It's a quick, easy meal that is very filling. Some people will also top it with regular taco toppings, i.e. lettuce, tomatoes, black olives, etc. It also is great as leftovers for lunches! Serve with taco sauce.

1 (8 ounce) package refrigerated crescent rolls
1 pound ground beef
1 (1 ounce) package taco seasoning mix
1 (16 ounce) container sour cream
8 ounces shredded Mexican-style cheese blend
1 (14 ounce) bag tortilla chips, crushed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Lay crescent dough flat on the bottom of a square cake pan and bake according to package directions.
  • Meanwhile, brown the ground beef in a large skillet over medium high heat. Add the taco seasoning and stir together well. When dough is done, remove from oven and place meat mixture on top, then layer with sour cream and cheese, and then top off with the crushed nacho chips.
  • Return to oven and bake at 350 degrees F (175 degrees C) for 10 minutes, or until cheese has melted.

The ultimate in comfort food, this Impossible Taco Pie is layered with ground beef, Rotel, cheddar cheese and a Bisquick topping. It's an easy family dinner recipe.

1 1/2 pounds lean ground beef
1 envelope taco seasoning (1 ounce)
10 ounces Rotel diced tomatoes & green chiles (drained)
1 cup shredded cheddar cheese
1/2 cup Bisquick mix
1 cup milk
3 large eggs

Steps:

  • Preheat the oven to 400º Fahrenheit. Spray a 9" round deep dish pie plate (or cake pan) with cooking spray.
  • Using a skillet over medium heat, brown the ground beef until the beef is no longer pink. Drain off any fat.
  • Add in the taco seasoning and drained Rotel. Mix well and heat through.
  • Spread the beef mixture in the bottom of the prepared pie plate. Sprinkle the shredded cheese over the top.
  • In a small bowl, whisk together the Bisquick mix, milk and eggs.
  • Pour evenly over the beef and cheese.
  • Bake for 25-30 minutes or until the middle of the pie is set and the top is golden brown. A knife inserted in the center should come out clean.
  • Serve immediately.
  • Store leftovers in the refrigerator for up to 3 days.

1 pound ground beef
1 (1.25 ounce) package taco seasoning
1 (8 ounce) package refrigerated crescent roll dough
1 (14 ounce) can refried beans
1 cup sour cream
1 cup salsa, drained slightly
1 ½ cups shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Prepare a large deep-dish pie pan with cooking spray.
  • Heat a large skillet over medium-high heat. Break ground beef into small pieces and add to hot skillet; cook and stir until the beef is crumbly and no longer pink, 7 to 10 minutes. Drain and discard any excess grease. Season drained beef with taco seasoning.
  • Press refrigerated dough into the bottom of the prepared pan. Spread refried beans in an even layer onto the dough. Spread sour cream into a layer atop the refried beans. Sprinkle ground beef evenly over the sour cream; top with salsa and Cheddar cheese.
  • Bake in the preheated oven until cheese is melted and bubbly and crust has browned, 25 to 30 minutes.

1 package (14.1 ounces) refrigerated pie pastry
6 large potatoes, peeled and cut into chunks
2 pounds lean ground beef (90% lean)
14 green onions, chopped (white portion only)
1-1/4 cups water
2 envelopes taco seasoning
1 cup 2% milk
1/4 cup butter
2 teaspoons garlic powder
1/4 teaspoon salt
1/4 teaspoon pepper
2 cups shredded sharp cheddar cheese
2 cups shredded pepper Jack cheese

Steps:

  • Roll out pastry to fit two 9-in. deep-dish pie plates. Transfer pastry to pie plates; flute edges. Line unpricked pastry with a double thickness of heavy-duty foil. Fill with dried beans, uncooked rice or pie weights., Bake at 450° for 8 minutes. Remove foil and weights; bake 5 minutes longer. Cool on a wire rack., Place potatoes in a Dutch oven and cover with water. Bring to a boil. Reduce heat; cover and cook for 15-20 minutes or until tender., Meanwhile, in a large skillet, cook beef and onions over medium heat until meat is no longer pink; drain. Stir in water and taco seasoning. Bring to a boil; cook until liquid is evaporated. Spoon into pastry shells., Drain potatoes and place in a large bowl. Add the milk, butter, garlic powder, salt and pepper; mash until smooth. Spread over meat mixture., Sprinkle one pie with half of the cheeses. Cover and freeze for up to 3 months. Bake remaining pie, uncovered, at 350° for 35 minutes. Sprinkle with remaining cheeses. Bake 5-10 minutes longer or until heated through and cheese is melted., To use frozen pie: Thaw in the refrigerator overnight. Remove from the refrigerator 30 minutes before baking. Cover and bake at 350° for 1-1/2 hours. Uncover; bake 10-15 minutes longer or until heated through.

3 tablespoons vegetable oil
8 corn tortillas, halved
1 small onion, chopped
2 cloves garlic, minced
Pinch of cayenne pepper
3/4 pound ground pork
Kosher salt
1 15-ounce can crushed tomatoes
2 4.25-ounce cans chopped green chiles
1 cup frozen corn
1/2 cup chopped fresh cilantro
1 cup shredded mozzarella (preferably reduced sodium)

Steps:

  • Preheat the oven to 400 degrees F. Heat the vegetable oil in a large skillet over medium-high heat. Add the tortillas and cook, flipping a few times, until golden, about 3 minutes. Remove with tongs and transfer to a paper towel-lined plate to drain. Add the onion to the skillet and cook, stirring, until soft, about 3 minutes. Add the garlic and cayenne and cook 30 seconds. Add the pork and 1/4 teaspoon salt and cook, breaking up the meat, until browned, about 4 minutes. Stir in the tomatoes, chiles and corn. Bring to a simmer and cook until slightly thickened, about 3 minutes. Season with salt. Remove from the heat and stir in the cilantro. Arrange half of the tortillas in the bottom of a 9-to-10-inch pie plate. Top with half of the meat mixture, then half of the cheese. Repeat with the remaining tortillas, meat and cheese.
