ROASTED BELL PEPPER SALSA

Sweet, tangy, and delicious roasted salsa. I love to eat this with chops or as a side to Mexican dishes.

1 green bell pepper, seeded and halved
1 red bell pepper, seeded and halved
1 yellow bell pepper, seeded and halved
1 tablespoon canola oil, or as needed
2 Roma (plum) tomatoes, chopped
⅓ cup chopped green onions
¼ cup fresh chopped cilantro
1 jalapeno pepper, minced
2 cloves garlic, minced
1 lime, juiced
½ teaspoon salt

Steps:

  • Set an oven rack about 4 inches from the heat source and preheat the oven's broiler.
  • Place bell peppers on a broiler pan, cut-side-down. Brush with canola oil.
  • Broil in the preheated oven until charred, 5 to 8 minutes.
  • Transfer peppers to a bowl and cover with plastic wrap for 5 minutes. Peel off and discard skin and chop peppers.
  • Combine chopped peppers, Roma tomatoes, green onions, cilantro, jalapeno, garlic, and lime juice in a blender. Puree until smooth. Refrigerate salsa at least 1 hour before serving.

MANGO AND ROASTED YELLOW PEPPER SALSA

Number Of Ingredients 6

1 orange
1 yellow bell pepper
1 mango, peeled, pitted, and cut into 1/4-inch dice (about 1 pound)
1/4 cup finely diced red onion
1/4 teaspoon cumin
Salt and freshly ground black pepper

Steps:

  • Cut ends off orange, and remove peel, pith, and outer membranes, following the curve of the fruit with a paring knife. Cut sections away from membranes, and reserve. Squeeze juice from membranes over sections in a bowl before discarding.
  • Place the yellow pepper over the flame of a gas burner, and roast until lightly charred on all sides. Transfer to a bowl, and cover with plastic wrap until cool enough to handle. Use a paper towel to wipe off the charred skin. Remove the seeds and stem, and chop into 1/4-inch dice.
  • Combine the mango, diced pepper, red onion, and cumin in a medium bowl. Drain orange juice into mango mixture. Chop orange sections; add to mango mixture. Season with salt and pepper; serve.

2 pounds large yellow tomatoes, halved
1 tablespoon olive oil
2 garlic cloves, minced
1 teaspoon chopped shallot
3/4 teaspoon salt, divided
3 medium limes
2 teaspoons coarse sugar
12 fresh mint leaves
1/4 cup chopped Cubanelle or banana peppers

Steps:

  • Grill tomatoes, uncovered, on an oiled rack over high heat or broil 3-4 in. from the heat until skin is slightly charred, 3-4 minutes on each side. Cool to room temperature. Meanwhile, combine oil, garlic, shallot and 1/4 teaspoon salt. When tomatoes are cool enough to handle, finely chop; stir in garlic mixture until well combined., Finely grate zest of each lime; set aside. Peel limes and discard white membranes; section limes. In a food processor, pulse lime sections, sugar, mint and remaining 1/2 teaspoon salt until finely chopped. Combine with tomatoes; add peppers and lime zest. Mix well., Refrigerate at least 1 hour. 5 tablespoons extra-virgin olive oil
1 medium onion, peeled and chopped
1 clove garlic, minced
1 large sweet red pepper, cored, seeded and chopped
1 large sweet yellow pepper, cored, seeded and chopped
1/2 hot chili pepper, minced
1 large ripe tomato or 4 ripe plum tomatoes, chopped fine
1 tablespoon finely minced sun-dried tomatoes
1 teaspoon sherry vinegar
2 scallions, chopped fine
2 tablespoons chopped fresh coriander
Salt and freshly ground pepper to taste

Steps:

  • Heat four tablespoons of the oil in a large skillet. Add the onion and saute until transluscent. Stir in the garlic, red pepper, yellow pepper and chili pepper and saute until the peppers are tender.
  • Stir in the tomato and sun-dried tomatoes and cook until the sauce has thickened, about 10 minutes.
  • Add the vinegar, scallions, coriander and remaining tablespoon of the oil. Season to taste with salt and pepper and serve.

BELL PEPPER SALSA

Not having a recipe for salsa (and having peppers that needed to be used), this was my 'making it up as i go' attempt that turned out well. Using a blender makes this super quick and easy to throw together. With the habanero I used, the salsa came out with a bit of a bite! This of course can change depending on your peppers, but if you'd like it tamer, I'm sure a jalapeno could be used instead. The flavour of the garlic is pronounced, so adjust to suit your tastes. The tequila isn't needed, but I like what it adds to the salsa. Goes well with cornmeal pancakes.

3 bell peppers, chopped and divided (can use red, orange and or yellow)
1/3 onion, chopped and divided
1 habanero pepper, stem removed
3 roma tomatoes (I used canned)
3 garlic cloves
2 tablespoons lime juice
1 tablespoon olive oil
1 fluid ounce tequila (optional)
1 pinch dried basil
1 pinch sea salt (or to taste)
1 dash fresh ground black pepper

Steps:

  • Set aside half the chopped onion and two thirds to three quarters of the chopped bell peppers.
  • Put remaining onion and pepper into your blender or food processor. Add all other ingredients and blend until smooth.
  • Mix your reserved onion and pepper into the puree.
  • Salsa!

1 lb yellow tomatoes
1 shallot, very finely chopped
1 garlic clove, very finely chopped
2 tablespoons cilantro, finely minced
1 tablespoon champagne or 1 tablespoon white wine vinegar
2 serrano chili peppers, seeded and finely chopped
2 tablespoons lime juice, fresh
salt
1 tablespoon maple syrup (use only if tomatoes aren't sweet enough)

Steps:

  • Pulse the tomatoes in a food processor until well chopped. DO NOT PUREE.
  • Transfer the tomatoes and their juices to a mixing bowl and stir in shallot, garlic, cilantro, vinegar, chilies, lime juice, and salt. Mix well. Taste. If needed, add maple syrup to balance the flavor and sweeten slightly.
  • Cover and refrigerate for at least 2 hours or until very cold. This may be refrigerated for up to 8 hours before serving. Seasonings may need to be adjusted to taste.
