WINTER VEGETABLE SOUP WITH COCONUT MILK AND PEAR image

Number Of Ingredients 16

3 tablespoons unsalted butter
1 1/2 cups thinly sliced onion
1 cup medium diced carrot
1 cup medium diced parsnip
1 cup medium diced turnip
1 cup medium diced parsley root
1/2 cup finely chopped inner celery stalks with leaves
1 cup thinly sliced Savoy cabbage
1 tablespoon peeled, minced fresh ginger
1 teaspoon fresh thyme leaves
1 medium garlic clove, finely chopped
Kosher salt and freshly ground black pepper
13-14 ounce can coconut
2 cups lower salt chicken broth
3 1/2 cups 1/2 inch diced butternut squash
2 medium firm ripe Bosc pears, peeled, cored and cut into 1/2 inch pieces.

Steps:

  • 1. Melt the butter in a Dutch oven over medium. Stir in the onion, carrot, parsnip, turnip, parsley or celery root, and celery and cook, stirring until the vegetables begin to soften, about 8 minutes. 2. Stir in the cabbage, ginger, thyme, garlic, 3/4 teaspoon salt and 1/4 teaspoon pepper and cook, stirring occasionally until the cabbage begins to soften, about 3 minutes. 3. Scoop 1/4 cup of coconut cream from the top of the can and set aside. Add the remaining coconut milk, broth, and the squash and pears to the vegetables. Bring the mixture just to a boil over medium, stirring to scrape up any browned bits. 4. Reduce the heat to low, cover and cook at a bare simmer, stirring until the squash is very soft, 20 minutes. 5. Puree in batches in a blender. If the soup is too thick, add more chicken broth until thinned. Season to taste. 6. Ladle the soup into bowls, drizzle with the reserved coconut cream, sprinkle with the chopped thyme.

Adapted from the Fine Cooking Website. This soup uses canned coconut milk instead of cream. I have used Lite Coconut milk to cut back on the calories. You can also use other vegetables as long as you end up with the approximate measurements here. I have used sweet potatoes and acorn squash and left out the turnip, parsnip and celery root. This is very versatile and very good.

3 tablespoons unsalted butter
1 1/2 cups onions, thinly sliced
1 cup carrot, medium-diced
1 cup parsnip, medium-diced
1 cup turnip, medium-diced
1 cup parsley roots or 1 cup celery root, medium-diced
1/2 cup celery, finely chopped (inner stalks with leaves)
1 cup savoy cabbage, thinly sliced
1 tablespoon fresh ginger, peeled and minced
1 teaspoon fresh thyme leave (more leaves lightly chopped for garnish)
1 medium garlic clove, finely chopped
kosher salt
fresh ground black pepper
coconut milk (do not shake)
2 cups low sodium chicken broth (more as needed)
3 1/2 cups butternut squash, 1/2-inch-diced (from a 2-lb. squash)
1 1/4 cups bosc pears, peeled, cored, and cut into 1/2-inch pieces (2 medium firm-ripe pears)

Steps:

  • Melt the butter in a 5- to 6-quart Dutch oven over medium heat. Stir in the onion, carrot, parsnip, turnip, parsley or celery root, and celery and cook, stirring occasionally, until the vegetables begin to soften, about 8 minutes. Stir in the cabbage, ginger, thyme, garlic, 3/4 teaspoons salt, and 1/4 teaspoons pepper and cook, stirring occasionally, until the cabbage begins to soften, about 3 minutes.
  • Scoop 1/4 cup of coconut cream from the top of the can and set it aside in a small bowl at room temperature. Add the remaining coconut milk, broth, and the squash and pears to the vegetables. Bring the mixture just to a boil over medium heat, stirring to scrape up any browned bits. Reduce the heat to low, cover, and cook at a bare simmer, stirring occasionally, until the squash is very soft, 20 minutes.
  • Purée with an immersion blender in the Dutch oven or in batches in a regular blender. Pour the soup through a large coarse strainer set over a large glass measure or bowl. If the soup is too thick, add more chicken broth until thinned to your liking. Season to taste with salt and pepper.
  • If necessary, reheat the soup in a clean pot. Ladle the soup into bowls, drizzle with the reserved coconut cream, and sprinkle with the lightly chopped thyme.

This recipe is adapted from epicurious.com. It's full of flavor and is one of my favorite soups! I usually double it and freeze it for lunches.

1 1/2 tablespoons olive oil
1 cup coarsely chopped onion
1 cup coarsely chopped parsnip (or turnip)
1 cup peeled cored and chopped apple (I usually use gala)
1 cup peeled chopped butternut squash
1 cup coarsely chopped carrot
1 cup peeled coarsely chopped sweet potato
4 1/2 cups vegetable stock
3 finely chopped garlic cloves (or to taste)
black pepper, to taste

Steps:

  • Heat oil in a large saucepan on med-high heat.
  • Sauté onion until translucent.
  • Add garlic, apple, parsnip, squash, carrot and sweet potato. Sauté for approximately 5 minutes.
  • Add vegetable stock and bring to a boil.
  • Reduce heat and simmer for approx 30 minutes, (or until vegetables are tender) Stirring occasionally.
  • Let cool slightly, puree and enjoy!

1 teaspoon cumin
1 teaspoon curry
1 teaspoon rosemary
1 teaspoon pepper
1 teaspoon sage
4 -6 garlic cloves, minced
1 large leek, chopped
4 cups vegetable stock
1 cup water
1 medium rutabaga
1 cup split red lentils or 1 cup split yellow lentils
2 medium sweet potatoes, peeled and diced
2 medium carrots, peeled and sliced
1 medium parsnip, peeled and sliced
1/4 cup coconut milk (or regular milk)
2 teaspoons cilantro or 2 teaspoons parsley, finely chopped

Steps:

  • In large stockpot, melt butter.
  • Stir in cumin, curry, rosemary, pepper, and sage.
  • Add garlic and leek.
  • Cook on low heat, 2-5 minutes or until leek is tender.
  • Add stock, water, rutabaga, and lentils.
  • Bring to a boil, slowly.
  • Reduce heat and simmer 10 minutes, covered.
  • Add potatoes, carrots, and parsnips.
  • Simmer, covered, for 25-40 minutes or until vegetables are tender.
  • Remove from heat; allow to cool slightly, until all bubbling has stopped.
  • Mash with a potato masher until consistency is partly chunky.
  • Stir in coconut milk (if using) and cilantro or parsley.
  • Return to heat briefly to re-warm and serve.

Vegetable Soup With Coconut Milk image

A nice heartwarming soup for winter. Just a little different:) This serves 8 @ 1.5 points each for those on W W. I have listed points values beside each ingredient.

2 potatoes (2)
500 g pumpkin (0 I like to use butternut pumpkin)
4 carrots
4 parsnips
3 onions
2 teaspoons salt
1 garlic clove
1 tablespoon curry powder
1 (440 ml) can coconut milk (8)

Steps:

  • Chop all the vegetables roughly and place in a large saucepan.
  • Add enough water to just cover the vegetables and add the salt and garlic.
  • Bring to a boil then reduce to a simmer and cook for about 45minutes until the vegetables are soft.
  • Keep topping up the water to JUST cover the vegetables if necessary.
  • Stir in the curry powder and mix well.
  • Remove from heat and puree the mixture. I use a stick blender. Do Not Tip Out The Water!
  • Stir in the coconut milk and reheat gently.
  • Enjoy!
