DEVILED MEATLOAF

1-1/2 pounds ground beef
2 slices bread torn into small pieces
salt
ground black pepper
2 beaten eggs
3 tablespoons chopped onion
1 clove garlic chopped
3 tablespoons chopped celery
1 tablespoon chopped green pepper
¼ cup Worcestershire sauce
½ cup milk
1 8oz can tomato sauce
2 tablespoons brown sugar
1 tablespoons cider vinegar
¼ cupwhite sugar
1 tablespoon dry mustard

Steps:

  • Preheat oven to 350 degrees F In a large bowl, combine the bread crumbs, milk, Worcestershire sauce, Salt, ground black pepper, eggs, chopped onion and 1/2 of the of tomato sauce. Mix together well until all ingredients are combined. Add ground beef and mix thoroughly. This looks unattractive but it must be mixed thoroughly. Meanwhile, in the pan where the meatloaf will be baked, combine the remaining tomato sauce, brown sugar, vinegar, white sugar and mustard. Combine thoroughly.

This is a recipe from an old church cookbook of my mother's from Okoee, Florida during the time my grandfather was a minister there.

2 lbs round steaks, cut into serving pieces
1/2 cup flour
salt and pepper
1 cup sliced onion
1 tablespoon mustard powder
2 tablespoons cooking oil
1 (10 3/4 ounce) can condensed tomato soup
1 tablespoon brown sugar
2 tablespoons Worcestershire sauce

Steps:

  • Preheat oven to 325.
  • In a large shallow bowl, combine flour, salt, pepper, and mustard powder.
  • Dredge round steak in this mixture.
  • Heat oil in large skillet over medium-high heat. Brown steak on both sides.
  • Remove and place in a shallow baking dish.
  • Add remaining ingredients to skillet, stirring well to pick up the bits on the bottom of the pan.
  • Pour over the steak.
  • Cover with tin foil and bake for 2 hours.
