This is my granddaughters favorite lunch. It's not gourmet but it is easy and cheap. And most important, she'll eat it!!

2 tablespoons ketchup
1 teaspoon mustard
1 tablespoon molasses
1 teaspoon apple cider vinegar
1/4 lb Velveeta cheese, cut in cubes
4 hot dogs, cut in bite size pices
1 (15 ounce) can white beans, undrained
salt, to taste
ground black pepper, to taste

Steps:

  • Combine the ketchup, mustard, molasses, and apple cider vinegar in a saucepan. Add the hotdogs, cheese and beans.
  • Cook, stirring over medium-low heat for 10-15 minutes until thoroughly heated through and cheese is melted. Season to taste with salt and pepper.

1 (16 ounce) package beef frankfurters
8 slices processed American cheese
8 slices bread
8 teaspoons butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Take 1 slice of bread and spread 1 teaspoon of butter on one side. Turn the bread over and place a slice of cheese on the bread. Place a frankfurter diagonally on the cheese. Fold bread corner to corner around the frankfurter. Insert a toothpick to hold together. Repeat steps for the remaining frankfurters.
  • Bake in a preheated oven for 20 to 30 minutes or until golden brown.

2 cups Gold Medal™ self-rising flour
3/4 cup cold butter, cut into pieces
2 cups shredded sharp Cheddar cheese (8 oz)
3/4 teaspoon ground red pepper (cayenne)
3 tablespoons ice water
Salted toasted pecan halves, if desired

Steps:

  • Heat oven to 400°F. In food processor, place flour and butter. Cover; process until mixture looks like coarse meal. Add cheese and red pepper. Cover; process, using quick on-and-off motions, until combined. With food processor running, gradually pour water through feed tube; process just until dough forms a ball.
  • Onto ungreased cookie sheets, drop dough by tablespoonfuls 2 inches apart. Flatten each cookie with bottom of drinking glass; gently press 1 pecan half into center of each cookie.
  • Bake 12 minutes. Cool 2 minutes; remove from cookie sheets to cooling racks. Store cooled cookies tightly covered.

My dear neighbor Winnie loves to bake us cookies. My family LOVES gingersnaps and she brought a batch over. She clipped this recipe out of a magazine many years ago. These are delicious. Nice and crispy! Now I realize there many gingersnap cookie recipes posted but this is for my safekeeping. YUM!

3/4 cup butter, softened
1 cup sugar
1 egg
1/3 cup molasses
2 cups unsifted flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon clove
1 teaspoon cinnamon
1 teaspoon ginger
1/2 cup sugar, for uncooked rolling dough balls in before baking

Steps:

  • Preheat oven to 375°.
  • Combine butter, sugar and egg; mix until creamy. Stir in molasses until well incorporated. This can all be done in a stand mixer.
  • Combine & whisk together dry ingredients EXCEPT sugar for rolling. Mix remaining dry ingredients. Mix into molasses & butter mixture until well combined.
  • Scoop & roll dough into balls, 3/4" to 1" thick. Depending on the size ball you roll, the baking time will vary. I use a cookie scoop, roll in the palms of my hand then roll again in sugar.
  • Place about 2" apart on greased or parchment paper lined baking sheets.
  • Bake 12 minutes: for a softer center & crisp edges.
  • Bake 14-15 minutes for a crunchy & snappier cookie.
  • I like them both ways!

I can't remember where I got this recipe but it is very good. Handy to have them in the freezer The touch of cayenne with the cheddar gives a nice zip. You can, of course, also serve them right out of the oven after they rest for 10 minutes

1/2 lb sharp cheddar cheese, grated
1/2 lb butter
2 cups flour
2 1/2 cups Rice Krispies
1/2 teaspoon cayenne pepper

Steps:

  • Mix cheese and the butter, then, with your hands mix all the remaining ingredients until fairly uniformly mixed Roll into walnut sized balls, flatten each a little and place on a lightly greased baking sheet Bake at 350F for 15 minutes.
  • Cool on racks.
  • Store in fridge or freeze.
  • reheat in 400F for 5-7 minutes.
  • If frozen defrost in fridge before reheating.
