2 tablespoons low-fat milk (1%)
4 teaspoons sugar
1 teaspoon vanilla
1 medium banana, cut in quarters
1 cup plain low-fat yogurt
8 slices bananas, 1/4 inch

Steps:

  • Place milk, sugar, vanilla, and banana in blender.
  • Process 15 seconds at high speed until smooth.
  • Pour mixture into a small bowl; fold in yogurt.
  • Chill.
  • Spoon into 4 dessert dishes; garnish each with 2 banana slices just before serving.

3/4 lb ripe banana, peeled and sliced
2 tablespoons dark rum
1 teaspoon lemon juice
1/2 cup thawed fat-free whipped topping

Steps:

  • In medium bowl, combine banana slices, rum, and lemon juice. Let marinade 1 hour.
  • Transfer to food processor or blender and process until pureed.
  • Transfer to medium bowl, fold in whipped cream.
  • Serve immediately or cover with plastic wrap and freeze.
  • 2 points per serving (1/4 cup).

2/3 cup sugar
1/3 cup butter, softened
2 large eggs
2 ripe bananas, mashed (about 1 cup)
1/2 cup fat-free buttermilk
3/4 teaspoon vanilla extract
1 1/2 cups all-purpose flour
3/4 cup toasted wheat germ
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon salt

Steps:

  • Preheat oven to 350. Spray a 4 x 8 1/2 inch nonstick loaf pan with nonstick spray.
  • With a wooden spoon, beat the sugar, and butter in a large bowl until creamy. Add the eggs, bananas, buttermilk, and vanilla; beat until combined. Combine the flour wheat germ, baking powder, baking soda, cinnamon, and salt in another bowl. Add the flour mixture to the banana mixture; stir just until blended.
  • Scrape the batter into the pan. Bake until a toothpick inserted in the center comes out clean, 45-55 minutes. Cool in the pan on a rack 10 minutes, remove from the pan and cool completely on the rack.

1 1/4 cups all-purpose flour
3/4 cup whole grain wheat flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon table salt
2 large bananas
1 cup pumpkin
1/2 cup unsweetened applesauce
1/4 cup vegetable oil
2 large eggs
2 teaspoons vanilla extract
2 teaspoons pumpkin pie spice
4 ounces splenda artificial sweetener

Steps:

  • Preheat oven to 325*F (160*C).
  • In a bowl combine the flour, baking soda, baking powder and salt. Set aside.
  • In a bowl whisk together the pumpkin puree, banana, oil, sugar, eggs and vanilla.
  • Add the flour mixture and stir the batter until it is just combined.
  • Transfer to a greased 9 x 5 x 3-inch loaf pan and bake in the middle of the oven for 1 hour, or until a wooden pick inserted in the center comes out clean.
  • Let the bread cool in the pan for 10 minutes on rack before removing.
  • Cool completely on rack.
  • Store tightly wrapped.
