SALT AND VINEGAR WINGS

Steps:
- Whisk the vinegar, 1 cup water, 3 tablespoons salt and 1/2 teaspoon pepper in a medium bowl until the salt is mostly dissolved. Pour the liquid over the wings in a large nonreactive bowl or baking dish and submerge the wings. Refrigerate, stirring occasionally so that all the wings are coated, 2 hours.
- Drain the wings. Pat dry and let come to room temperature. Preheat the oven to 200 degrees F.
- Set a rack on a baking sheet. Fill a large heavy pot halfway with vegetable oil; heat over medium-high heat until a deep-fry thermometer registers 375 degrees F.
- Whisk the flour, cornstarch, 2 teaspoons salt and 1/4 teaspoon pepper in a large bowl. Whisk in 2 cups very cold water to form a light batter. Add the wings to the batter and stir to coat. Lift out the wings one at a time, letting the excess drip back into the bowl.
- Working in batches, fry the wings: Using tongs, lower the wings into the hot oil and hold for a couple of seconds before letting go to seal the coating. Fry until golden and crisp, 8 to 9 minutes. Remove to the prepared baking sheet, sprinkle with salt and keep warm in the oven while you continue. Serve with assorted sauces.

This recipe was featured on a show called "Calling all Cooks" that used to be on Food Network. The man who featured this recipe is Steve Vandegrift, and if I remember correctly, he is a Fireman who makes this for his station all the time. And we know those Firemen CAN cook! These are by far the BEST homemade wings I've ever eaten!! All the glory goes to Steve!

- For the sauce combine all the ingredients and warm on a stove or microwave, then put in spray bottle and set aside.
- In a large bowl put the wings in it and pour some hot sauce over them, toss to coat. Add seasoning mixture to the wings and toss to coat.
- Place wings on grill, smoker or in the oven and slow cook them at a low temperature. After 20 minutes baste/mist with sprayer at least every 10 minutes. Flip them after you mist them. Total cooking time should be around 1 1/2 hours to 3 hours, depending on the heat of your grill. They're done when they break at the joint or you can break the wing tip off.

WING ZZZINGERS
Your friends and family will rave about these wings! And what makes these so unusual is because of the fact that when you baste these bad boys, you can use a common household sprayer. I know it sounds wild but it does work really well.

- 1. For sauce: Combine ingredients and warm on stove or in microwave, then put in spray bottle and set aside.
- 2. The above should be enough for 7 to 8 pounds of wings. Rinse and drain 7 to 8 pounds wings. Pour some of the Red Hot hot sauce over them, and toss. Add seasoning mixture (above) until generously coated. You will lose some in teh cooking, so don't skimp! Place the wings on a gas grill (or smoker) and slow cook them at a low temp. After 20 minutes baste/mist with sprayer at least every 10 minutes. Flip them after you mist them. Total cooking time should be around 1 1/2 to 3 hours, depending on the heat of the grill. They're done when they break at the joint or you can break the wing tip off.
YOGI WINGS
Steps:
- Combine all dry ingredients in medium bowl. Rinse chicken thoroughly. Place 1/3 of chicken in a large bowl and spread dry mixture liberally over chicken and mix with hands until chicken is completely coated. Repeat same process with the next 2/3 of chicken. Make sure you do 1/3 at a time and refrigerate for at least 2 hours.
- Place chicken on middle rack of grill on low heat and cook until crispy, turning as needed, combine with sauce for dipping at your preference.
ASIAN GLAZED WINGS

- Preheat oven 400 degrees F.
- Preheat a large oven safe skillet over high heat with the oil. Liberally season the chicken wings with salt and pepper. Once the skillet is screaming hot add the wings in 1 even layer. Brown the wings for 3 minutes per side. While the wings are browning, assemble the plum glaze: in a small pot over high heat combine the plum sauce, orange juice, ginger root, tamari and hot pepper flakes. Bring up to a simmer and lower the heat, reserving it until the wings are done browning. Remove ginger from glaze. Pour the simmering plum glaze mixture over the browned wings. Place the skillet in the oven and roast for 20 minutes, flipping the wings once half way through the cooking time.
- Remove the wings from the oven, if the glaze is not syrupy and thick, place the skillet of wings on the cook top and turn the heat on high, allow the glaze to reduce for about 1 minute. Toss the wings around in the glaze and finish with the fresh cilantro and basil.
- Serve hot or room temperature.
- TIDBITS
- Close that door! Whenever you are tending to something in the oven, pull it out of the oven completely and close that door while you are doing your business. Otherwise your oven will have to work double time to get back up to temperature.
HOT HONEY-GLAZED WINGS
These sticky wings make for a fun way to enjoy the gentle heat and balanced sweet of the hot honey glaze. The extra crunchy batter clings to the wings and is a great base for this snack.

- In a bowl, combine the flour, 2 teaspoons salt, the onion powder, garlic powder and cayenne pepper. Add the chicken wings and toss to coat.
- Heat 2 inches of vegetable oil in a pot until it registers 350˚ F on a deep-fry thermometer. Working in batches, add the wings and fry until browned, 8 to 12 minutes. Remove with a slotted spoon and drain on a rack set on a baking sheet.

- For the wings at home:
- Preheat the oven to 350 degrees F.
- Season the wings with salt and pepper. Arrange the chicken wings on a baking sheet in a single layer. Put in the preheated oven and cook for 45 minutes.
- Remove the wings from the oven to a bowl and allow to cool. Cover and refrigerate until ready to finish at the event on the barbecue.
- For the Asian sauce at home:

GINGER-SOY CHICKEN WINGS

- In a small bowl, whisk together the tamari, ginger, sesame oil, lime zest and juice, and 2 tablespoons water. Place the chicken wings in a resealable plastic bag, pour in the marinade and seal the bag. Toss the wings in the marinade and refrigerate for 8 hours or overnight.
- Preheat the oven to 425 degrees F.
