Steps:
- Grate tomatoes into a bowl using a box grater; discard tomato skins.
- Heat vegetable oil in a heavy skillet over medium-high heat and cook onion until translucent, stirring often, about 5 minutes. Stir garlic into onion and cook until fragrant, about 1 minute.
- Stir rice into onion mixture and cook, stirring often, until rice is lightly toasted, about 3 more minutes. Stir grated tomato, chicken broth, and tomato sauce into the rice. Bring mixture to a boil.
- Mix in jalapeno pepper, cilantro, and salt; reduce heat to low. Cover skillet and simmer until rice has absorbed the liquid, about 15 minutes. Do not lift the cover while the rice is cooking.
- Turn off heat and let rice stand covered for 8 minutes. Fluff with a fork before transferring rice to a serving dish.

Steps:
- 1. Coat the bottom of a 10" skillet with vegetable oil. Cook rice on medium heat until golden brown. Stir rice often. Keep a close eye on the rice to avoid burning.
- 2. Add garlic, onion, salt and tomato mixture to the rice and mix well. After the onion becomes transparent add water and let it come to a boil. Simmer with the lid on for about 15 minutes or until the water has evaporated. Taste your rice to be sure it is fully cooked, before serving.
SPANISH ARROZ CON POLLO RECIPE (SPANISH CHICKEN AND RICE RECIPE)
Steps:
- Begin by sprinkling chicken pieces with salt and pepper. Then brown them in a large skillet in the oil.
- Once chicken pieces are browned, remove them from the skillet and place them on paper towels to drain.
- Meanwhile, cook onions, peppers, garlic, and rice in the oil until oil is absorbed and the rice is coated.
- After that, stir in the broth, cumin, saffron, and tomatoes.
- Arrange chicken pieces on top of the rice and bring to a boil.
- When liquids are boiling, lower the heat, and cover the pan.
- Simmer for about 40 minutes or until chicken is cooked and rice is tender.
- Garnish with olives to serve.

ARROZ BLANCO (MEXICAN WHITE RICE)
When most people think of Mexican rice, they think of the typical tomato-flavored rice. When I've been in Mexico, however, I've been served this type of white rice often. This recipe is authentic Mexican and comes from Rick Bayless.

Steps:
- In small saucepan or microwave oven, heat broth or water until steaming.
- Stir in about 3/4 teaspoon salt if using salted broth, 1 1/2 teaspoons if using unsalted broth or water.
- Cover and keep warm.
- In medium (3-quart) saucepan with a tight-fitting lid, heat the oil over medium heat.
- When hot, add raw rice and onion and stir regularly until grains have turned from translucent to milky-white, 4-5 minutes.
- Add garlic and stir for a few seconds, until fragrant. Do not let grains brown.
- Add the warm liquid and lime juice, stir thoroughly, scraping down any grains that are clinging to the side of the pan.
- Cover and cook over the lowest heat for 15 minutes--temperature should be low enough that only the slightest hint of steam escapes lid.
- Remove pan from heat and let stand covered for 5 minutes.
- Uncover and test a grain of rice: if still a little hard, re-cover pan and set over low heat for about 5 min.; if rice has absorbed all liquid and is completely dry, sprinkle on 2 tablespoons water before returning to heat.
- When rice is done, sprinkle on parsley and gently fluff with fork to release steam and stop the cooking.

- Roughly chop 1/2 onion, thinly slice 4 cloves of garlic, cut 1/2 red & 1/2 green bell pepper into thin strips that are 2 inches (5.08 cm) long, cut 1/2 zucchini into rounds that are 1/4 inch (.635 cm) thick and then into half shapped moons, cut the ends of 15 fresh green beans and then in half, roughly chop 1 tomato and reserve 1 cup of fresh broccoli
- Heat a large fry pan with a medium-high heat and add in 1/3 cup extra virgin olive oil, after 1 minute add in all the cut vegetables, mix with the olive oil, after 8 minutes and the onion & zucchini are translucent and the rest of the veggies are tender, add in 1 tsp sweet smoked paprika, 1/4 tsp saffron threads and season generously with sea salt & black pepper, mix together until well combined, then add in 1 cup round rice and 1 1/2 tbsp freshly chopped thyme, mix together once again, then add in 3 cups vegetable broth and 1/4 cup frozen peas, give it one last mix and simmer on a medium-high heat
- After about 10 minutes and you can see a lot of the broth has been incorporated into the rice, lower the fire to a low-medium heat and simmer for another 3 to 5 minutes or until all the broth has been incorporated into the rice, then remove the pan from the heat, cover with a dishcloth and let it rest for a couple minutes, remove the dishcloth and serve at once, enjoy!
