Steps:
- Cook pancetta, onions, celery, and carrots in oil in a wide 7-to 9-quart heavy pot over medium heat, stirring occasionally, while preparing chard.
- Cut out stems from chard and chop stems, reserving leaves. Stir chard stems into pancetta mixture with garlic, 1 teaspoon salt, and 3/4 teaspoon pepper and continue cooking, stirring occasionally, until vegetables are very tender and begin to stick to bottom of pot, about 45 minutes total. (Set aside chard leaves.)
- Push vegetables to one side of pot. Add tomato paste to cleared area and cook, stirring constantly, until it starts to caramelize, about 2 minutes. Stir paste into vegetables and cook, stirring, 2 minutes. (Paste may stick to pot, but don't let it burn.)
- Stir in tomatoes with their juice, breaking them up with a spoon, then add hot water (3 quarts), scraping up any brown bits from bottom of pot.
- Bring to a simmer. Stir in cabbage, escarole, and parmesan rind. Simmer, covered, until greens are tender, about 40 minutes.
- Coarsely chop chard leaves and stir into soup along with beans. Simmer, partially covered, 10 minutes. Discard rind. Season soup with salt and pepper. If using ditalini, stir in just before serving.
WINTER MINESTRONE WITH CAULIFLOWER AND CABBAGE
I found this recipe online at Fresh Direct . They got it from "Good and Garlicky, Thick and Hearty, Soul Satisfying, More-Than-Minestrone Italian Soup Cookbook" by Joe Formularo. I have tweaked it from the original to suit my taste, but he original credit goes to Joe Famularo. I'll give you my version because I like it better.

Steps:
- 1. Heat oil in large soup pot over medium- high heat. Add the bacon/ pancetta, onion and sauté until the bacon/ pancetta is browned, about 2-3 minutes.
- 2. Add the tomatoes, parsley, basil, basil and stock. If using, add knuckle of beef. Bring to a boil, and reduce heat to very slow but steady simmer. Cook , covered, for 1 1/2 hours, uncovering every 20 to 30 minutes to stir.
- 3. Add beans, potatoes, carrots, celery and cabbage. Cook covered 30 minutes more.
- 4. Add cauliflower, rice/barley, fresh peasand cook, covered until vegetables are tender, 20 minutes. If using frozen peas, do not add them until last 5 minutes of cooking. Season with salt and pepper
- 5. Turn off heat and allow soup to mellow, anout 15 minutes. Stir in half the grated cheese, then ladelphia soup into warmed bowls and serve, pass remaining cheese.
- 6. If using beef knuckle, shred witf fork and add to soup
WINTER MINESTRONE

- In a large, heavy stockpot or Dutch oven, heat the oil over medium heat. Add the onion, carrots, celery, pancetta, and garlic. Cook, stirring frequently, until the onion is translucent, about 10 minutes. Add the Swiss chard and potato. Season with salt and pepper and cook for 2 minutes. Stir in the tomatoes and rosemary sprigs. Bring the mixture to a boil. Reduce the heat and simmer until the chard is wilted and the tomatoes are very soft, about 10 minutes.
- In a food processor or blender, combine 3/4 of the beans with 1/2 cup of broth. Blend until almost smooth. Add the pureed bean mixture, remaining broth, and Parmesan rind to the vegetable mixture. Simmer, stirring occasionally, until the potato pieces are tender, about 15 minutes. Stir in the remaining beans and the parsley. Simmer until the beans are heated through and the soup is thick, about 2 minutes. Discard the rosemary stems (the leaves will have fallen off) and season with salt and pepper, to taste. Ladle the soup into bowls and serve.
WINTER MINESTRONE WITH PESTO CROûTES
Keep the winter out and warmth in with nutritious minestrone and pesto croûtes

- Heat the olive oil in a large pan, add the onion and lardons or bacon and fry for about 5 mins until the onion is starting to brown. Tip in the carrots, celery, potato and garlic, stir well and cook for a few minutes.
- Add the tomatoes, stock and sage, and bring to the boil, stirring. Reduce heat to simmer and cook partly covered for 30 mins, stirring in the cabbage after 15 mins. Drain and rinse the beans and add to the pan with the parsley. Season and serve with pesto croûtes, see right, or crusty bread.
- For the pesto croûtes: Cut 3-4 slices of crusty bread into chunks, about 2cm thick. Tip into an ovenproof pan. Mix the olive oil and pesto, then add to the bread, tossing it with your hands until the croûtes are evenly coated. Bake in a moderate oven for about 10 mins until crisp.

CABBAGE MINESTRONE WITH CHICK PEAS
Minestrone can have many ingredients or few. This one has few, and yet its flavors are no less complex than my summer minestrones that have lots of different vegetables in them. Cabbage sweetens a broth as it simmers gently (and no, it won't smell like boiled cabbage). You can use red cabbage instead of green for this if you wish; that will add to the mix a whole family of flavonoids called anthocyanins, which are powerful antioxidants.

- Drain the chick peas and set aside. Heat the oil over medium heat in a heavy soup pot and add the onion, carrot, and celery. Add 1/2 teaspoon salt and cook, stirring often, until the mixture is fragrant and the vegetables tender, about 10 minutes. Stir in half the minced garlic and cook, stirring, for another minute or so, until the garlic begins to smell fragrant. Add the tomatoes and their liquid and cook, stirring occasionally, for 5 to 10 minutes, until the tomatoes have cooked down a bit. Add the cabbage, stir together for a minute, then add the drained chick peas, 2 quarts water, and the bouquet garni. Bring to a boil, reduce the heat to low, cover and simmer 1 hour, or until the beans are just about tender.
- Add the remaining garlic and salt to taste, cover and continue to simmer another 30 minutes to an hour, until the beans are thoroughly cooked and the soup very fragrant. Add a cup more water if it seems too thick. Add pepper, taste and adjust salt. Remove the bouquet garni.
- Add the pasta and cook until the pasta is cooked al dente, 5 to 10 minutes. Serve, passing the Parmesan at the table for sprinkling.

THE RIVER CAFE'S WINTER MINESTRONE
A really thick, filling minestrone soup - tastes even better after a day

- Heat the olive oil in a large saucepan and slowly fry the carrots, onion and celery until soft and dark. This will take about 20 minutes but it's worth it - the slow cooking gives a lovely taste. Add the garlic, chard stalks and half the parsley, and stir to prevent sticking. Stir in the tomatoes and cook for 10 minutes or until reduced.
- Add half the Swiss chard leaves, half the cavolo nero, three-quarters of the beans, and the boiling stock. Bring to the boil, then reduce the heat. Simmer for 30 minutes. Pour in more stock if needed - don't add too much - it should be thick.
- Add the remaining Swiss chard and cavolo nero and blanch briefly so they remain green and crisp. Season when slightly cooled.
- Purée the remaining cannellini beans coarsely in a blender with some of the cooking liquid. Add to the soup - it should be very green. Stir in the herbs and serve hot with Parmesan and a drizzle of extra virgin olive oil.

MINESTRONE
Steps:
- Prepare: 1 cup dried cannellini or borlotti beans (see page 78). This will yield 2 1/2 to 3 cups of cooked beans. Reserve the cooking liquid.
- Heat in a heavy-bottomed pan over medium heat: 1/4 cup olive oil.
- Add: 1 large onion, finely chopped, 2 carrots, peeled and finely chopped.
- Cook for 15 minutes, or until tender. Add: 4 garlic cloves, coarsely chopped, 5 thyme sprigs, 1 bay leaf, 2 teaspoons salt.
- Cook for 5 minutes longer. Add, and bring to a boil: 3 cups water.
- When boiling, add: 1 small leek, diced, 1/2 pound green beans, cut into 1-inch lengths.
- Cook for 5 minutes, then add: 2 medium zucchini, cut into small dice, 2 medium tomatoes, peeled, seeded, and chopped.
- Cook for 15 minutes. Taste for salt and adjust as necessary. Add the cooked beans, along with: 1 cup bean cooking liquid, 2 cups spinach leaves, coarsely chopped (about 1 pound).
- Cook for 5 minutes. If the soup is too thick, add more bean cooking liquid. Remove the bay leaf. Serve in bowls, each one garnished with: 2 teaspoons extra-virgin olive oil, 1 tablespoon or more grated Parmesan cheese.
- Fall Minestrone with Kale and Butternut Squash
- Follow the recipe, but add 2 finely chopped celery stalks to the soffritto and cook to a rich golden brown. Instead of thyme, add about 1/2 teaspoon chopped rosemary and 1 teaspoon chopped sage with the garlic. Borlotti or cranberry beans can be substituted for the cannellini beans. Omit the green beans, zucchini, fresh tomatoes, and spinach, and use instead 1 bunch kale, stemmed, washed, and chopped; 1 small can of tomatoes, drained and chopped; and 1/2 butternut squash, peeled and cut into 1/4-inch cubes (about 2 cups). Cook the tomatoes and kale with the soffritto for 5 minutes, add the water, and cook for 15 minutes. Add the squash and continue cooking until tender, about 10 to 15 minutes, before adding the cooked beans.
- Winter Minestrone with Turnips, Potatoes, and Cabbage
- Follow the recipe, but to the soffritto add 2 celery stalks, chopped fine, and cook to a rich golden brown. Cut up 1/2 head cabbage into bite-size pieces and cook until tender in salted boiling water. For the green beans, zucchini, and tomatoes, substitute 1 pound turnips and 1/2 pound yellow potatoes, peeled and cut into bite-size pieces. If the turnips have fresh greens attached, stem, wash, and chop them and add them to the soup with the turnips and potatoes. Towards the end of the cooking, add the beans and, instead of the spinach, the cooked cabbage.
- Spring Minestrone with Peas and Asparagus
- Instead of carrot in the soffritto, use 1 fennel bulb, trimmed and cut into bite-size pieces. Do not let it brown. If green garlic is available, use 2 or 3 stalks, trimmed and chopped, instead of garlic cloves. Use 2 leeks instead of one. Add the liquid (half water, half broth, if possible), bring to a boil, and simmer for 10 minutes. Omit the green beans, zucchini, and tomatoes. Substitute 1 cup shelled peas (from 1 pound in the pod) and 1/2 pound asparagus, trimmed and sliced on the diagonal into 1/2-inch-thick pieces. Add with the beans and cook for 5 minutes before adding the spinach. If not serving this soup right away, cool it down quickly in an ice bath so the asparagus does not lose its bright green color.
