FRIED WONTONS
Fried wontons are a easy-to-make crispy, crunchy, delicious appetizer. Your guests will be talking about these fried wontons long after the party's over!

Steps:
- Start by making the filling. Simply combine the ground pork, chopped scallions, sesame oil, soy sauce, wine (or sherry), sugar, oil, water, and white pepper in a bowl. Whip everything together by hand for 5 minutes or in a food processor for 1 minute. You want the pork to look a bit like a paste.
- To make the wontons, take a wrapper, and add about a teaspoon of filling. Overstuffed wontons will pop open during the cooking process and make a mess. Use your finger to coat the edges with a little water (this helps the two sides seal together).
- For shape #1:
- Fold the wrapper in half into a rectangle, and press the two sides together so you get a firm seal. Hold the bottom two corners of the little rectangle you just made, and bring the two corners together, pressing firmly to seal. (Use a little water to make sure it sticks.)
- Shape #2:
- Fold the wonton in half so you have a triangle shape. Bring together the two outer corners, and press to seal (you can use a little water to make sure it sticks).
- Keep assembling until all the filling is gone (this recipe should make between 40 and 50 wontons). Place the wontons on a baking sheet or plate lined with parchment paper to prevent sticking.
- At this point, you can cover the wontons with plastic wrap, put the baking sheet/plate into the freezer, and transfer them to Ziploc bags once they're frozen. They'll keep for a couple months in the freezer and be ready for the fryer whenever you're ready.
- To conserve oil, use a small pot to fry the wontons. Fill it with 2 to 3 inches of oil, making sure the pot is deep enough so the oil does not overflow when adding the wontons. Heat the oil to 350 degrees, and fry in small batches, turning the wontons occasionally until they are golden brown.
- If you have a small spider strainer or slotted spoon, you can use it to keep the wontons submerged when frying. This method will give you the most uniform golden brown look without the fuss of turning them. Remove the fried wontons to a sheet pan lined with paper towels or a metal cooling rack to drain.
- To make one or all of the sauces, simply mix the respective ingredients in a small bowl, and you're ready to eat!

WON TON DIPPING SAUCE
Great sauce for dipping wonton or spring rolls. I like to use sesame seed oil instead of vegetable oil.

Steps:
- Combine onion, peppers and garlic in food processor and chop to a medium-fine consistency. Heat oil in skillet on low heat and add the vegetables from the food processor.
- Stir, continuing to cook on low heat until the oil takes on the color of the peppers.
- In a bowl, pour the vinegar, soy sauce and brown sugar and stir to dissolve the sugar.
- Taste the mixture, adjust to taste.
- Mix, then add the mixture from the skillet.
- Serve warm or at room temperature with freshly steamed or fried won tons.

CRISPY WONTONS WITH ASIAN DIPPING SAUCE

- Heat oven to 425°F.
- Mix first 4 ingredients until blended.
- Spoon 1 Tbsp. meat mixture onto center of each wonton wrapper. Bring corners together over meat mixture, then twist to enclose filling. Place on rimmed baking sheet sprayed with cooking spray; press gently to flatten bottoms slightly. Brush evenly with 3 Tbsp. water; sprinkle with sesame seed.
- Bake 10 to 12 min. or until golden brown. Remove from pan; drain on paper towels.
- Mix soy sauce, rice wine and remaining water until blended; serve with wontons.

WON TON SNACKS @ ASIAN SPICE DIPPING SAUCE
Pork & vegetable filled won ton cups with a spicey Thai peanut sauce . This came from Allrecipes.com. I made it for 2 Christmas parties and took along two Asian dipping sauces. They were liked by all.

- In food processor, finely chop the celery, carrot, garlic, onion and water chestnuts. They should be fairly small but not liquid.
- In large skilletr , combine ground pork and chopped vegetales. Cook until vegetables soft and the pork no longer pink. Cook until moisture evaporates, then stir in Thai peanut sauce and cook 5 minutes.
- Preheat over 350 degrees. Press wonton wrapper into each cup of mini muffin pans, with edges flaring out to side. Place one scoop of the meat mixture into each cup.
- Bake 12 minutes until outer edges of wrapper crisp and golden brown. I did not have the round won ton wrapper so used egg roll wrappers cut into 1/4's. Also, I made some in regular sized muffin pans with no problem.
- Asian dipping sauce.
- 1/2 cup orange juice.
- 3 tablespoons sugar.
- 3 Tablespoons soy sauce.
- 2 tablespoons lime juice.
- 1 tablespoon oil.
- 1 tablespoon balsamic vinegar.
- 1 teaspoon chili pepper flakes.
- 1 teaspoon salt.
- Mix all together.
