XI'AN FAMOUS FOODS CHINESE INSPIRED SMASHED CUCUMBER SALAD
Xi'an's Famous Foods Chinese Smashed Cucumber Salad is one of my favorite dishes in the whole world. It's crisp, bright, spicy and full of flavor -- basically the perfect easy side dish of all time! Disclaimer: I have no idea if this is how they make it but I've tried to recreate it for years and this is the closest I've ever gotten!

Steps:
- Trim the ends off of the cucumbers then take the flat side of your knife and place it sideways on top of one cucumber. Using your hand, carefully smash them like you would a clove of garlic. Repeat for all cucumbers.
- Using your hands, tear the smashed cucumbers into pieces and place in a small bowl so there's not a lot of excess room for them to float around.
- Fill the bowl half way with rice wine vinegar so that half of the cucumbers are submerged. Then fill the rest of the bowl with water. Give it a stir and let it rest for 30 minutes.
- After 30 minutes, drain the liquid from the cucumbers then add the black vinegar, sesame oil, sugar and the crispy chili oil on top. **I recommend starting with 1 tbsp of the chili oil and then adding another after tasting because depending on the brand, sometimes it's super spicy and sometimes it's not.**
- Now stir everything together and let them rest for at 5 minutes before serving. Enjoy!

For dense hand-pulled noodles, you're going to want the sauce to be saltier and spicier, balancing out the thick wheat noodles with extra aromatics for depth of flavor.

Steps:
- In a saucepan, combine all of the ingredients with ¼ cup (60 ml) water and mix to combine. Bring to a boil over high heat.
- Once boiling, turn the heat down to a low boil and cook for 2 minutes. Then turn off the heat, cover the pot, and let sit for 10 minutes.
- Strain the sauce and use immediately, or let cool and store in an airtight container, refrigerated, for up to 3 days.

- Yangrou Paomo Lamb And Pita Soup 羊肉泡馍. You really have to try this one. There are two ways to get your paomo. You can either get a fresh pita bread unbroken, and break it into your empty bowl, then hand it back to the chef, which he will then add into the wok and cook for you, or, you can get it pre-broken up.
- Xiaochao Paomo spicy lamb and pita soup 小炒泡馍. Apart from the Yangrou paomo, there is another dish, the xiaochao paomo (小炒泡馍), a very similar but spicier version, that is also worth ordering.
- Hula Tang Peppery Beef Ball Soup 胡辣汤. The hulatang is a classic Hui street food found on a lot of corners in the Hui district of Xi’an. The first time I tried it, I was surprised by how numbing the flavour was.
- Delicious Lamb and Beef Kebabs 羊肉串. Eating BBQ lamb kebabs on the streets of Xi’an late at night is one of the most satisfying and enjoyable things you can do in the city.
