WINTER SALAD WITH CITRUS VINAIGRETTE
This hearty Winter Salad is tossed with a light citrus vinaigrette and loaded with bacon, cranberries, red onion, toasted pecans and crumbled feta cheese!

- Place all of the salad ingredients in a large bowl. Set aside.
- Place all of the dressing ingredients in a mason jar, seal the lid, and shake until completely combined. Drizzle over the salad, toss, and serve immediately.

Steps:
- Place the shallots in a small shallow bowl and pour the vinegar over them. Set aside for 10 minutes to macerate.
- In a large shallow serving bowl, combine the radicchio, endive, arugula, oranges, and olives. Lift the shallots from the vinegar with a slotted spoon, sprinkle them on the salad, and toss lightly (discard the vinegar).
- In a 1-cup glass measuring cup, whisk together the lemon juice, mustard, 1 teaspoon salt, and 1/2 teaspoon pepper. While whisking, slowly add the olive oil. Pour enough of the vinaigrette over the salad to moisten well. Sprinkle with one more teaspoon salt, toss well, and taste for seasonings. Serve at room temperature.
WINTER CITRUS SALAD WITH HONEY DRESSING
This citrus salad requires only that you overcome the notion that salads must be green; it's a novel and wonderful antidote to sorry-looking lettuce. If you're lucky and can find blood oranges, use them; same with the odd, supremely delicious and usually quite pricey pomelos.

- Peel citrus, removing as much pith as possible, and slice into wheels. Remove any pits, layer fruit on a serving dish, sprinkle with salt and garnish with chopped onion.
- Whisk together olive oil, vinegar, honey, lime juice and tarragon until well combined; taste, adjust seasoning as needed and drizzle over salad.

- Place spinach on a large serving platter or divide among individual salad plates. Cut oranges sections into bite-size pieces. Arrange onion, cranberries and Pecan Croutons over spinach or mixed greens. Drizzle dressing over spinach mixture.
- Pecan Croutons: Lightly coat a 10-inch skillet with nonstick cooking spray; add sugar. Heat over medium-high heat until sugar begins to melt, shaking skillet occasionally to heat sugar evenly. Reduce heat to low and cook until sugar is nearly all melted. Add pecan halves and cook over low heat for 2 to 3 minutes more or until browned and glazed, stirring constantly. Watch carefully to avoid overbrowning nuts. Spread on a piece of foil coated with cooking spray or wax paper, separating nuts. Sprinkle just a pinch of sea salt over pecans. Cool to room temperature.
