½ cup white sugar
¼ cup rum
¼ cup butter
2 plantains, peeled and sliced
1 pinch ground cinnamon, or to taste

Steps:

  • Cook and stir almonds in a skillet over medium-high heat until golden and toasted, 2 to 4 minutes.
  • Stir sugar, rum, and butter together in a microwave-safe bowl. Cover the bowl with a lid or plastic wrap and microwave until hot, stirring once, 2 to 3 minutes.
  • Place plantain slices in rum sauce, sprinkle with cinnamon, cover the bowl, and microwave until plantains are hot and tender, 1 to 2 minutes more. Top with toasted almonds.

butter, for greasing pan
3 large plantains (fully black and soft are best)
1/4 cup granulated sugar
2 Tbsp dark brown sugar
1/2 tsp ground cinnamon
2 Tbsp dark rum
2 Tbsp orange juice
2 Tbsp unsalted butter, cut into small pieces
OPTIONAL TOPPINGS
scoops of coconut ice cream (garnish with shredded coconut)
scoops of vanilla ice cream
dollops of whipped cream

Steps:

  • 1. Heat the oven to 375°F. Generously butter bottom and sides of an 8×8-inch baking dish; set aside.
  • 2. Peel plantains and trim 1/4 inch off both ends. Slice plantains at an angle to make 1/2-inch oval slices. Layer the plantain slices in the bottom of the baking dish, slightly overlapping slices. (You should get 4 to 5 rows, depending on width of the plantains.)
  • 3. Mix together the sugar, brown sugar and cinnamon, and sprinkle it evenly over the top of the layers. Then drizzle the rum and orange juice over the layers. Distribute the butter pieces evenly on top.
  • 4. Bake for 30 to 40 minutes or until the plantains are golden brown and beginning to lose their shape. Cool at least 10 minutes, then serve warm or completely cooled. It's great as is, but you can also top each serving with a scoop of vanilla ice cream, for an added touch of sweetness.

4 ounces peeled plantains
2 tablespoons dark rum
1 tablespoon lemon juice
2 tablespoons margarine, melted
1 teaspoon firmly packed light brown sugar
1/4 teaspoon cinnamon

Steps:

  • Preheat oven to 425°F.
  • Cut plantain in half crosswise, then slice each half lengthwise into thin slices.
  • Spray 10-inch flameproof pie pan with nonstick spray.
  • Arrange plantain in a single layer in pan.
  • Set aside.
  • In small bowl, combine 1/4 cup water and the remaining ingredients.
  • Stir to combine.
  • Pour evenly over plantain slices.
  • Cover and bake until plantain slices are fork-tender, about 15 minutes.
  • Turn oven to broil. Remove cover and broil until plantain is slightly browned, 1-2 minutes.
  • 4 points per serving (serves 2).

2 ripe plantains ((yellow with brown spots // see post above for tips on choosing plantains!))
1 Tbsp melted coconut oil ((or avocado oil))
1 healthy pinch sea salt ((optional))
Magic Green Sauce

Steps:

  • Preheat the oven to 425 F (218 C) and line a large baking sheet with parchment paper.
  • To cut the plantains, trim and discard the ends. Then use the tip of your knife to make a shallow cut lengthwise through the peel, doing your best not to pierce the flesh of the plantain. Remove the peel and slice the plantain on an angle into 1/4-inch slices.
  • Place the sliced plantains on the prepared baking sheet and toss with oil and salt (optional).
  • Bake for 10 minutes, then flip and bake for another 5-10 minutes or until golden brown and slightly caramelized on both sides.

2 cups dark rum
3/4 cup dark brown sugar
Pinch salt
2 tablespoons unsalted butter, cut into small pieces
6 very ripe plantains (should be almost black), peeled and sliced on the bias into 1/2-inch thick slices
1/4 cup canola oil

Steps:

  • Heat grill to high. Place rum, brown sugar, and salt in a small saucepan and cook until the sugar has melted and the mixture reduces and thickens slightly. Stir in butter until melted. Remove from the heat.
  • Brush plantains with oil on both sides and grill until golden brown and caramelized, about 3 to 4 minutes per side. Brush with the glaze during the last few minutes of grilling. Remove from the grill and brush with more of the glaze before serving.

4 extremely ripe plantains, peeled and sliced lengthwise
8 tablespoons butter
3/4 cup packed brown sugar
2 teaspoons ground cinnamon
1/4-1/2 cup dark bacardi rum
1/4 cup chopped and toasted macadamia nuts (optional)

Steps:

  • Preheat oven to 350ºF.
  • Melt the butter in a medium saucepan.
  • Add the brown sugar and continue cooking, stirring occasionally until the sugar is dissolved and the sauce starts to thicken somewhat.
  • Add the cinnamon and the rum and remove from heat.
  • Place the plantains in a covered baking dish.
  • Pour the sauce on the plantains.
  • Cover and bake 20 to 25 minutes.
  • Add the macadamia nuts now, if using.
  • Turn the plantains over, baste with the sauce in the dish, and continue baking uncovered for about 15 minutes.
  • This will allow the plantains to brown slightly.
  • Wonderful eaten alone, on ice cream or with pound cake or angel food cake.

Steps:

  • Heat oven to 350°F. Cut tip off each end of plantains. Cut lengthwise slit through peel on one side of each plantain. Rub plantains with oil. Arrange plantains, cut sides up, in ungreased rectangular baking dish, 13x9x2 inches.
  • Bake uncovered about 35 minutes or until tender when pierced with fork. Make 1 or 2 lengthwise cuts through peel; remove peel. Serve plantains with butter and salt.

1 tablespoon ground ginger
1 teaspoon ground red pepper
1 tablespoon garlic powder

cooking spray or coconut oil

Steps:

  • Select very yellow ripe plantains, some black spots should be visible. Cut Ends off plantains and peel remaining shin off. It should peel almost like a banana. Slice diagonally in a slanted cut pattern about 1 inch or a little thicker. Sprinkle generous amounts of ginger, garlic and red pepper if you like some spice. Lightly sprinkle with salt. Arrange on baking sheet and bake in preheated oven at 450 degrees. Turn plantains occasionally until both sides have a nice golden top about 15 minutes. Remove from oven and serve.
  • you can also use fresh ginger 1 tablespoon, 4 cloves garlic and 1 small habenero pepper and a dash salt prepared in food processor with tablespoon olive oil. Let plantains marinate in mixture for hour than arrange on cookie sheet and bake or fry in oil until golden brown.
