Tender squash, gooey cheese and crunchy crackers make this a memorable side dish or a hearty main course. This is a great dish that can be made with low-fat ingredients and is still just as good!

4 cups sliced yellow squash
½ cup chopped onion
35 buttery round crackers, crushed
1 cup shredded Cheddar cheese
2 eggs, beaten
¾ cup milk
¼ cup butter, melted
1 teaspoon salt
ground black pepper to taste
2 tablespoons butter

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place squash and onion in a large skillet over medium heat. Pour in a small amount of water. Cover, and cook until squash is tender, about 5 minutes. Drain well, and place in a large bowl.
  • In a medium bowl, mix together cracker crumbs and cheese. Stir half of the cracker mixture into the cooked squash and onions. In a small bowl, mix together eggs and milk, then add to squash mixture. Stir in 1/4 cup melted butter, and season with salt and pepper. Spread into a 9x13 inch baking dish. Sprinkle with remaining cracker mixture, and dot with 2 tablespoons butter.
  • Bake in preheated oven for 25 minutes, or until lightly browned.

2 lbs squash (hubbard or buttercup works best cooked and mashed after its cooked I pulse squash in food processor,)
2 tablespoons maple syrup
1 onion (chopped)
1 teaspoon oil
1 cup carrot (raw grated)
1 cup sour cream
1 (284 ml) cream of chicken soup or 1 (284 ml) cream of celery soup
8 ounces chicken flavor stuffing mix (stove top)

Steps:

  • Prepare squash, either by peeling and boiling or bake in oven until tender. cool and mash. Yield for cooked squash is about 2 cups of puree.
  • Saute onion and carrot in frying pan with tsp oil.Cool.
  • In small bowl combine cooled onion, carrot, sour cream, maple syrup and soup.
  • Fold in squash. Prepare stuffing according to package directions.
  • Spread half of stuffing in bottom of prepared 8x8 baking dish.
  • Spoon squash mixture on top, sprinkle with remaining stuffing.
  • Bake at 350 for 30 minutes.

3 pounds yellow squash, sliced
1 (10.5 ounce) can condensed cream of mushroom soup
1 (8 ounce) package shredded sharp Cheddar cheese
1 cup mayonnaise
½ cup chopped sweet onions
1 large egg
1 teaspoon salt
½ teaspoon ground black pepper

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a casserole dish with cooking spray.
  • Combine yellow squash, cream of mushroom soup, Cheddar cheese, mayonnaise, onion, egg, salt, and pepper in a bowl. Mix until well combined and transfer to the casserole dish and cover with foil.
  • Bake in the preheated oven until cooked through and bubbly, about 45 minutes.

1 1/2 lbs yellow squash, sliced
2 carrots, grated
1/2 medium onion, chopped
1 (10 3/4 ounce) can reduced-fat cream of chicken soup
1 cup fat free sour cream
1 cup reduced-fat cheddar cheese
30 low-fat Ritz crackers, crushed
1/4 cup light margarine, melted

Steps:

  • Boil squash, carrots and onions in salted water until soft.
  • Drain well.
  • Mash with potatoe masher or blend in food processor.
  • Stir squash mixture and next 3 ingredients together and place in a 2 qt casserole dish.
  • In Seperate bowl combine ritz crackers and margarine and spread over the top of casserole.
  • Bake at 350 until golden brown. ( About 35 minutes).

2 cups yellow squash, cooked
1 cup cracker crumb, crushed
1/2 cup bell pepper, finely chopped
1 tablespoon parsley flakes
1 teaspoon salt
1 teaspoon sugar
1/2 teaspoon pepper
1/4 teaspoon garlic salt
1 egg, beaten
1 cup sweet milk
1/2 cup butter, melted
1/2 cup cheddar cheese, shredded
1/4 teaspoon paprika
1 tablespoon fresh parsley, finely chopped

Steps:

  • Mix all ingredients EXCEPT cheese and paprika.
  • Toss gently until well mixed.
  • Place in greased 1 1/2-quart casserole dish.
  • Bake in 350 degree oven for 30 minutes.
  • Remove from oven and sprinkle cheese on top and sprinkle paprika on top of the cheese.
  • Return to oven and bake another 10 minutes or until cheese is melted and "bubbly".
  • Remove and sprinkle with chopped fresh parsley before serving.
