Steps:
- Sprinkle chicken with salt, pepper, and poultry seasoning, inside and out.
- Place chicken on a rack and roast for 50 minutes at 375 degrees.
- Meanwhile, prepare the sauce.
- In saucepan, bring orange juice, broth mix, and parsley to a boil.
- Lower heat and simmer for 30 minutes, stirring occasionally.
- Add orange rind and cook 10 minutes longer or until rind is tender.
- Transfer chicken to serving platter.
- Remove skin, cut into serving pieces.
- Add grapes to sauce, stir well to combine.
- Pour over chicken and serve at once.
CHICKEN WITH GREEN GRAPES
This is my take on Chicken Veronique. Made this the other day and it turned out so good. Thought I would post it. Hope you like it.

Steps:
- Mix flour with salt, pepper and paprika.
- Coat chicken with seasoned flour.
- Melt butter with oil in a large pan.
- Add diced onion.
- Brown chicken in butter and oil on medium heat. About 4-5 minutes on each side.
- Lower heat a little.
- Add mushrooms. Cook with chicken for about 3 minutes.
- Pout in one cup chicken broth.
- Add one teaspoon dried thyme.
- Add salt and pepper to taste.
- Reduce heat to simmer. Stir occasionally.
- Add Wondra flour.Stir.
- Add grapes.
- Cook until chicken is done and sauce thickens a bit. Enjoy.
- NOTE: Can add 1 chopped garlic clove if desired.

POULET AU VERJUS - CHICKEN WITH VERJUS
This can be eaten all year, because you can bottle the juice of green grapes! If you want your ingredients fresh, this is a dish you make in August or September in the northern hemisphere, just before the green grapes ripen to sweetness. The unripe grapes are often rejects from the ripe grapes selected for wine making. Use 1 whole chicken, cut in pieces, or use breasts, legs, and/or thighs. (Make a verjus quantity from at least 3 bunches of unripe green grapes. Make plenty, and conserve it! recipe#240375 is made from grapes. Verjuice can be made from a variety of nearly ripe fruits.)

Steps:
- First, make verjus:.
- Pull the grapes away from their stems, then press them, extracting as much of the juice as possible. Filter this juice through muslin, a jelly bag, or use coffee filter paper. Bottle this and sterilize it, or freeze some in ice cube trays. Or use it up within the next few days.
- Brown the chicken cut in pieces for a good ten minutes.
- Add the chopped garlic and cook briefly.
- Pour in a large glass of verjus, and some chicken stock made with 1/2 cube 1/2 cup of hot water.
- Add the chopped parsley.
- Cook over low heat for 20 minutes, partially covered until towards the end, when you take the cover off.
- Use more verjus, if you want. It is a pleasant, fruity taste with a tart, vinegary quality.
- Serve with mashed potatoes or Sarlat Potatoes, recipe#209855, fresh green beans, or other summer fare.

- Sprinkle chicken with salt and nutmeg. In a large non-stick skillet, cook chicken in butter over medium heat for 3-5 minutes on each side or until lightly browned., In a small bowl, combine the wine, marmalade and tarragon. Add to skillet; bring to a boil. Reduce heat; cover and simmer for 4-6 minutes on each side or until a thermometer reads 170°. Remove chicken and keep warm., Combine flour and cream until smooth. Gradually stir into skillet. Bring to a boil; cook 2 minutes longer or until thickened. Stir in grapes; heat through. Serve with chicken.

CHICKEN VERONIQUE
A quick and easy, low fat, low calorie chicken dish: chicken sautéed with garlic and mushrooms and served in a classic French wine sauce. Adapted from Rodale's "Terrific Chicken: 100 Great Meals in Minutes".

Steps:
- Heat the oil in a large pan (preferably non-stick) over a medium-high heat.
- Add the chicken breast halves and sauté for about 3 minutes.
- Turn the chicken breast halves over, add the garlic and mushrooms and sauté for another 3 minutes, or until the garlic and mushrooms soften and the chicken is golden brown.
- Remove the chicken breast halves, garlic and mushrooms from the pan, keep warm, and pour off the excess oil.
- Add the sugar and half of the wine to the pan, stirring to dissolve the sugar.
- Add the remaining wine and simmer until the wine is reduced by half.
- Mix the stock and cornstarch in a small bowl, whisk into the wine mixture and simmer for 2 minutes.
- Return the chicken to the sauce.
- Add the grapes and simmer for a further 2 minutes, or until the juices run clear.
- Serve over rice or noodles with your favourite side dish.
