. Pour mixture into shallow baking dish. Freeze until almost firm, stirring frequently, about 2 hours.
  • Continue freezing granita until firm (do not stir), at least 3 hours or overnight. (Granita can be prepared 3 days ahead. Cover and keep frozen.)
  • Using fork, scrape surface of granita to form crystals. Scoop crystals into glasses. Garnish with raspberries.

The best thing about this icy, tart-and-sweet treat might be how little forethought it requires. You can use any flavored yogurt on hand.

1 10-ounce package frozen strawberries, thawed (with their juices), or 1 quart fresh strawberries
2 cups fruit yogurt (we're partial to strawberry or lemon)

Steps:

  • 1 In a large bowl, smash the strawberries into the yogurt, stirring to combine.
  • 2 Pour the mixture into a shallow pan (a metal baking pan works) and place it in the freezer, uncovered, for 1 hour.
  • 3 Remove the pan from the freezer and stir the yogurt well, breaking up any clusters of ice crystals that have formed.
  • 4 Return it to the freezer. Continue stirring every half hour, breaking up new clusters as they form, until the granita is completely frozen but scoopable, about 2 more hours.
  • 5 Scoop and serve, garnished with fresh berries, if desired. (Store any leftovers in the freezer in a covered container or resealable plastic bag.)

¾ cup water
¾ cup white sugar
3 tablespoons grated fresh ginger
2 lemons, zested
2 limes, zested
5 cups orange juice

Steps:

  • Stir water, sugar, ginger, lemon zest, and lime zest together in a saucepan over medium-high heat until sugar dissolves and mixture is bubbling, 5 to 10 minutes; cool slightly.
  • Stir the ginger mixture an orange juice together in a pitcher; pour into a 9x13-inch baking dish.
  • Place dish in the freezer; scrape and stir orange juice mixture with a fork once every hour until granita is evenly frozen and crystallized, about 6 hours.
