SLOW-COOKER CHIPOTLE PORK ROAST

- Spray 5- to 6-quart slow cooker with cooking spray. In large bowl, mix chili powder, salt, garlic powder and cumin. Add potatoes, sweet potatoes and onion to bowl; stir to coat. Place vegetables in slow cooker.
- Remove netting from pork. Rub oil over pork; roll in spices in bowl to cover. Place pork over vegetables. Pour tomato sauce, tomatoes and chopped chile over pork and vegetables.
- Cover; cook on Low heat setting 6 to 8 hours.
- Remove pork and vegetables from cooker; cover to keep warm. Pour sauce from cooker into 3-quart saucepan. In small bowl, mix water and cornstarch; stir into sauce. Cook over high heat 5 to 10 minutes, stirring frequently, until thickened. Serve sauce with pork and vegetables.

ROAST PORK LOIN WITH GRAPEFRUIT

- In a roasting pan toss the onions and the garlic with the oil, add the pork loin, and season it with salt and pepper. Rub the coriander seeds over the pork and roast the pork in the middle of a preheated 350°F. oven for 1 to 1 1/4 hours, or until a meat thermometer registers 155°F. to 160°F.
- While the pork is roasting, remove 3 or 4 long strips of zest from 1 of the grapefruit with a vegetable peeler, scrape off as much of the white pith from the zest as possible, and cut enough of the zest into fine julienne strips to measure 1/4 cup. Cut away the zest, pith, and membranes from all 3 grapefruit with a serrated knife and, working over a bowl to catch the juice, cut the flesh into sections, reserving the juice. Transfer the sections to a sieve and let them drain.
- In a small heavy saucepan combine 3 tablespoons of the sugar, the zest strips, and 1/2 cup of the reserved juice, reserving the remaining juice for another use. Bring the mixture to a boil, stirring until the sugar is dissolved, and boil it until it is thickened and turns a light caramel.
- Transfer the pork to a cutting board and let it stand, covered loosely with foil, for 10 minutes. While the pork is standing, deglaze the roasting pan with the wine, boiling the mixture and scraping up the brown bits, until the wine is reduced almost completely and add the broth. Pour the deglazing mixture through a fine sieve into the pan containing zest mixture, pressing hard on the solids, and bring the gravy to a boil, stirring. Add the beurre manié, a little at a time, whisking until the gravy is smooth, simmer the gravy, whisking occasionally, for 2 minutes, and whisk in any juices that have accumulated on the cutting board. Season the gravy with salt and pepper and keep it warm.
- Arrange the grapefruit sections in a shallow baking pan or gratin dish just large enough to hold them in one layer, sprinkle them with the remaining 1 1/2 tablespoons sugar, and broil them under a preheated broiler about 2 to 3 inches from the heat for 3 to 5 minutes, or until they are just golden. Discard the string from the pork, cut the pork into 1/2-inch-thick slices, and serve it with the gravy and the grapefruit sections.
ROAST PORK WITH CHIPOTLE-GLAZED APPLES
I did my best to pattern this recipe after a delicious dish that I had at a hotel in Puerto Vallarta, Mexico. The chef was very secretive but the waiter was more than willing to whisper a lot of tips in my ear! (It was he that got the big tip!) I always brine pork (all cuts) before I prepare it but that is a personal choice. If you want to brine, there is a good basic brine recipe on this site. If you brine, start this recipe 2 days before serving. The process to brine and marinade only takes a few minutes each, so this is not as time consumming as it may seem. Remember to rinse the pork well after taking it out of the brine.

- Brine pork. Rinse. (optional).
- MARINADE:.
- Mix first 4 ingredients and 1/2 cup of brown sugar in a small bowl.
- Rub spice mixture over pork.
- Place in large glass baking dish, cover, refrigerate overnight.
- Pre-heat oven to 375 degrees. Transfer roast to roasting pan. Reserve juices in the glass dish.
- Roast the pork until the internal temp reaches 155 degrees; about 1 hour and 45 minutes. Baste with pan juices every 30 minutes. Don't overcook.
- Let pork rest at least 10 minutes before slicing.
- Meanwhile: Make the CHIPOTLE-GLAZED APPLES.
- Line baking sheet with waxed paper.
- Mix sugar and cinnamon in med. bowl.
- Mix 1/4 apple slices with cinnamon-sugar mixture to coat.
- Heat 1 T. oil with 1 T. chipotle chilies in a heavy skillet over med-high heat.
- Add coated apple slices.
- Cook until coating caramelizes and apple slices are heated through, turning often, about 4 minutes.
- Transfer to baking sheet and repeat with remaining apples using 1 T. oil and 1 T. chipotles in remaining batches.
- Keep warm until serving time.
- Now for the PORT JUS:.
- Combine Port, shallots and remaining 1 T. brown sugar in a heavy saucepan.
- Boil until syrupy, about 25 minutes.
- Add both stocks and thyme.
- Boil until reduced to 1 1/4 cups, about 30- 45 minutes.
- Strain sauce in fine-mesh strainer.
- Return to saucepan.
- Mix any pan drippings from the pork roast into the sauce (don't scrape the bottom of the roasting pan).
- Add butter, whisk until melted.
- Season with salt and pepper.
- SERVING THE PLATE:.
- Cut pork into 1/4" slices.
- Divide among 6 plates.
- Spoon Chipotle-Apples alongside the pork.
- Spoon sauce over and around pork slices.

- Up to two days before (and at least 2 hrs ahead), mix together 75g ketchup with 2 tbsp chipotle, 2 tbsp honey and the vinegar. Rub all over the pork and leave in a food bag (or bowl) in the fridge to marinate, turning occasionally.
- Heat oven to 160C/140C fan/gas 3. Lift the pork into a snug-fitting roasting tin and baste with any excess marinade, plus 100ml water. Cover with foil, ensuring the pork is sealed in but the foil isn't touching it, and bake for 4 hrs.
- Turn up the oven to 200C/180C fan/gas 6 (or cool and chill the pork, if making ahead). Remove the foil and put the pork back in for 30 mins until crisp and sticky on the outside.
- Lift the pork from the tin and use two forks to shred the meat. Mix together the extra 1 tbsp ketchup with the remaining chipotle and honey, and stir it through the shredded meat with some seasoning before serving.
