Cream Cheese Coconut Flour Chaffle Recipe image

This is an awesome keto replacement for classic white bread, great for making sandwiches or topped with your favorite jams.

Number Of Ingredients 8

4 oz cream cheese (softened)
4 large eggs
4 tbsp coconut flour
1 tsp baking powder
1 tbsp melted butter
2 tsp vanilla ((optional, only if making sweet chaffle))
1 tbsp keto sugar alternative ((optional, only if making sweet chaffle))
1 tbsp sugar-free cocoa powder ((optional, to make chocolate waffle))

Steps:

  • Preheat waffle iron according to instructions
  • Combine eggs, cream cheese, and melted butter well, using a whisk or personal blender
  • Add all other ingredients to mixture and combine well
  • Add half of this batter to heated waffle iron, if using full-size iron. Use a smaller amount if using a mini waffle maker
  • To remaining batter, add the optional ingredients to make sweet waffle. You can skip this step and continue to make savory waffles.

This bread is most like the soft white bread that you buy at the store. If you like a softer crust, butter the top and put in a zip-loc bag.

2 1/2 teaspoons active dry yeast
1/4 cup warm water (110 degrees F)
1 tablespoon white sugar
4 cups all-purpose flour
1/4 cup instant potato flakes
1/4 cup powdered milk
2 teaspoons salt
1/4 cup white sugar
2 tablespoons butter or 2 tablespoons margarine
1 cup warm water

Steps:

  • Whisk together the yeast, 1/4 cup warm water and sugar.
  • Allow to sit for 15 minutes.
  • Add ingredients in the order suggested by your manufacturer, including the yeast mixture.
  • Select the basic and light crust setting.
  • A white bread recipe without a strong yeast flavor.
  • Proofing the yeast first eliminates some of the yeast taste from the final product.
  • Makes 2 lb loaf.
