1 cup butter or 1 cup margarine, melted
1/4 cup Worcestershire sauce
2 tablespoons fresh ground pepper
2 tablespoons lemon juice
1 teaspoon salt
1 teaspoon hot sauce
2 cloves garlic, minced
2 1/2 lbs unpeeled medium raw shrimp
1 lemon, thinly sliced

Steps:

  • Combine first 7 ingredients.
  • Layer shrimp and lemon slices in a 13x9 inch baking dish.
  • Top with sauce.
  • Bake at 400 degrees for 20 minutes or until shrimp turn pink, stirring once.
  • Remove shrimp, reserving sauce.
  • Serve shrimp with reserved sauce and French bread.

½ cup olive oil
2 tablespoons Cajun seasoning
2 tablespoons lemon juice
2 tablespoons chopped fresh parsley
1 tablespoon honey
1 tablespoon soy sauce
1 pinch cayenne pepper
1 pound uncooked shrimp, peeled and deveined
cooking spray

Steps:

  • Whisk olive oil, Cajun seasoning, lemon juice, parsley, honey, soy sauce, and cayenne pepper together in a large glass or ceramic bowl. Add shrimp and toss to evenly coat. Cover the bowl with plastic wrap and marinate in the refrigerator for 1 hour.
  • Preheat the oven to 450 degrees F (230 degrees C). Spray a baking dish with cooking spray.
  • Transfer shrimp into the prepared baking dish and pour any remaining marinade over top.
  • Bake in the preheated oven until shrimp are bright pink on the outside and the meat is opaque, about 10 minutes.

These shrimp are really zippy! They're pretty quick and easy, too. You can control the heat by reducing the chili sauce. When I make this for my little girl, I eliminate all but 1 tablespoon of the chili sauce and it's still great! She loves this dish and I'll bet you will, too! It serves 6 as an appetizer but only 2-3 as a main dish.

1 egg
1 tablespoon Dijon mustard
1 tablespoon minced garlic (or more)
1/4 cup chili sauce
1 lemon, juice of
salt and pepper
granulated garlic powder
1 cup olive oil
2 tablespoons olive oil
18 large shrimp, cleaned and deveined
1/2 cup grated parmesan cheese
paprika
1 tablespoon finely chopped parsley (or 1 tsp dried)

Steps:

  • Preheat oven to 400.
  • In the food processor with the metal blade, combine the egg, mustard, garlic, chili sauce and lemon juice. Process until smooth. Season with a little salt and pepper.
  • With machine running, add 1 cup of olive oil in a steady stream. Process until mixture is thick.
  • Heat remaining oil in skillet over medium- high heat. Season shrimp with salt, pepper and granulated garlic powder. Add shrimp to hot oil and sear for about 1 minute on each side.
  • Place 3 shrimp on each of 6 scallop shells (or place all the shrimp in a casserole dish). Spoon a heaping tablespoon of the chili/oil mixture over the shrimp in each shell (or spoon over shrimp in casserole) and sprinkle with parmesan cheese, a tiny bit of paprika and parsley.
  • Place shells on cookie sheet (casserole doesn't need one). Bake until the top is golden brown and bubbly, around 1 to 2 minutes for the shells and 3 to 4 minutes for the casserole. Sometimes this takes a little longer- just watch them and pull them out whern they brown. Don't over-cook them or your shrimp will be rubbery (YUCK!).

When I saw this recipe in WW Magazine, I HAD to try it. I LOVE lemon squares and have been looking for a lighter version. At first bite, I thought these were okay....but now I've had 3 and really have to put them away or I'll eat the whole pan. They do have that gooey consistency of a lemon bar! I guess I'd like them to be thicker and in that case would make them in a smaller pan...but then the portions would be smaller - it's all a trade. As written, the recipe is 3 pts per square. However, I used Land O Lakes light butter (oxymoron!) which brought it down to 2 pts per square.

1 1/3 cups flour
5 tablespoons packed light brown sugar
8 tablespoons unsalted butter, cold, cut into 1/2-inch pieces
4 large eggs
1/2 teaspoon vanilla extract
1 1/2 cups powdered sugar, divided
3/4 cup lemon juice

Steps:

  • Preheat oven to 350*.
  • Make crust: mix flour and brown sugar using a food processor until fully incorporated. Toss butter into flour mixture and pulse to combine until butter is cut into tiny pea-sized pieces and dough appears lumpy. Pack gently into ungreased 13 x 9 x 2" pan (I lined mine w/foil to simplify cutting). Bake 20 minutes until golden.
  • Meanwhile: Make lemon topping. Beat eggs in medium bowl w/electric mixer (I just did everything in the food processor for easy cleanup). Add vanilla extract and 3/4 c powdered sugar. Mix well. Add lemon juice and remaining powdered sugar until sugar is completely dissolved.
  • As soon as crust is finished, remove from oven and reduce temperature to 300*. Immediately pour lemon mixture over hot crust. Bake completely, about 30 minutes Cool and cut into 24 bars.
  • NOTE: Instructions emphasize that the crust MUST be hot when you pour the lemon mixture over. Not sure why, but they made a special note, so I'm passing that along.

2 tablespoons fresh lemon juice
4 teaspoons olive oil

Steps:

  • Preheat oven to 400 degrees.
  • Coat 4 individual gratin dishes with cooking spray.
  • Divide shrimp among dishes; set aside.
  • Combine breadcrumbs and next 4 ingredients; stir in juice and oil.
  • Sprinkle breadcrumb mixture over shrimp.
  • Place dishes on a baking sheet.
  • Bake at 400 degrees for 13 minutes or until shrimp are done and breadcrumbs are lightly browned.
