FRUIT COBBLER
My son took first place in a baking contest with this one. Serve warm or cold plain, with ice cream or whipped cream. When I use apples, a sprinkle of cinnamon or apple pie spice makes a nice touch. In place of peaches, try using apples or plums.

Steps:
- Melt butter or margarine in a 9 x 13 inch pan. Set aside to cool.
- Stir together flour, sugar, salt, and baking powder. Mix in milk and vanilla. Pour batter over melted butter. DO NOT MIX OR STIR. Spoon fruit with juice over the batter. DO NOT MIX OR STIR.
- Bake at 350 degrees F (175 degrees C) for 55 minutes.

- Preheat oven to 350°. Arrange fruit evenly in the bottom of a 13-in. x 9-in. greased baking dish. , In a bowl, combine flour, sugar, baking powder and salt; cut in butter until crumbly. Stir in milk. Spoon over fruit. Combine sugar and cornstarch; sprinkle over batter. Pour water over all. Bake until fruit is tender and topping is golden, 40-45 minutes.

- To prepare filling:.
- In medium saucepan combine raisins, cranberries, sugar, cornstarch and allspice. Gradually stir in orange juice.
- Bring to a boil over high heat; reduce heat to low and simmer; stirring until cranberries begin to pop and mixture thickens slightly.
- Pour into shallow 1-1/2-quart baking dish.
- To prepare topping:.
- In small bowl, combine flour, sugar, baking powder and salt. Cut in butter until mixture resembles coarse crumbs. Mix in milk lightly with fork. Drop spoonfuls of batter over filling; sprinkle lightly with additional sugar mixed with a little cinnamon. Bake in preheated 400 degree oven about 25 minutes or until golden.
MARIE'S MAGIC FRUIT COBBLER
A fruit cobbler using tinned fruit. Very quick and very nice. This is another of my wifes recipes, i know not where they come from but they are all very nice.

Steps:
- Melt the butter in a 9"x15" pan.
- Mix the baking powder, milk, flour and sugar together.
- Pour on top of the melted butter, don't stir.
- Pour the fruit on top of the batter, don't stir.
- Bake at 350º F for 30 min or until light brown on top.

- Simmer apples, tamarillos, kiwifruit and pear with caster sugar, lemon zest and juice, star anise and a splash of apple juice until apples are just tender. Cool. Remove star anise and place fruit in a baking dish.
- To make the cobbler topping, into a mixing bowl sift flour, caster sugar, nutmeg and salt. Rub in butter.
