1 (8 ounce) package cream cheese, softened
1/2 cup sour cream
1/4 cup mayonnaise
1 tablespoon freshly squeezed lemon juice
1 teaspoon Kosher salt
1/2 teaspoon black pepper
1/2 cup grated Parmesan cheese
1 (12 ounce) jar Reese Marinated Artichoke Hearts, drained and roughly chopped
3 jalapenos, seeded and minced
1 clove of garlic, minced

Steps:

  • Add the softened cream cheese, sour cream, mayonnaise, lemon juice, salt, and pepper to a large mixing bowl. Use a handheld mixer on medium-high speed and mix until smooth.
  • Add the Parmesan, drained artichokes, jalapeno, and garlic, and stir until evenly incorporated.
  • Serve right away or store in the refrigerator for 3 days.

A party staple at our house! I got the recipe from a friend and then tweaked it a tiny bit. He used mayo, I use sour cream, which makes it seem not as "heavy". Of course, not everyone likes spicy, so you can adjust the heat as you like. I am lucky to have an electric stand mixer, so it makes the mixing easy. But you can mix it by hand as well.

2 (8 ounce) packages cream cheese, softened
1/2 cup sour cream
2 (8 ounce) cans artichoke hearts, drained and chopped
1/2 cup jalapeno, from a jar and chopped
2 tablespoons jalapeno juice, from the jalapeno jars (to taste)
8 ounces shredded parmesan cheese
tortilla chips
1 loaf sliced baguette

Steps:

  • Set aside about 3 ounces of the parmesan cheese.
  • Combine all of the ingredients and the remaining parmesan cheese in a mixing bowl and mix until combined.
  • Spread evenly into either a 9x9 baking dish, or a 7 x 11 baking dish.
  • Sprinkle the remaing parmesan cheese on top of mixture.
  • Bake for 20 minutes, or until cheese is bubbly and golden brown on the edges.
  • Serve warm with tortilla chips and/or sliced baguette.

1/4 cup pickled jalapeno chili
1/3 cup parmesan cheese, shredded
1/2 cup mayonnaise
1/2 cup sour cream
1 lemon
2 tablespoons parmesan cheese, grated

Steps:

  • Use a food procesor or chopper to dice your artichokes and jalapeno.
  • Place this in a small casserole dish.
  • Squeeze all juice from lemon over top.
  • Mix in shredded parmesan, mayo and sour cream.
  • Sprinkle top with grated paremsan and bake at 350F until heated through.

1 cup finely grated fresh parmesan cheese
3 -4 pickled jalapeno peppers, finely chopped
1 (6 ounce) jar marinated artichoke hearts, drain,reserve marinade
1 -2 teaspoon jalapeno sauce
salt
freshly ground black pepper

Steps:

  • Use a food processor with metal blade to finely grate Parmesan cheese.
  • Add the cream cheese, mixing well.
  • Transfer cheese mixture to a mixing bowl.
  • Chop jalapeno peppers in processor, add drained artichoke hearts and process just until coarsely chopped.
  • Add artichoke/jalapeno mixture and the jalapeno sauce to cheese mixture.
  • Mix well.
  • If needed, add small amount of additional marinade to obtain desired consistency.
  • Salt and pepper to taste.
  • Refrigerate until ready to serve.
  • Serve with a variety of crackers or chips.

1 cup sour cream
1 cup mayonnaise (NOT Miracle Whip or salad dressing)
3 cups cheese, shredded (any combination of cheddar, Colby Jack, Monterray Jack, mozzarella, Parmesan, or other great melting)
0.5 (4 ounce) can jalapenos, diced
1 (4 ounce) can diced green chilies
1 (14 ounce) can artichoke hearts
3 tablespoons parmesan cheese, finely grated (we use the powdery stuff in the shaker)
1/2 teaspoon paprika

Steps:

  • Drain and chop artichoke hearts.
  • Combine artichoke hearts with remaining ingredients. Use as much or little of the jalapenos as you can handle. (When I make this for my family, I use an entire can, but when I make it for guests, I usually only use half of the can.).
  • Pour into baking dish.
  • Sprinkle with grated Parmesan cheese and paprika.
  • Bake at 400 degrees until bubbles around edges.
  • Serve with tortilla chips, crackers, as a sandwich spread, etc.
  • NOTE: Depending on preference, you can do a rough chop on the artichokes for a chunkier dip, or you can put all the ingredients (except for the cheese) in a blender to puree for a smoother dip.

1-1/2 cups sugar
2 large eggs
2 teaspoons vanilla extract
4 cups all-purpose flour
3/4 cup baking cocoa
2 teaspoons baking soda
1/2 teaspoon salt
1 cup water
1 cup buttermilk
FILLING:
2 cups confectioners' sugar
2 cups marshmallow creme
1/2 cup butter, softened
2 teaspoons vanilla extract

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. , Beat in eggs and vanilla. Combine the flour, cocoa, baking soda and salt; add to creamed mixture alternately with water and buttermilk, beating well after each addition. , Drop by tablespoonfuls 2 in. apart onto greased baking sheets. Bake at 375° for 5-7 minutes or until set. Remove to wire racks to cool completely. , In a small bowl, beat filling ingredients until fluffy. Spread on the bottoms of half of the cookies; top with remaining cookies.

1 (4 ounce) jar chopped pimiento
1 (14 ounce) can artichoke hearts, drained & diced
1 1/2 cups mayonnaise, real
1 (7 ounce) can diced green chilies
6 -8 fresh jalapenos, to taste, remove seeds if desired, chopped finely
4 ounces monterey jack cheese, shredded
3/4 cup romano cheese, grated, divided (or similar)

Steps:

  • Spray 1 1/2 qt casserole dish with oil.
  • Mix pimiento, artichokes, mayonnaise, green chilies, jalapenos, Monterey Jack cheese and 1/2 cup grated cheese. Spoon into a shallow 1 ½ quart casserole. Sprinkle with remaining 1/4c shredded cheese. Bake uncovered at 325 degrees for 30 minutes or until bubbly.
  • Serve with crackers or baguette bread slices.
