This is out of the July/August 2008 Weight Watchers magazine. Sounds great and planning to make it during a RV trip. Says to use 3/4 inch thick steaks. Boneless top sirloin steaks, also are known as New York strip steaks, they are lean yet super tender.

3 teaspoons brown sugar
2 teaspoons chili powder
1 teaspoon ground cumin
1/2 teaspoon black pepper
1/4 teaspoon salt
1/2 small onion, finely chopped
1/2 cup ketchup
1/4 cup water
2 tablespoons steak sauce
2 teaspoons Worcestershire sauce
4 (5 ounce) boneless beef top sirloin steaks, trimmed

Steps:

  • Combine 2 tsp of the brown sugar, the chili powder, cumin, pepper, and salt in a small bowl.
  • Spray a small saucepan with nonstick spray and heat over medium-low.
  • Add the onion and cook, stirring frequently, until softened, about 4 minutes.
  • Add 1 tbls of the spice mixture, the remaining 1 tsp of brown sugar, the ketchup, water, steak sauce, and Worcestershire sauce; bring to a boil.
  • Reduce the heat and cook, covered, stirring occasionally, until the flavors are blended, 10 minutes.
  • Set aside and keep warm.
  • Spray the grill rack with nonstick spray and heat the grill to medium high or prepare a medium-hot fire.
  • Rub the steaks with the remaining spice mixture.
  • Place on the grill rack and grill until an instant read-thermometer inserted into the side of each steak registers 130 degrees, 3-4 minutes on each side.
  • Transfer to a platter, cover loosely with foil, and let stand 5 minutes (until the temperature increases to 135 degrees for medium rare).
  • Serve with the sauce.

3/4 lb whole wheat penne or 3/4 lb whole wheat ziti
8 cups fresh broccoli florets
1 tablespoon olive oil
1 small onion, finely chopped
2 tablespoons all-purpose flour
1 teaspoon dry mustard
1 2/3 cups skim milk
1/2 teaspoon salt
1 cup shredded fat-free cheddar cheese

Steps:

  • Preheat oven to 350°F Spray a 9 x 13 baking dish with nonstick spray.
  • Bring a large pot of water to a boil. Add the pasta and cook 5 minutes. Add the broccoli and cook, stirring occasionally, until the pasta and broccoli are tender, 3-4 minutes. Drain; return the broccoli and pasta to the pot.
  • While the pasta and broccoli are cooking, heat the oil in a large saucepan over medium heat. Add the onion and cook, stirring occasionally, until tender, about 5 minutes. Add the flour and mustard; cook, stirring constantly, about 1 minute. Gradually whisk in the milk and salt. Increase the heat and cook, whisking constantly, until the sauce boils and thickens, 3-4 minutes.
  • Add the sauce to the pasta and broccoli. Stir to combine. Transfer to the prepared baking dish and sprinkle evenly with the cheese. Bake until bubbling,about 25 minutes.

1 lb 33% reduced-sodium ham (1 slice, about 1/2 inch thick)
1 tablespoon lemon juice
2 teaspoons brown sugar
1 teaspoon Dijon mustard
1/8 teaspoon ground ginger
1/2 cup pineapple juice
1 teaspoon cornstarch

Steps:

  • Trim fat from ham.
  • Lightly score ham slice in a diamond pattern using a sharp knife.
  • Place in an 11 x 7 inch baking dish.
  • Combine next 4 ingredients in a bowl, stirring well with a whisk; spread mixture over ham.
  • Cover with heavy-duty plastic wrap and vent.
  • Microwave at HIGH 4 minutes or until thoroughly heated.
  • Remove ham from dish, and cut into 4 equal pieces; set aside, and keep warm.
  • Combine pineapple juice and cornstarch in a 1-cup glass measure; stir well.
  • Micowave at HIGH 1 1/2 minutes or until thick and bubbly; stir well.
  • Serve pineapple sauce with ham.

This is from a new WW cookbook - MIx It & Match It and I just love it on ANYTHING - but especially chicken. This recipe uses drumsticks but I like chicken tenderloinds grilled & tossed in teh sauce and put on top of a large salad. Wings are really good too - which arent really WW friendly - so DH takes them to poker night! Hope you like it - scales VERY well 2 Drumsticks is 4 WW Points

3 tablespoons apple cider vinegar
2 tablespoons molasses

8 skinless chicken drumsticks
1/2 teaspoon salt

Steps:

  • Combine Chili sauce, vinegar, molasses, chili powder, chipotle, and garlic in a small saucepan, bring to a boil.

  • Grill chicken to taste and baste on sauce towards the end.
