Wood Family's Seafoam Salad Aka

A very yummy side dish that the whole family will enjoy. This has become a staple at our family's Thanksgiving, Christmas and Easter dinners. It's a good thing that it makes a lot! My daughter always asks, "Are we having Green Stuff?" I received this recipe from my mother-in-law when I married into the family. She is a wonderful cook! My recipe calls for ingredients that are a little more healthy, as I follow Weight Watchers so feel free to substitute the "real" things. ENJOY!

Number Of Ingredients 6

29 ounces pears in light syrup, bartlett pears
8 ounces fat free cream cheese, softened
12 ounces Cool Whip Lite
2 (1/3 ounce) boxes sugar-free lime Jell-O gelatin
2 tablespoons nonfat milk
2 -3 maraschino cherries, cut in half for decoration

Steps:

  • Drain the pears.
  • Put the pear juice in a measuring cup and add enough water to make 2 cups of liquid.
  • Make the Jello using the 2 cups of the liquid.
  • When the Jello is dissolved, place in the refrigerator until almost set.
  • Mash the pears.
  • Mash the softened cream cheese adding the milk as you mash and blend this mixture until smooth.
  • Add the pears to the cream cheese mixture.
  • Put the cream cheese mixture and the Jello in the mixing bowl and blend together.
  • Fold in the Cool Whip and mix all together well.
  • Pour your Seafoam Salad into a pretty glass bowl.
  • Put the halved cherries on the top for decoration.
  • Chill well and serve.

Green Stuff (Lime Jello, Cream Cheese, Pineapple, Cool Whip) image

This recipe has been in our family forever. It can be made in many different variations. Cottage cheese instead of or in addition to cream cheese. Crushed pears or mandarin oranges in place of pineapple. The amount of ingredients seem to not matter much because I often forget how much jello or cream cheese, etc to use but it always tastes great. The only word of caution is NEVER use fresh pineapple in jello because it will not gel.

1 cup hot water
1 cup ice cube (optional)
1 (5 ounce) package Jello gelatin
1 (8 ounce) container Cool Whip
1 (10 ounce) can crushed pineapple, drained
1 (8 ounce) cream cheese, softened

Steps:

  • Dissolve jello in hot water. If in a hurry add ice cubes to set a litte faster.
  • Mix cream cheese and pineapple in large bowl.
  • Add jello.
  • Beat until blended.
  • Add Cool Whip or any whipped topping and beat for 2 minutes or well blended.
  • Pour into large glass pan or bowl and chill at least four hours. I've been known to use the freezer when in a hurry and it works out fine.
  • Enjoy!

MODIFIED GREEN STUFF - JELLO SALAD

This is based on Recipe #340422 340422. However, I didn't have a banana or Cool Whip, so it came out differently. I made it for Thanksgiving 2013 while DH is on a Zero Fat diet. I should have left out the coconut. Cooking time is minimum chilling time.

1 cup boiling water
1 (6 ounce) package sugar-free lime gelatin
1/2 lb miniature marshmallow
1 (6 ounce) can crushed pineapple, drained
1/2 cup shredded coconut (optional)
1 (6 ounce) carton nonfat cottage cheese

Steps:

  • Pour boiling water over gelatin & marshmallows. Stir until marshmellows are mostly melted. Add crushed pineapple.
  • Chill until partially congealed. Fold in cottage cheese. Feel free to mix it a couple of times to get the consistency you want. Mine had a tendency for the solution to separate, so I beat it pretty well at the end with a wooden spoon.

2 (15 ounce) cans pear halves in natural juice, reserve juice
1 (3 ounce) package lime Jell-O gelatin
1 (8 ounce) package cream cheese, softened
2 tablespoons milk
1 (8 ounce) container Cool Whip, thawed

Steps:

  • In a saucepan, heat 1 cup reserved pear juice to boiling.
  • In a small bowl add lime jello; pour pear juice over jello; stir until dissolved; set aside.
  • In a large bowl, beat cream cheese with milk until smooth; blend in jello mixture.
  • Chill in refrigerator until partially thickened, about 20-30 minutes.
  • In a small bowl, mash pears until smooth.
  • Fold pears and Cool Whip into jello mixture.
  • Pour into a mold.
  • Chill until set, about 2-3 hours.
  • Dip mold in warm water for approx 5 minutes.
  • Invert onto serving platter.
