THE BEST BUFFALO WINGS
In this Perfect Buffalo Wings recipe, crunchy well seasoned chicken wings get fried to golden brown perfection then dipped in a classic spicy buffalo wing sauce taking them to another level!

Steps:
- Add chicken wings to buttermilk and let marinate for at least 2-3 hours.
- While chicken marinates, add flour, seasoned salt, paprika, black pepper and garlic powder to paper bag and shake well to evenly distribute flavors.
- Dip each piece of chicken into seasoned flour thoroughly coating each piece then add piece to baking sheet to rest.
- Finish coating all chicken and let sit for 10-15 minutes until coating has set.
- While coating sets, add 2 1/2-3 inches of oil to a medium sized deep pot or deep fryer and heat over medium high heat. Also turn on oven to 275 degrees.
- This is my test for knowing when the oil is ready: Big Mama always tossed a tiny bit of flour in the oil and if it began to fry and sizzle, the oil was ready.
- Fry all pieces until golden brown and place on paper towels to drain for only 1 minute per wing before tossing in sauce.
- Whisk together hot sauce and melted butter and heat in microwave to make sure it is hot.
- Add half of sauce to another large bowl and carefully toss several wings in sauce until completely covered. Add more sauce if you like them really saucy like me then serve immediately.
- Celery and ranch or blue cheese is a nice complement.
- If not serving immediately, place in the oven to keep warm.

I wanted to make a somewhat healthier version of these wings, so I decided I wanted to try baking them instead of frying them, but I still wanted them to taste like they were fried. - 1. Preheat oven to 400 degrees F.
- 2. Use a half sheetcake size pan. Place a metal baking rack over top of pan, or use a rack that fits inside pan but slightly raised from bottom of pan. Spray liberally with non stick cooking spray, and set aside till ready to use.
- 3. In a gallon size reclosable style bag, add both flours,and all of the spices. Close securely and shake thourgly to mix. Add 6 or 7 pieces of chicken to the bag at a time and dust thourgly till fully coated with flour mixture.
- 4. Place floured pieces in a large pan and refrigerate for at least an hour. This step ensures that flour adhears to chicken
- 5. Then remove from fridge, and place on prepared rack, and spray each piece with non stick cooking spray. DO NOT OVER CROWD PAN.LEAVE SPACE BETWEEN EACH PIECE.
- 6. Bake in preheated 400 degree oven for 50 to 55 minutes till browned and crispy on outside.
- 7. Prepare sauce while chicken is baking. By melting butter and hot sauce in a small sauce pan over low heat, till butter is completely melted. Stirring together to mix completely.
- 8. Using tongs dip each piece of chicken into hot sauce mixture and place on large platter. Serve immediately with ranch dressing or serve plain.
- 9. NOTE:If more sauce is needed melt equal parts butter with equal parts hot sauce. EG: 1/2 cup butter with 1/2 cup hot sauce.
BEST HOOTERS HOT WING SAUCE (AND BREADING)
This is the BEST hot wing sauce I have found. It is a clearish shade like hooters, and they are to die for. Not too hot though to were I can't eat it, it is just right. Could also be used as a dip for chicken tenders!

Steps:
- For breading & frying.
- In large mixing bowl mix flours, salt, paprika and cayenne pepper together, blend well. Cut chicken wings into drumettes and flappers. Wash and drain chicken. Coat chicken in flour mixture, refrigerate chicken wings for 90 minutes.
- When ready to deep fry chicken wings heat oil to 375. Place chicken pieces in hot oil, do not crowd. Fry chicken wings until golden brown, remove from oil and drain. When all wings have been fried, place in a large bowl. Add Hot Sauce mixture and mix completely. Use a fork or tongs to place chicken pieces on a serving platter. Serve immediately and with lots of paper towels.
- For sauce.
- Melt butter over low, stir in the rest of the ingredients until dissolved. Pour in bowl over cooked chicken.

WINGS/CHICKEN BREADING LIKE HOOTERS

- I combine an egg and some milk for a wash. Dip the chicken in the wash and then in the flour/seasoning mixture. Then deep fry at 350 F until it looks delicious, 10-15 minutes. For best results refrigerate the chicken in the mixture for a few hours. It's so good, my mouth is watering now.

- Mix flour, cayenne, garlic and salt in a large zip-lock bag (or a bowl).
- Coat wings in flour mixture and place on ungreased cookie sheet.
- Place in refrigerator to cool and firm up the coating for an hour or so.
- Preheat oven to 400°F.
- Mix melted butter and hot sauce in a bowl.
- Gently coat wings in sauce mixture and place back on cookie sheet in single uncrowded layer.

- Combine flour, salt, cayenne pepper, and paprika in bowl.
- Coat chicken pieces in dry mixture.
- Reserve leftover mixture.
- Refrigerate coated chicken at least 1 hour.
- Coat chicken in leftover flour mixture.
- In a saucepan, heat butter, hot sauce, pepper, and garlic powder just until butter melts, then keep warm.
- Deep fry chicken, 10 pieces at a time, in 375 degree oil for 13 minutes.
- Drain chicken on paper towels.
- Immediately place chicken in Tupperware bowl.
- Pour half the hot sauce mixture over chicken (first 10 pieces).
- Cover and toss to coat.
- Repeat with second batch of chicken.
- Wings can be frozen and reheated in 400 degree oven for 10 minutes.
- NOTES : Use ranch or blue cheese dressing as a dip for these fabulous wings.
