It's a real effort to get out of the house these days. Nights are the best. They are cozy and warm with smell of the crisp night...

6-7 yellow squash - peeled and sliced
7 - 8 italian sausage links
3-4 cloves of garlic - chopped
1 red onion - sliced
¼ cup italian parsley - chopped fine
¼ cup fresh basil - chopped
¾ tsp. salt
½ tsp. black pepper
¼ tsp. red pepper flakes
1 tsp. dried oregano
2 cups crushed tomatoes
1½ cups water
1 lb. of your favorite pasta
fresh grated parmesan cheese or romano
olive oil for drizzling
fresh basil garnish
canola oil for sautéing

Steps:

  • 1. Heat a large frying pan and add the sausage links. Cook until golden on the outside and cooked through; set aside. Heat a large frying pan with 2 tablespoons olive oil. Add the squash, onions and garlic and sauté until the garlic is fragrant and the onions soften; add the seasonings. Add the basil and parsley and toss. Add the crushed tomatoes and water and simmer for at least 35 - 40 minutes. Cut the sausage and add to the sauce while it is simmering. Taste the sauce to adjust the seasonings. Prepare the pasta as directed. Plate the pasta and drizzle with olive oil, chopped fresh basil, a dash of red pepper flakes and oregano. Top with the sauce and fresh grated Romano or Parmesan cheese.

3 large shallots, peeled and halved lengthwise
4 ounces Italian sausage, cut into 1-inch pieces
4 ounces andouille sausage, sliced into 1-inch pieces
4 tablespoons grapeseed oil, divided
1 tablespoon garlic powder
½ teaspoon Italian seasoning
½ teaspoon paprika
½ teaspoon ground black pepper
1 medium zucchini, cut into 1/2-inch pieces
1 medium yellow squash, cubed

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Combine potato, bell peppers, shallots, and sausages with 3 tablespoons oil in a large bowl.
  • Mix garlic powder, Italian seasoning, paprika, and pepper together. Stir into the sausage mixture. Transfer the mixture to a roasting pan or 10x18-inch griddle pan.
  • Bake in the preheated oven until vegetables are tender, about 25 minutes.

1 (12 ounce) package rotini pasta
1 pound bulk Italian sausage
1 small onion, chopped
2 cloves garlic, minced
1 red bell peppers, chopped
1 small zucchini, chopped
1 small yellow squash, chopped
1 cup mushrooms, sliced
salt and pepper to taste
1 (14.4 ounce) can diced tomatoes
1 cup tomato sauce
¼ teaspoon dried thyme
¼ teaspoon dried basil
¼ teaspoon dried oregano
1 cup grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook until al dente, 8 to 10 minutes; drain.
  • Brown the sausage, stirring to crumble, in a skillet over medium heat. Remove sausage using a slotted spoon, leaving drippings in the pan. Cook and stir the onion and garlic in the sausage drippings until the onions are softened. Return the sausage to the pan. Stir in the red bell pepper, zucchini, yellow squash, and mushrooms. Whether you're after a night in with your special someone or your sweatpants, this is your pasta: a cozy combination of spicy sausage and squash that's glossed with nutty, sage-spiked butter and Parmesan. It's inspired by the cavatelli with sausage and browned sage butter at Frankies 457 Spuntino in Brooklyn - the most ordered dish on dates, according to the owners, but appealing no matter the occasion, according to us. The key to making the dish sing is the unsexy color (brown). You'll want to get a hard sear on the sausage and the squash, and let the butter bubble until brown and toasty. If you're looking for a vegetarian option, omit the sausage. The meat will be gone, but the comfort won't be.

1 pound cupped or tubed pasta, like orecchiette or penne
1 pound hot Italian sausage links
2 tablespoons extra-virgin olive oil, plus more for the pasta
3/4 pound peeled butternut squash, cut into 1/2-inch cubes (about 2 cups)
Salt and pepper
6 tablespoons unsalted butter
8 sage leaves
1/2 cup grated Parmesan, plus more for garnish

Steps:

  • Bring a large pot of heavily salted water to a boil. Meanwhile, cook the sausage: In a sauté pan or skillet large enough to hold all the pasta, add the sausage and enough cold water to cover. Set over medium-high heat, then remove from the heat when the water hits a boil, about 8 to 10 minutes.
  • Transfer the sausage to a cutting board and cut into 1/2-inch coins. Dry out the pan and return it to the stove.
  • In the same pan, heat the olive oil over high until nearly smoking. Add the sausage and cook, flipping once, until dark brown on both sides, 5 to 7 minutes. Remove the sausage to a paper towel-lined plate, then reduce the heat to medium. Add the squash and a pinch of salt to the pan. Let cook, stirring briefly and scraping up any browned bits on the bottom of the pan, until browned, 5 to 7 minutes.
  • While the squash is browning, add pasta to boiling water, and cook to al dente according to package directions. Reserve 1 cup of the pasta cooking water, and drain the pasta.
  • When the squash is nicely browned, add the butter and sage and cook until the butter is golden, nutty smelling and foaming, just a minute or two, then immediately remove the pan from the heat and add back the sausage.
  • Add the pasta to the pan and mix with the brown-butter sauce (if the pasta has cooled off quite a bit, return the pan to low heat while you combine everything). Stir in the cheese, then add pasta water as needed to smooth the sauce. Adjust with salt and pepper, and serve with extra Parmesan, if you like.

12 oz. Italian sausage (about 3 links), casings removed
1 Tbsp. all-purpose flour
2 cups milk
1 cup heavy cream
1 1/2 cups finely grated Parmesan, divided
1/2 large butternut squash (about 1 lb.), peeled, seeded, chopped into 1/2" pieces
1/2 lb. fusilli
1 garlic clove, finely grated
1 sprig sage
2 1/2 tsp. kosher salt
1/4 tsp. freshly grated nutmeg
Freshly ground black pepper

Steps:

  • Heat oil in a medium heavy pot over medium-high. Cook sausage, breaking up into about 1" pieces with a wooden spoon, until well browned, 5-7 minutes. Add flour and cook, stirring constantly, until evenly distributed, about 1 minute.
  • Combine milk, cream, and 2 cups water in a large bowl or glass measuring cup. Stirring sausage mixture constantly, slowly stream in milk mixture; bring to a simmer. Add 1 1/4 cups Parmesan and cook, stirring constantly, until cheese is melted. Add squash, pasta, garlic, sage, salt, and nutmeg and toss to combine, making sure pasta is covered with liquid. Bring to a boil, then reduce heat to low and bring to a bare simmer. Cook, stirring occasionally, until pasta is cooked through, squash is beginning to break down, and sauce is reduced and glossy, about 20 minutes.
  • Pluck out and discard sage. Transfer pasta to a platter. Top with remaining 1/4 cup Parmesan and a few cranks of pepper.
