1 pound(s) Uncooked boneless skinless chicken breast(s)
4 medium Uncooked scallion(s) chopped
3 tbsp(s) Fresh lemon juice (juice of 1 lemon)
0.125 tsp(s) Curry powder pinch
3 tbsp(s) Diet Italian salad dressing (2 calories per tbs) fat-free
0.5 medium Avocado peeled and diced
3 small Fresh tomato(es) plum, diced
7 large Olive(s) jumbo pitted,chopped

Steps:

  • Preheat oven to 400ºF. Coat a baking dish with cooking spray.
  • Combine seasoning and flour. Lightly coat chicken with cooking spray, then coat each breast with flour mixture. Place chicken in prepared dish and bake until cooked through, about 20 minutes.
  • In a bowl, combine scallions, lemon juice, curry powder, dressing, avocado, tomatoes and olives.
  • Divide chicken breasts between four plates and top with avocado salsa.

Steps:

  • 1. Rub Creole seasoning evenly over chicken.. 2. Heat oil in a large nonstick skillet over medium-high heat. Add chicken; cook 2 minutes. Turn chicken over: Stir in okra, thyme, and tomatoes. Bring to a boil; cover, reduce heat, and simmer 10 minutes. Uncover and cook 2 minutes or until liquid is reduced by half. Serving size: about 2 chicken thighs and 1/2 cup tomato mixture. 3 lbs chicken parts, skinned
1/2 cup water, plus
1 tablespoon water, divided
1/3 cup apple juice (no sugar added)
2 tablespoons reduced sodium soy sauce
2 tablespoons sliced green onions
1 tablespoon ketchup
1 tablespoon dark brown sugar
2 garlic cloves, minced
1 dash red pepper
1 teaspoon cornstarch
2 teaspoons sesame seeds, toasted

Steps:

  • To toast sesame seeds, bake at 350F for 10 minutes.
  • Spray a 5 quart saucepan or dutch oven with nonstick spray.
  • Set over medium heat.
  • Add chicken parts and cook, turning when necessary, until chicken is browned on all sides, 4-6 minutes.
  • Transfer chicken to a platter and set aside.
  • In 2-cup measure or small mixing bowl, combine 1/2 cup water with the juice, soy sauce, scallion, ketchup, sugar, garlic, and red pepper. Mix well.
  • Pour into pot and cook over medium heat for 1-2 minutes, stirring constantly to scrape up any browned particles from bottom of pan.
  • Reduce heat to low and return chicken to pot.
  • Cover and cook until chicken is tender, 20-25 minutes.
  • Transfer chicken to platter and keep warm, reserving liquid in pot.
  • Dissolve cornstarch in remaining tablespoon water and add liquid to pot.
  • Cook, stirring frequently, until sauce is thickened, 3-4 minutes.
  • Pour sauce evenly over chicken and sprinle with toasted sesame seeds.

1 (3 1/2 lb) roasting chickens
1 lemon, quartered
1 1/2 lbs large red potatoes, cut into wedges
8 kalamata olives, pitted
fresh thyme sprig, to garnish

Steps:

  • Preheat oven to 400*F.
  • Spray roasting rack with nonstick spray.
  • Spray nonstick baking sheet with nonstick spray.
  • Combine chopped thyme, oregano, oil, garlic, and salt in small bowl.
  • Gently loosen skin from breast of chicken.
  • Spread the herbs evenly under the skin.
  • Place lemon inside cavity.
