Steps:
- Place chocolate chips, evaporated milk, and coconut oil in a medium-sized, microwave-safe bowl.
- Microwave on high for approximately 1 1/2 minutes (the exact timing can vary slightly depending on the power and wattage of your microwave).
- Stir until completely smooth and well-incorporated. (Do not microwave again; just use the heat from the chocolate to continue to melt the other chips.)
- Once the chocolate mixture is smooth, stir in any optional mix-ins that you'd like.
- Pour mixture into an ungreased 8x8" pan (or an 11x7" pan for thinner fudge that's easier to cut into shapes with cookie cutters). Smooth the top and tap or gently shake pan to level the mixture.
- Refrigerate until solid.

SUGAR FREE FIVE MINUTE MICROWAVE FUDGE
Steps:
- Prepare a pan.
- I used a 3x7 silicon bread pan and sprayed it very lightly with oil for the fudge in the main pictures. I've also used a small 5x8 glass pan lined with plastic wrap and that works well too, just won't be as thick.
- Place the chocolate chips, cream and milk together in a bowl (I used a 4 cup glass measuring cup) and microwave for 1 minute and check to see if the chips are melted just enough to whisk together easily.
- Mine is ready in 1 minute but oven times may vary). If not put back in for another 15-30 seconds...don't overcook.
- Whisk these together and add in the powdered sweetener and flavorings.
- Stir in the nuts, pour into the prepared pan sprinkle remaining nuts on top if desired and chill well.

- Line 8" x 8" pan with foil.
- Sift sugar and cocoa into a heatproof bowl. Add milk and butter. Do not stir.
- Microwave on high for 2 1/2 minutes or until butter is melted. Add vanilla. Stir to blend.
- Turn into pan and smooth the top. Put in freezer 10 minutes to set.

- Grease and line a 20cm square baking tin with baking parchment. Put the sugar, condensed milk and butter in a large heatproof bowl (the mixture will bubble up as it cooks to roughly double its size), add a good pinch of salt and stir together.
- Heat the mixture in the microwave on High for 10 mins, stirring every 2-3 mins. Keep an eye on the mixture, as it will bubble up and may go over the sides of the bowl.
- Add the vanilla and liqueur to the mixture, whisk together and heat on High for another 2 mins. The mixture should be caramel-coloured and thickened. Scrape into the tin and set aside for 45 mins to 1 hr until cool and firm before cutting. Pack into a box and eat within 3 weeks.
